SPICY RHUBARB CHUTNEY



Spicy Rhubarb Chutney image

This is a great recipe for grilled pork or chicken. The original recipe was sent to me from my Aunt Jean. I changed the recipe to include more cinnamon, jalapenos and garlic. I find this is much better-but if the heat scares you de seed the peppers.

Number Of Ingredients 15

2 cups packed brown sugar
1 1/2 cups cider vinegar
1 teaspoon ground ginger
1 teaspoon salt
1 teaspoon ground allspice
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
6 cups rhubarb, cut in 1/2 inch pieces
3 small jalapenos, with seeds minced
2 teaspoons minced ginger
3 teaspoons minced garlic
1 cup chopped onion
1 cup golden raisin

Steps:

  • In a large heavy saucepan combine the ingredients of part 1.
  • Bring to a boil and stir to dissolve sugar.
  • Add the ingredients of part 2.
  • Bring back to a boil, reduce heat and simmer until thick, stirring often, about 1-1 1/2 hours .
  • Ladle into clean hot jars leaving 1/2 inch head space and process in a boiling water bath canner for 10 minutes.

RHUBARB-ORANGE SOUP

Number Of Ingredients 4

1 medium orange
2 pounds rhubarb
1 cup sugar
Sour cream, lightly sweetened yogurt, creme anglaise, whipped cream, creme fraiche, or vanilla or other ice cream, optional

Steps:

  • Zest orange and mince zest; juice the orange. Remove string from rhubarb, then cut rhubarb into roughly 2-inch lengths.
  • Combine rhubarb, sugar, 4 cups water, orange juice and half the zest in a saucepan and bring to a boil. Wrap and refrigerate remaining zest. Turn heat to medium and cook for 10 to 15 minutes, until rhubarb begins to fall apart.
  • Chill; if you're in a hurry, pour mixture into a large bowl and set that bowl in an even larger bowl filled with ice water. When cool, whisk briefly to break up rhubarb, adding reserved zest at same time. Serve cold, with sour cream or any of the alternatives listed.

RHUBARB SOUP

Number Of Ingredients 8

4 cups rhubarb, washed and diced
5 cups water
1 1/2 cups granulated sugar
3 3-inch sticks of cinnamon
5 to 6 slices of lemon, seeded
4 cups red wine
16 ounces creme fraiche
One stalk rhubarb, julienned, 2 inches long

Steps:

  • Place the rhubarb, water and sugar in a large pot. Stir and simmer over medium heat for 20 minutes or until the rhubarb is soft.
  • Add the cinnamon, lemon slices and red wine and simmer for 15 minutes.
  • Remove from the heat and strain the soup through a sieve. Allow the soup to come to room temperature, cover and refrigerate.
  • Serve the soup very cold in bowls with a dollop of creme fraiche and julienned rhubarb.

CHILLED RHUBARB AND RASPBERRY SOUP

And now, dessert: This luminous, vanilla-scented concoction is sweet, tart, refreshing, and a touch indulgent, thanks to a scoop of ice cream.

1/2 cup sugar
Seeds and pod of 1/2 vanilla bean
4 to 6 stalks rhubarb (1 pound), thinly sliced
4 cups water
6 ounces raspberries (1 1/3 cups)
1 to 2 tablespoons sugar
Vanilla ice cream, if desired
Raspberries, if desired

Steps:

  • Bring sugar, vanilla bean seeds and pod, rhubarb, and water to a boil in a medium saucepan, stirring to dissolve sugar. Remove from heat, and add raspberries and 1 to 2 tablespoons sugar if desired, depending on sweetness of the fruit. Let cool for 30 minutes.
  • Gently mash fruit with a ladle. Strain through a coarse sieve into a large bowl; discard solids. Chill soup at least 3 hours or up to overnight. Garnish each serving with a scoop of vanilla ice cream and raspberries if desired.
