Popcorn is roasted with butter and a blend of spices to make an addictive snack. I make this for watching movies or even sports.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Place the popped popcorn in a large roasting pan.
- In a small bowl, stir together the melted butter, paprika, lemon pepper, salt, garlic powder, onion powder, and cayenne pepper. Pour over the popcorn and stir until it is somewhat evenly coated.
- Bake for 15 minutes, stirring every 5 minutes. Remove from the oven and cool completely. Serve immediately, or store in an airtight container for later.

CAJUN-SPICED POPCORN
This recipe came from Alan (my best friend in college). His parents are from Louisiana and this was his mom's recipe. We used to have poker parties all the time and this was one of our favorite things to serve. Popcorn is cheap, so we made a lot of different flavored popcorns.

- In small bowl, place 1 quart hot popped corn; set aside.
- In large bowl, pour butter over remaining popcorn.
- Combine remaining ingredients. Sprinkle over buttered popped corn, tossing gently to coat.
- Spread on 15x10-inch baking; sheet and bake at 300°F for 3 minutes, or until desired crispness.
- Mix in reserved popcorn. Serve immediately or store in airtight container.

- Heat oven to 200C/180C fan/gas 6. Pop the natural microwave popcorn pouch (or popcorn kernels) following pack instructions.
- Meanwhile, mix together chilli flakes, cracked black pepper and mixed spice. Toss the popcorn with the spice mix, then tip onto a large baking tray and place in the oven for 5 mins until the corn is crisp and the spices are fragrant.

JAMIE'S SPICED SUGAR AND CHRISTMAS POPCORN RECIPE
This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

- SPICED SUGAR:.
- Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
- Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
- Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
- POPCORN:.
- Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.
- Put the sugar into a large bowl and when the popcorn is ready, add it to the bowl, tossing quickly to coat it with the sugar.
WARM SPICED VANILLA POPCORN
Popcorn is a lowfat, high-fiber treat that my whole family loves. Just a hint of sugar and some coconut oil add a lot of flavor for the calories. My favorite way to pop popcorn is in a heavy-bottomed pot-while it may take a few more minutes compared to a microwave or air popper, the results are exponentially better. Once you get the hang of it, I know you'll agree that old-fashioned stove-top popcorn is worth the five extra minutes.

- Mix the sugar, salt, and cinnamon together in a small bowl and set aside. Place a rimmed baking sheet or a large paper bag on the work surface.
- Heat the coconut oil in a large heavy-bottomed pot or Dutch oven over medium heat for 1 minute. Add 2 popcorn kernels. Once they pop, add the scraped vanilla seeds and stir. - Put about 1/3 cup of the roasted chickpeas in a spice grinder and grind until powdered but not pasty. Transfer to a small bowl and stir in the paprika, ginger, cayenne, garlic powder, onion powder, allspice and 1 teaspoon salt.
