- Heat oven to 350 degrees.
- Make the shortbread crust: Pulse flour, butter, confectioners' sugar and salt in a food processor until mixture looks like wet sand. (Alternatively, work the mixture with fingertips or a pastry cutter.)
- Press shortbread mixture into the bottom of a 9-by-9-inch square cake pan in an even layer. Bake crust for 20 minutes, until very lightly browned. Remove from oven and cool.
- Meanwhile, make the filling: In a medium saucepan, whisk together melted butter, eggs, molasses, golden syrup, cardamom, allspice, clove, nutmeg, salt, orange zest, rum and vanilla extract. Cook, stirring, over medium heat until mixture thickens slightly, about 5 minutes. Stir in dates.
- Pour filling over prebaked crust, then sprinkle pecans over filling. Bake for 30 minutes, or until filling is no longer jiggly and seems set.
- Remove from oven and cool on a rack for 15 minutes. Run a knife around the edge of pan to loosen cake, then invert pan over a cutting board to remove. Invert again and cool completely before cutting into bars approximately 1 1/2 by 3 inches.

- Beat butter with sugar until fluffy. Blend all seasonings well with flour, and add all to the butter mixture. Mix with until just combined.
- On a lightly floured surface, knead about 8 times with hands, until dough comes together. Add ice water as needed if dough is too crumbly. Divide dough into 4 equal pieces. On a sheet of wax paper, roll each piece of dough into a 3/4"-thick log. Sprinkle lightly with a dusting of cayenne, or a mix of all the above spices if you like.
- Wrap each log in wax paper and freeze for about 20 minutes, until fairly firm.
- Slice about 1/2" thick and bake for 15 minutes at 350.
- (The logs can be frozen a week or more ahead of time, but you will want to let them soften a bit before slicing, to prevent crumbling.).

MEXICAN SPICED SHORTBREAD COOKIES

- 1. Preheat oven to 325°. 2. To prepare cookies, weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cocoa, and next 4 ingredients (through ancho chile powder) in a bowl; stir with a whisk. 3. Place 1/2 cup butter in a large bowl; beat with a mixer at medium speed until light and fluffy. Gradually add oil; beat 3 minutes or until well blended. Gradually add 3/4 cup powdered sugar; beat well. Add flour mixture; beat at low speed until well blended. Cover and chill 30 minutes. 4. Shape dough into 36 balls. Place 2 inches apart on an ungreased baking sheet. Flatten cookies to 1/4 inch thickness. Bake at 325° for 20 minutes. Cool 1 minute on baking sheet. Remove from baking sheet to a wire rack; cool completely. 5. To prepare icing, melt 2 tablespoons butter in a large saucepan over medium heat. - Preheat the oven to 160degrees/140fan Grease a large baking sheet
- Mix together the flour, sugar and spices Rub in the butter until the mixture resembles breadcrumbs
- Add a dollop of food colouring and knead the mixture until it forms a dough, add a little milk if needed. At this stage add more food colouring to reach your desired colour
- Take a heaped teaspoon of dough and roll it into a ball, Mark vertical lines in the side of the ball to form a pumpkin shape, go quite deep to prevent the lines fading out while cooling.
- Place a clove into the top of each ball and place it onto the tray. Continue until all the dough has been used up
- Bake for around 35minutes or until the biscuits are firm and the bases have darkened, if baked too little they will be raw in the middle!
- Leave to cool before enjoying!

SPICED SHORTBREAD

- Make Classic Shortbread dough, beating 1 1/2 teaspoons ground cinnamon and 1/2 teaspoon ground cardamom with the butter. Pat into a 1/4-inch-thick square on parchment paper, then cut into 1-inch squares and chill 30 minutes. Sprinkle with cinnamon-sugar and bake 12 to 15 minutes at 375 degrees.
SPICED SHORTBREAD

- Line cookie sheets with parchment. In a small bowl combine flour and spices and set aside. In a large bowl cream butter with an electric mixer until light; add brown sugar and beat until fluffy. Beat in zest and flour mixture in thirds. Chill for 20 minutes. Roll out the dough between 2 sheet of waxed paper if necessary to 1/4" thick and cut into shapes. Bake at 350 degrees for 12-14 minutes or until just beginning to brown at edges. Cool on sheets for 2 minutes then transfer to racks to cool. Keep for 2 weeks or up to 3 months in freezer.
