3 cups broccoli florets
1 tablespoon olive oil
2 skinless, boneless chicken breast halves - cut into 1 inch strips
¼ cup sliced green onions
4 cloves garlic, thinly sliced
1 tablespoon hoisin sauce
1 tablespoon chile paste
1 tablespoon low sodium soy sauce
½ teaspoon ground ginger
¼ teaspoon crushed red pepper
½ teaspoon salt
½ teaspoon black pepper
⅛ cup chicken stock

Steps:

  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 5 minutes.
  • Heat the oil in a skillet over medium heat, and saute the chicken, green onions, and garlic until the chicken is no longer pink and juices run clear.
  • Stir the hoisin sauce, chile paste, and soy sauce into the skillet; season with ginger, red pepper, salt, and black pepper. Stir in the chicken stock and simmer about 2 minutes. Mix in the steamed broccoli until coated with the sauce mixture.

1 cup long-grain white rice
1 pound extra-large shrimp (26 to 30), peeled and deveined (tails left on)
5 tablespoons vegetable oil, divided
1 bunch broccoli, cut into florets
3 tablespoons chili-garlic sauce

Steps:

  • Cook rice according to package instructions. Meanwhile, gently pat shrimp dry with paper towels. Heat a wok or large skillet over high. Remove pan from heat and carefully add 2 tablespoons oil and broccoli. Return to heat and cook, undisturbed, until crisp-tender and browned in spots, 1 to 2 minutes. Add 2 tablespoons oil and shrimp and cook, stirring frequently, until shrimp are opaque throughout, about 2 minutes. Remove from heat, add chili-garlic sauce and remaining tablespoon oil, and toss to coat. Stir in 1 to 2 tablespoons water to thin, if necessary. Serve with rice.

2 tablespoons soy sauce
1 tablespoon medium-dry Sherry
2 teaspoons cornstarch
1/2 lb pork loin thinly sliced across the grain and cut into julienne strips (I use center cut pork chops)
1 bunch broccoli
4 tablespoons sesame oil
1 large garlic clove, finely chopped (I used minced in a jar)
1 (2-inch) piece peeled fresh ginger, thinly sliced and cut into julienne strips (I use the stuff in a tube by Gourmet Garden)
1/2 teaspoon dried hot red pepper flakes
1/2 cup chicken broth
1 teaspoon sugar

Steps:

  • Stir together 1 tablespoon soy sauce, Sherry and 1 teaspoon cornstarch and stir in pork. Cut roccoli into small florets. Peel and cut tender sections of stems (top halves) into thin slices. Heat a wok or nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 2 tablespoons oil, swirling to coat evenly, and heat until hot but not smoking. Add pork mixture and stir-fry until cooked through, 2 minutes. Transfer to a bowl and wipe wok clean. Heat wok and add remining 2 tablespoons oil in same manner. Add garlic, ginger and red pepper flakes and stir-fry 2 minutes. Add 1/4 cup chicken broth and cook, covered, 1 minute or until broccoli is crisp-tender. Stir together remaining 1/4 cup broth, remainin teaspoon cornstarch and sugar, then add to pan with pork and stir-fry 1 minute.

This is an easy, tasty weeknight meal I adapted from a Moosewood cookbook. It comes together pretty quickly, especially if all your ingredients are ready to go in advance. If you're not into tofu, chicken would probably work fine.

1/4 cup soy sauce or 1/4 cup tamari
2 teaspoons sugar
2 teaspoons sesame oil
1 tablespoon cornstarch
1 tablespoon rice wine vinegar or 1 tablespoon fresh lemon juice
1/2 lb soba noodles
1 tablespoon vegetable oil
3 -4 garlic cloves, minced
1/4 teaspoon cayenne (I use more for EXTRA heat!)
4 -5 cups broccoli florets
1/4 cup water
1/2 cup sake
1 carrot, peeled and grated
12 ounces baked tofu, cubed
toasted sesame seeds, to taste (optional)

Steps:

  • Bring 3 quart water to boil in a large pot.
  • While water heats, whisk together soy sauce, sugar, sesame oil, cornstarch and vinegar until smooth and set aside.
  • When water boils add soba noodles and cook 8-10 minutes.
  • Meanwhile, warm vegetable oil in a wok or large skillet over medium heat. Add garlic and cayenne and cook, stirring constantly, until garlic turns golden (less than a minute).
  • Stir in broccoli, water and sake; cover and cook 3-4 minute.
  • Stir in carrots, tofu and soy sauce mixture; cook for another minute or 2 until sauce thickens then reduce heat to low.
  • When soba noodles are al dente, drain and rinse them. Add to the vegetables and stir until they are coated with sauce.
  • Serve immediately, garnished with sesame seeds.

1 head broccoli, chopped into florets
1 lb medium shrimp (fresh or frozen )
4 tablespoons rice wine vinegar
6 tablespoons soy sauce
1 cup chicken broth
1 tablespoon garlic, minced
1 1/2 teaspoons ground ginger
1 teaspoon red pepper flakes, you may omit if necessary (for heat)
1 tablespoon cornstarch, for thickening

Steps:

  • In a large sauce pan.
  • add the vinegar, garlic, red pepper flakes, broth, soy sauce, and ginger. Bring to a slight boil.
  • Add shrimp and fresh or frozen but thawed broccoli florets.
  • Take some of the excess sauce and pour into a bowl (about 3 tbsp sauce and add 1 tbsp cornstarch). Whisk and return to pan. Bring to full boil and stir constantly.
  • As soon as thickening begins, remove from heat and serve over white rice. You may also use one of them premade Asian vegetable medleys in this recipe and pour sauce over it.
  • Can be used for beef, chicken or pork as well.

1 cup cubed baked tofu
2 cups broccoli flowerets
1 teaspoon cornstarch, dissolved in 1/2 cup of water at room temperature

2 cloves garlic, minced

Steps:

  • In a medium saucepan, saute the tofu and broccoli in oil for 3 minutes over medium heat. Remove from the pan and place the mixture in a bowl. Combine the remaining ingredients in the pan. CHINESE SPICY STIR FRY CHICKEN WITH BROCCOLI



Chinese Spicy Stir Fry Chicken with Broccoli image

This is a spicy Chinese style chicken dish with a twist as boneless chicken thighs are used instead of chicken breasts.

4 pieces of boneless chicken thighs
1 broccoli
1 brown onion
1 medium size tomato
2 spring onions
1 small piece of fresh ginger root (as big as half of your thumb)
2 garlic cloves
4 tbsps of olive oil
1 tsb of ground pepper
2 pieces of aniseed
2 small dried red chillies
4 tbsps of Chinese yellow cooking wine
2 tbsps of light soy sauce
1 tbsp of dark soy sauce
1 heaped tbsp of spicy bean paste
1 Knorr chicken stock pot
Salt according to personal preference
1 heaped tbsp of cornstarch

Steps:

  • Dice the boneless chicken tights into 2cm x 2cm cubes, then marinate them with 2 tbsps of light soy sauce and 2 tbsps of Chinese yellow cooking wine, set aside.
  • Cut the stem off the broccoli then break the florets into small pieces slightly bigger then the diced chicken thights. Chop the brown onion and tomato into the similar size as the diced chicken thighs. Finely chop the garlic, ginger and spring onions. Separate the green part of the finely chopped spring onions for garnish later.
  • Heat 2 tbsps of olive oil in the wok, then stir fry the diced chicken thighs on high heat for 2-3 mins until gold and brown. Take out the chicken and drain the oil, then set aside.
  • Heat 2 tbsps of olive oil in the wok on medium heat, then stir fry the finely chopped spring onion (white part only), ginger, garlic for 1 min, then add in aniseed, ground pepper, and dry chillies (break into half), stir fry for further 1-2 mins until you can smell the fragrance.
  • Add in chopped brown onion and tomato, stir fry for 1 min, then add in 2 tbsps of Chinese yellow cooking wine, stir fry for further 3 mins until soften.
  • Add in the browned chicken, stir fry for 1 min, then add in 1 heaped tbsp of spicy bean paste, stir fry for further 2 mins. Add in boiling water just enough to cover the chicken, then add in the Knorr chicken stock pot, mix it in well. Turn the heat to low and continue to boil the chicken for 3 mins. Then add in the broccoli and dark soy sauce, continue to boil on high heat for further 6 mins until the broccoli is tender but is still bright green. Be careful not to over cook the broccoli.
  • Mix the cornstarch with 5 tbsps of cold water, then add it into the wok. Turn down the heat and stir for 1 min until the sauce is thick and smooth, add salt according to your personal preference. Put it into serving dish and sprinkle the finely chopped green spring onion on top of the dish as garnish, then ready to serve with rice.

Chicken, broccoli, and cashews stir-fried in a citrus and red pepper sauce, served over rice. I wanted to make a tasty stir fry with ingredients I had on hand and this is what I came up with. I also didn't have time to marinate. I have the chicken and broccoli cut and ready to go before I start the rice. Once the rice has been on simmer for about 5 of its 20 minutes, I start frying the broccoli/ cashews and the chicken. This results in all ingredients being ready at the same time.

3/4 lb chicken breast, cut into strips
1/4 cup flour
2 cups broccoli florets
1/4 cup cashews
3 tablespoons olive oil, divided
2 tablespoons lime juice
1 tablespoon rice vinegar
1/2 tablespoon sesame oil
1 teaspoon gingerroot, minced
2 teaspoons garlic, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon cornstarch
1 cup cooked rice

Steps:

  • Rinse and pat dry the chicken and place in a tupperware with lid or a plastic baggie.
  • Toss chicken with the flour to lightly coat it.
  • Combine lime juice, vinegar, sesame oil, ginger, garlic, red pepper flakes, and corn starch in a small bowl.
  • Heat 2 frying pans, each with half the oil, at medium heat.
  • Place broccoli and cashews in one pan.
  • In the other pan, place chicken strips. Fry chicken until lightly browned, turning once. About 3 minutes per side.
  • Add broccoli and cashews to the pan with the chicken. Pour sauce in pan and stir to coat.
  • Reduce heat slightly and let cook for 5 to 7 minutes (the longer it's going to sit, the lower the heat should be).
  • Serve over rice.
