SPICY AIR-FRYER CHICKEN BREASTS

My family adores this chicken recipe. The coating keeps the chicken nice and moist, and with the taste enhanced by marinating, the result is delicious. -Stephanie Otten, Byron Center, Michigan

Number Of Ingredients 15

2 cups buttermilk
2 tablespoons Dijon mustard
2 teaspoons salt
2 teaspoons hot pepper sauce
1-1/2 teaspoons garlic powder
8 bone-in chicken breast halves, skin removed (8 ounces each)
2 cups soft bread crumbs
1 cup cornmeal
2 tablespoons canola oil
1/2 teaspoon poultry seasoning
1/2 teaspoon ground mustard
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley flakes

Steps:

  • Preheat air fryer to 375°. In a large bowl, combine the first 5 ingredients. Add chicken and turn to coat. Refrigerate, covered, 1 hour or overnight., Drain chicken, discarding marinade. Combine remaining ingredients in a shallow dish and stir to combine. Add chicken, 1 piece at a time, and turn to coat. Place in a single layer on greased tray in air-fryer basket. Cook until a thermometer reads 170°, about 20 minutes, turning halfway through cooking. Return all chicken to air fryer and cook to heat through, 2-3 minutes longer.

Put this together for last evening's dinner. Served it topped with salsa, warm flour tortillas, and South-of-the-Border fixings. Yummy Stuff. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
THE BRINE
1 c dill pickle juice, more on this later
THE CHICKEN
2 medium chicken breasts, boneless, skinless
2 tsp olive oil, extra virgin variety
THE SPICES
salt, kosher variety
black or white pepper, freshly ground
smoked paprika
cayenne pepper
other spices, your choice

Steps:

  • 1. PREP/PREPARE
  • 2. The brine used in this recipe is the liquid from a jar of dill pickles. However, in these troubling times, going out for some pickles just to use the brine is unacceptable. So, here are some options. 1. Brine the chicken breast in some saltwater. 2. Add some salt and dried dill to a cup or so of water, boil, and then let come to room temperature. In either case place the brining solution in the fridge until nice and cold before adding the chicken breasts.
  • 3. Gather your ingredients (mise en place).
  • 4. Brine the chicken breasts for 2 - 3 hours.
  • 5. Rub the chicken breasts with a bit of olive oil, and then sprinkle some spices on one side. I am using salt, pepper, paprika, and cayenne.
  • 6. Add to the air fryer basket, spice side down, and then sprinkle the other side with more spices.
  • 7. Set the air fryer to 350f (175c) and cook for 10 minutes.
  • 8. Open the fryer and flip the chicken breasts.
  • 9. Cook until an instant-read thermometer reads around 160f (70c), about 4 - 6 minutes.
  • 10. Allow to rest for 3 - 4 minutes before serving.
  • 11. PLATE/PRESENT
  • 12. Slice and serve with your favorite sides. In this image I spooned on some of my favorite salsa, and served with warm tortillas, and fixings. Enjoy.
