1 (15.25 ounce) can whole kernel corn, drained
1 red onion, diced
¾ cup salsa, or as desired
½ cup olive oil
½ cup chopped fresh cilantro
3 cloves garlic, minced
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 ½ teaspoons ground cumin
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Mix black beans, corn, red onion, salsa, olive oil, cilantro, garlic, lemon juice, vinegar, cumin, salt, and black pepper in a large bowl. Cover and refrigerate at least 1 hour to 2 days. Serve chilled.

1 tablespoon olive oil
4 cups corn kernels
1 ½ tablespoons fajita seasoning
½ teaspoon ground black pepper
1 (15 ounce) can black beans, drained and rinsed
1 red bell pepper, chopped
½ cup chopped green onion
1 jalapeno pepper, seeded and diced, or to taste
¼ cup chopped fresh cilantro
¼ cup fresh lime juice
2 tablespoons orange juice
1 pinch salt to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir corn, fajita seasoning, and black pepper in the hot oil until corn is lightly browned, 6 to 8 minutes. Remove from heat and set aside to cool.
  • Mix corn mixture, black beans, red bell pepper, green onion, jalapeno pepper, cilantro, lime juice, orange juice, and salt together in a bowl; cover and refrigerate at least 1 hour before serving.

1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh parsley

2 cups cold, cooked white rice

2 sweetcorn
400g can black beans , drained and rinsed
1 avocado , cut into chunks
200g cherry tomatoes , halved
4 spring onions , roughly chopped
100g feta cheese , crumbled
lime wedges, to serve (optional)
1 tsp ground cumin
1 tbsp chipotle Tabasco sauce (use regular Tabasco if you can't find this)
juice and zest 2 limes
1 tbsp sherry vinegar
2 tbsp extra-virgin olive oil

Steps:

  • Boil the corn for 10 mins in salted water, rinse in cold water, then cut the kernels off. Tip the beans into a bowl with the cooked corn, avocado, tomatoes and spring onions.
  • Mix the dressing ingredients with some seasoning, then pour over the salad. Toss together well, scatter the feta over the top and serve with lime wedges, if using.

I personally don't cook the corn I cut from the cobb, just a personal preference. If corn isn't in season a good quality frozen corn is a perfect substitution - I don't even defrost it! The produce you use should be top quality for a superior result.

3 ears corn on the cob
3 -4 tablespoons lime juice

1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
2 fresh basil leaves, chiffonade
2 tablespoons finely diced red onion
1 1/4 cups olive oil

2 red onions, minced
1 jalapeno pepper, minced
1 pound dried black beans, cooked until tender and drained
1/2 cup Citrus Vinaigrette
1 teaspoon ancho chile powder

6 tablespoons fresh lime juice
1 cup pure olive oil

Steps:

  • Combine juices, basil and onion in a blender and blend until smooth. Slowly add the olive oil and blend until emulsified and season with salt and pepper.;
  • Heat oil in a large saute pan. Add the onions and jalapeno and cook until soft. Place beans in a medium bowl, add citrus vinaigrette and ancho chile powder, mix well and season with salt and pepper.;
  • In a blender, combine the peppers, onion, chipotle and lime juice and blend until smooth. With the motor running, add the olive oil in a thin stream until emulsified. Season to taste with salt and pepper.
  • CILANTRO OIL: 1 cup olive oil 2 cups cilantro leaves Salt and pepper
  • Combine oil, cilantro and salt and pepper in a food processor and process until smooth. Strain into a squeeze bottle.
  • CRAB: 2 pounds jumbo crabmeat, picked over 1/4 cup Roasted Red Pepper sauce 1 tablespoon fresh lime juice 2 teaspoons honey 1 tablespoon pureed canned chipotle pepper 1/4 cup chopped cilantro Salt and pepper
  • In a mixing bowl, combine the crab, red pepper sauce, lime juice, honey, chipotle puree and cilantro. Season to taste with salt and pepper.
  • ASSEMBLY: Place black beans on a large platter. Top with the crabmeat mixture. Dress with roasted red pepper sauce and squirt cilantro oil around salad.

Steps:

  • Preheat grill.
  • Whisk lime juice, cilantro, olive oil, chilies, Adobo sauce, honey, garlic, cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper together in small bowl.

1/2 cup chopped sun-dried tomato
1 large shallot, chopped
3 tablespoons key lime juice

Steps:

  • Heat in a large skillet, 2 tbls olive oil.
  • Add shallots and cook until translucent.

2 fresh jalapeno peppers, seeded and minced
1/2 cup green onion, minced
1/2 cup fresh cilantro, minced
1/4 cup fresh lime juice
1/4 cup canola oil
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon salt

Steps:

  • In a jar or container with tight-fitting lid, combine lime juice, oil, brown sugar, mustard, salt and pepper. Shake until completely blended.
  • In a separate bowl, combine beans, corn, green onions, jalapeno and cilantro.
  • Pour dressing over bean mixture and toss to coat.
  • Cover and chill for atleast an hour or up to a day. If a day, give it a stir or two.
  • To serve as a salad, arrange with cabbage or lettuce leaves. Add more cilantro to make it pretty on top, if you wish.

8 medium red potatoes
4 eggs
8 slices bacon
1 (15 ounce) can black beans, drained and rinsed
3 green onions, diced
3 fresh jalapeno peppers, diced
½ green bell pepper, diced

1 teaspoon Cajun seasoning

Steps:

  • Place potatoes in a pot with enough water to cover. Bring to a boil, and cook until tender. Drain, dice, and cool.
  • Place eggs in a pot with enough cold water to cover. Bring to a boil and immediately remove from heat. Cover saucepan, and let eggs stand in hot water for 10 to 12 minutes. Drain, cool, peel and chop.
  • Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain, crumble and set aside.

1 red bell pepper, finely chopped
1/4 cup green onion, finely chopped

2 cloves garlic, minced
1 large tomato, seeds removed, chopped
¼ cup freshly picked cilantro
1 teaspoon cumin, toasted and ground
1 teaspoon coriander, toasted and ground
Juice from 1 lime
3 tablespoons EVOO
1 jalapeño pepper, seeded and finely chopped
Kosher salt and freshly ground black pepper, to taste

  • Combine the rice and water in the rice cooker. The ratio of rice to water should be around 1 to 2 and a half. Turn on rice cooker and cook until the switch clicks to the warm setting. 2 tablespoons finely chopped fresh jalapeño peppers
DRESSING
1/3 cup oil
1/4 cup rice wine vinegar or white wine vinegar
1/4 cup orange juice
1 teaspoon finely chopped garlic
1/2 teaspoon salt
1/4 cup chopped fresh cilantro
1 tablespoon grated orange peel
1 to 2 teaspoon cumin seed
lettuce leaves

Steps:

  • In large bowl, combine all salad ingredients blend well. In small bowl using wire whisk, blend oil, vinegar, orange juice, garlic and salt. Pour over salad toss gently. Cover refrigerate 1 to 2 hours to blend flavors.Just before serving, drain salad. Stir in cilantro, orange peel and cumin seed. Serve in lettuce-lined bowl or on lettuce-lined plates. Spicy Black Bean Salad image

Salsa and cumin add spicy flavor to this hearty salad of black beans, oranges, green onions, garlic and lime juice. Serve over lettuce with crackers.

4 cups cooked black beans (prepared without salt)
2 large oranges, peeled, sectioned
2/3 cup thinly sliced green onions
1/3 cup TACO BELL® Thick & Chunky Salsa
1/4 cup lime juice
2 cloves garlic, minced
1/2 tsp. ground cumin
lettuce leaves
lightly salted woven wheat cracker

Steps:

  • Mix all ingredients except lettuce and crackers in bowl, stirring gently. Refrigerate at least 2 hours to blend flavors.
  • Serve salad on lettuce with crackers.
