This recipe uses less sugar and butter than a traditional sweet potato casserole. Nutrition Note: This recipe has been flavored with fresh orange and uses less sugar and margarine than a traditional sweet potato casserole. Nutrition Note: Sweet potatoes are loaded with vitamin A and have a low glycemic index rating, which is important for diabetics. The carbohydrates that are present break down more slowly causing glucose levels to rise more gradually. Baking sweet potatoes instead of cooking in water helps to bring out the natural sweet flavor.

1/2 teaspoon ground cinnamon
1 tablespoon melted margarine or 1 tablespoon butter
2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt
1/2 cup chopped pecans
1 teaspoon grated orange peel
1 tablespoon light brown sugar
2 tablespoons all-purpose flour
4 lbs sweet potatoes (5)
1/2 teaspoon ground cumin
2 tablespoons light brown sugar
1/3 cup fresh orange juice

Steps:

  • Preheat oven to 400 degrees F.
  • Wash and dry potatoes. Pierce potatoes in several places with a fork. Bake potatoes 1 hour or until tender. Cool. Peel potatoes, place in large bowl, and mash.
  • Stir in orange peel, orange juice, 2 tablespoons margarine or butter, 2 tablespoons brown sugar, cinnamon, cumin, and salt; mix well. Spoon into lightly greased 10x6-inch baking dish.
  • Combine pecans, flour, 1 tablespoon brown sugar, and 1 tablespoon margarine or butter; mix well. Sprinkle evenly over potatoes.
  • Bake 30 to 35 minutes or until hot. Let stand 5 minutes.

1 cup packed light brown sugar
2 teaspoons pumpkin pie spice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon mustard powder
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
One 4-pound boneless pork loin roast
2 tablespoons unsalted butter, plus more for the baking dish
2/3 cup packed light brown sugar
Kosher salt
2 1/2 pounds sweet potatoes (about 5)
1 lemon, sliced and seeded
1/2 cup chopped pecans
3 cups marshmallows

Steps:

  • For the pork: In a small bowl, mix together the brown sugar, pumpkin pie spice, garlic powder, onion powder, mustard powder, 1 tablespoon salt and 1 teaspoon black pepper. Stir in the olive oil to combine. Rub onto the pork on all sides. Put in an 8-by-12-inch rimmed baking dish and let sit at room temperature for 1 hour.
  • Position the racks in the top and bottom of a large countertop oven and preheat to 350 degrees F.
  • Transfer the baking dish to the bottom rack of the oven. Cook until the pork is caramel colored and reaches an internal temperature of 145 degrees F, about 60 minutes.
  • For the sweet potatoes: While the pork roasts, bring a large pot of water to a boil. Melt the butter in a medium saucepan and stir in the brown sugar, 1/2 cup water and a pinch of salt. Bring to a boil, then lower the heat to medium and simmer, stirring, until reduced and thickened, about 10 minutes.
  • Meanwhile, peel the potatoes and cut them lengthwise, then lengthwise again, making long quarters. Cut the quarters into 1-inch pieces. Boil the potatoes until they give a bit when poked with a fork, about 5 minutes.
  • Drain the potatoes and arrange in a single layer in a buttered 3-quart baking dish. Pour the syrup on top, making sure it covers the potatoes. Lay the lemon slices on top and bake on the top rack for 35 minutes. The potatoes are done when they are fork tender.
  • When the pork and sweet potatoes are both done, remove them from the oven and increase the temperature to 400 degrees F. Transfer the pork to a carving board and pour the sauce from the bottom of the pan over it. Let rest while finishing the sweet potatoes, 10 to 15 minutes.
  • Remove and discard the lemon slices from the sweet potato casserole and stir in the pecans. Top the casserole with the marshmallows and return to the oven on the bottom rack. Cook until the marshmallows puff and turn brown, about 10 more minutes.

10 sweet potatoes (Baked)
1 cup brown sugar
1 teaspoon cinnamon
1 teaspoon clove
1 dash nutmeg
1 dash allspice
1/4 cup spiced rum
1/2 cup orange juice
16 ounces mini marshmallows

Steps:

  • Bake Sweet potatoes on 375 for 25-30 min or till tender.
  • Remove pulp with a large spoon & place in a large bowl. Stir potatoes, brown sugar, butter, cinnamon, clove, nutmeg, allspice, orange juice & Spiced Rum.
  • Salt & pepper to taste.
  • Butter casserole pan & layer potato mixture, then marshmallows. as many layers as you can. Finish off with remaining marshmallows.
  • Sprinkle brown sugar on top.
  • Bake at 350 for 20-30 minutes or till golden brown.

3 lbs sweet potatoes
1/3 cup packed brown sugar
2 tablespoons butter
2 tablespoons orange juice concentrate
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 large eggs
1/4 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven.
  • Microwave at high 16 minutes or until tender, rearranging potatoes after 8 minutes.
  • Let stand 5 minutes.
  • Cut each potato in half lengthwise; scoop out pulp into a large bowl.
  • Discard skins.
  • Add sugar and next 5 ingredients (sugar through nutmeg), and beat with a mixer at low speed until combined.
  • Add eggs; beat until smooth.
  • Spoon mixture into a 1 1/2-quart baking dish; sprinkle with pecans.

3 sweet potatoes (about 1 1/2 lbs total)
1/2 cup cream
1/2 cup light brown sugar, packed
1/2 cup white sugar
2 teaspoons cinnamon
1/8 teaspoon ground cloves
1/4 teaspoon powdered ginger
1/4 teaspoon ground nutmeg
1 -2 teaspoon vanilla extract
1 -2 tablespoon flour
1/2 cup butter, melted
2 eggs, beaten
1/2 cup flour
1 cup chopped pecans
1 cup light brown sugar, packed
1/2 teaspoon cinnamon
5 tablespoons butter, melted

Steps:

  • Cook your potatoes.
  • You can bake them in the oven, you can bake them in the microwave, you could even boil them (which is how my mother always cooked them).
  • Once the potatoes are cooked, scoop out the insides into a large bowl.
  • Mash the potaotes.
  • Add the cream and mix throughly until creamy.
  • Add the brown sugar and white sugar and mix well.
  • Add in the spices, 1-2 Tbsp flour and 1/2 cup butter and mix well.
  • Add the eggs and mix well again.
  • Spoon the mixture evenly into 9x9 baking dish.
  • In a medium bowl combine the 1/2 cup flour, 1 cup pecans, 1 cup brown sugar,1/2 tsp cinnamon and 5 Tbsp butter until crumbly.
  • Spoon the topping mixture even over the top of the potatoes.
  • Bake at 350 for 30 minutes until topping is bubbling and brown.
  • Let cool for apprx 10 minutes before serving.
