Cooking burgers under the broiler is so easy, and they come out wonderfully juicy and flavorful.

1 lb. lean ground beef ((85/15))
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/4 cup sauteed onions
4 oz smoked gouda (thinly sliced)

Steps:

  • Preheat your broiler on high. Position an oven rack directly (3-4 inches) below the heating element.
  • Sprinkle the Kosher salt, pepper, garlic powder, onion powder, and smoked paprika on the meat. Work the spices gently and evenly into the meat.
  • Divide the seasoned meat into four equal 4-oz portions and gently shape them into four patties, 3.5 inches in diameter and 1/2 inch thick.
  • Arrange the patties in a cast-iron skillet. Push down on the center of each patty to create a dimple. This will help the burgers stay flat as they cook.
  • Broil the burgers to medium, about 3 minutes per side.
  • Turn the oven off, top each burger patty with sauteed onions and with cheese, and return the pan to the still-warm oven for just a few seconds, until the cheese is melted. Serve immediately.

2 pounds ground chuck
½ cup crushed saltine crackers (or Panko breadcrumbs)
1 large egg
2 tablespoons Worcestershire sauce
2 tablespoons milk
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper

Steps:

  • Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
  • Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
  • Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
  • Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
  • For thick patties: Grill or fry the patties for 3-4 minutes per side.
  • For thin patties: Cook on the griddle for 2 minutes per side.
  • Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

3 tablespoons butter
2 tablespoons finely chopped shallots
1/2 cup dry red wine

Steps:

  • Put the meat in a mixing bowl and set aside.
  • Heat the oil in a small skillet and add the onions. Cook, stirring, until wilted. Add the garlic and cook briefly, stirring. Remove from the heat and let cool.
  • Combine the meat lightly with the onion mixture, chili con carne seasoning, ground pepper, pepper flakes and salt. Divide the mixture into 4 patties of equal size.
  • Heat a heavy iron skillet large enough to hold all the patties in one layer and do not add fat of any kind.
  • When the skillet is quite hot, add the patties. Cook until well browned on one side, about 3 minutes. Turn and cook 3 minutes on the second side.
  • Transfer to a warm platter.
  • Heat 1 tablespoon of the butter in a small skillet. Add the shallots and cook, stirring, for 1 minute. Add the wine and broth. Let cook until reduced to about 1/4 cup. Swirl in the remaining 2 tablespoons butter. Pour over the patties and serve the dish immediately.
