2 tablespoons butter
2 cups washed, cleaned pumpkin seeds
1 1/4 teaspoons salt
1/2 teaspoon each ground cumin, chili powder and freshly ground black pepper

Steps:

  • Heat oven to 300F. Melt butter in a large saucepan or bowl in microwave. Add seeds, salt and spices; toss to coat. Spread seeds on a jelly roll pan and bake 30 to 40 minutes, stirring often, until they're browned and crisp.

1 1/2 cups unshelled squash or pumpkin seeds, washed and dried
Olive oil for pan
3 teaspoons ground black pepper
3 tablespoons salt
2 teaspoons curry powder
1 teaspoon paprika, preferably smoked
1 teaspoon ground cardamom

Steps:

  • Heat oven to 350 degrees. Spread seeds on a cookie sheet liberally covered with olive oil. Bake 15 to 20 minutes, or until seeds turn a light golden brown.
  • Combine remaining ingredients in a bowl. Remove seeds from oven, and toss them in the spices. Toasted seeds will keep several weeks at room temperature.
