A hint of lemon in the frosting is a nice complement to the spiced banana bars. Nice light texture.Original recipe is from Taste Of Home magazine.

Number Of Ingredients 16

1/4 cup margarine
3/4 cup sugar
1 egg
1 banana, mashed
1/4 cup milk
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon allspice
1/3 cup chopped walnuts (optional)
2 tablespoons margarine or 2 tablespoons butter
1 cup icing sugar
2 teaspoons lemon juice
2 -4 teaspoons water

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 13"X9" pan.
  • Cream together margarine and sugar.
  • Beat in the egg.
  • Stir in banana.
  • Stir in the milk.
  • Combine flour, baking powder, salt, baking soda, cinnamon, allspice, and nuts (if using).
  • Stir into creamed mixture.
  • Spread in the pan.
  • Bake 20-25 minutes at 350F.
  • until golden brown.
  • Frosting: Melt margarine.
  • Stir in icing sugar and lemon juice.
  • Stir in water, 1 tsp.
  • at a time, to get a good spreading consistency.
  • Spread over warm bars.
  • Cool completely.
  • Cut into bars.

Senior Prize Winner in Pillsbury's 6th Grand National Recipe and Baking Contest by Mrs. Byard Cummings, Enderlin, North Dakota. I found this in a old Pillsbury magazine. I have not tried this recipe, but I'm posting it for safe keeping.

1 cup pillsbury's best all-purpose flour
3/4 cup sugar
1/2 teaspoon double-acting baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 teaspoon french's cinnamon
1/4 teaspoon french's clove
1/4 teaspoon french's allspice
1/4 cup butter
1/3 cup ripe banana, mashed (1 small)
1 unbeaten egg
1/4 cup milk
1/2 teaspoon allspice
1/3 cup funsten's chopped pecans
2 tablespoons butter, melted
1 tablespoon hot water
2 teaspoons lemon juice
1 cup sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Sift together.flour, sugar, baking powder, salt, baking soda, cinnamon, cloves, and allspice.
  • Cream -- together butter. Add banana; blend throughly.
  • Blend in -- egg; beat well.
  • Add -- the dry ingredients alternately with milk, beginning and ending with dry ingredients. Blend throughly after each addition. (With electric mixer use a low speed).
  • Stir in -- pecans.
  • Spread -- in well-grease and lightly floured 13X9x2-inch pan.
  • Bake -- in moderate oven (350) 22 to 25 minutes. Frost while warm.
  • Note: If you use Pillsbury's Best Self-Rising Flour, omit baking powder, salt and soda.
  • Lemon Frosting: Mix butter, water, and lemon juice and stir in confectioners' sugar. Thin with additional hot water, a little at a time, if necessary.

1/4 cup margarine, softened, or shortening
1/3 cup mashed ripe banana
1/4 cup milk
1 egg
1 cup all-purpose flour
3/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon allspice
1/3 cup chopped pecan
FROSTING
2 tablespoons margarine or butter
1 cup powdered sugar
2 teaspoons lemon juice
2 to 4 teaspoons water

Steps:

  • Heat oven to 350°F. Grease and flour 13 x 9-inch pan. In small bowl, combine 1/4 cup margarine and banana until well blended. Add milk and egg beat well. Stir in flour and remaining bar ingredients until well mixed. Spread in greased and floured pan. Bake at 350°F. for 20 to 25 minutes or until light golden brown.Meanwhile, melt 2 tablespoons margarine in small saucepan. Stir in powdered sugar, lemon juice and enough water for desired spreading consistency. Spread over warm bars. Cool completely. Cut into bars. Garnish as desired. HIGH ALTITUDE - Above 3,500 feet: Decrease sugar to 2/3 cup.
