4 cups sweet potatoes (mashed)
2 cups heavy cream
2 cups milk
1/2 cup butter
1 cinnamon stick
1 bay leaf
2 black cardamom pods
4 green cardamom pods
1 tablespoon ginger-garlic paste
1/2 teaspoon ground coriander
1/2 teaspoon red chili powder
1/2 teaspoon ground nutmeg
coriander leaves (Cilantro)

Steps:

  • Boil and mash sweet potatoes. Set aside.
  • In a medium stock pot melt butter over medium-high heat.
  • Add cinnamon stick, black cardamom, green cardamom and bay leaf.
  • Stir whole spices until pods burst open.
  • Remove whole spices from butter.
  • Add ginger/garlic paste and sautéuntil golden brown.
  • Add sweet potatoes and mix together.
  • While whisking, add in milk and cream and mix until smooth.
  • Add coriander, ground red chilie, and nutmeg and stir.
  • Simmer on low heat for 35-45 minutes.
  • Serve with coriander leaves as a garnish.

½ cup sour cream
1 teaspoon grated lime zest
2 large sweet potatoes, peeled and cubed
1 tablespoon butter
1 onion, sliced
2 cloves garlic, sliced
4 cups chicken stock
½ teaspoon ground cumin
¼ teaspoon crushed red pepper flakes
2 tablespoons grated fresh ginger root
¼ cup smooth peanut butter
1 lime, juiced
2 tablespoons chopped fresh cilantro
salt to taste
1 large roma (plum) tomato, seeded and diced

Steps:

  • In a small bowl, stir together the sour cream and lime zest. Set aside in the refrigerator to allow the flavors to blend.
  • Melt butter in a large pot over medium heat. Add onion and garlic, and cook for about 5 minutes, until softened. Add sweet potatoes, and chicken stock. Season with cumin, chili flakes and ginger. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, until potatoes are tender.
  • Puree the soup using an immersion blender or regular blender. If using a counter top blender, puree in small batches, filling the blender just a bit past half way to avoid spillage. Whisk peanut butter into the soup, and heat through. Stir in lime juice, and salt.
  • Ladle into warm bowls, and top with a dollop of the reserved sour cream, a few pieces of diced tomato, and a sprinkle of cilantro.

2 pounds sweet potatoes (about 4 medium), peeled and chopped
1 large sweet onion, finely chopped
1 medium sweet red pepper, finely chopped
1-1/2 teaspoons curry powder
1 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon grated lemon zest
1/8 teaspoon coarsely ground pepper
6 cups reduced-sodium chicken broth
Salted pumpkin seeds or pepitas, optional

Steps:

  • In a 5-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low 6-8 hours or until vegetables are tender., Puree soup using an immersion blender. Or, cool soup slightly and puree in batches in a blender; return to slow cooker and heat through. If desired, top servings with pumpkin seeds.

2 tablespoons unsalted butter
4 slices thick-cut bacon, cut into a small dice
2 cups diced peeled sweet potato
2 medium shallots, sliced
2 cloves garlic, chopped
1 small red bell pepper, diced
3 sprigs fresh thyme
1 sprig fresh sage
1 bay leaf
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 teaspoons yellow curry powder
One 15-ounce can corn, drained
2 cups chicken stock
1 cup heavy cream
1 tablespoon sherry vinegar
1/4 cup minced chives

Steps:

  • In a stockpot or Dutch oven over medium heat, melt the butter. Add the bacon and cook until crispy and most of the fat is rendered, about 8 minutes. Set the bacon aside for later use, leaving the fat in the pot.
  • In the same pot over medium heat, saute the sweet potato, shallots, garlic and bell pepper, stirring frequently, until the shallots are tender and translucent, about 3 minutes. Add the thyme, sage and bay leaf. Season with salt and pepper. Add the flour and curry to the vegetables and stir until incorporated. Cook for another 2 minutes.
  • Add the corn, chicken stock, heavy cream and sherry vinegar. Bring to a simmer and cook, covered, until the sweet potato is tender, another 20 to 25 minutes. Season with salt and pepper.
  • Plate into individual bowls and garnish with the crispy bacon and chives.

SAUSAGE AND SWEET POTATO CHOWDER



Sausage and Sweet Potato Chowder image

Nice soup for a brisk fall day. I usually use spicy lowfat ground turkey sausage, but if you don't mind the fat (most gets drained off), use regular pork.

1 lb ground lean turkey sausage
1 cup chopped onion
1/2 cup chopped celery
2 minced garlic cloves
3 1/2 cups chicken broth
2 large sweet potatoes, peeled and diced
1 cup frozen corn, thawed
1 teaspoon thyme
1/2 teaspoon crushed rosemary
1/4-1/2 teaspoon salt, to taste
1/4 teaspoon pepper
1 cup fat-free half-and-half
1 1/2 tablespoons cornstarch, dissolved into
2 tablespoons milk
1 1/2 cups shredded sharp cheddar cheese

Steps:

  • In a soup pot, brown and crumble the sausage with the onion and celery. Cook until no longer pink. Drain off excess fat and return the mixture to the pot.
  • Add to the pot the garlic, broth, sweet potatoes, corn, thyme, rosemary, salt and pepper.
  • Bring to a boil. Reduce heat and cover and simmer for about 15 minutes or until sweet potatoes are tender.
  • Add the fat free half and half and stir until heated through.
  • Mix/shake together the cornstarch and milk; stir into the soup.
  • When heated through, stir in the cheese, but do not allow to boil.
