20 cups popped popcorn
½ cup butter or margarine, melted
2 teaspoons paprika
2 teaspoons lemon pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the popped popcorn in a large roasting pan.
  • In a small bowl, stir together the melted butter, paprika, lemon pepper, salt, garlic powder, onion powder, and cayenne pepper. Pour over the popcorn and stir until it is somewhat evenly coated.
  • Bake for 15 minutes, stirring every 5 minutes. Remove from the oven and cool completely. Serve immediately, or store in an airtight container for later.

This recipe came from Alan (my best friend in college). His parents are from Louisiana and this was his mom's recipe. We used to have poker parties all the time and this was one of our favorite things to serve. Popcorn is cheap, so we made a lot of different flavored popcorns.

3 quarts popped popcorn
1/4 cup butter, melted
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon lemon pepper

Steps:

  • In small bowl, place 1 quart hot popped corn; set aside.
  • In large bowl, pour butter over remaining popcorn.
  • Combine remaining ingredients. Sprinkle over buttered popped corn, tossing gently to coat.
  • Spread on 15x10-inch baking; sheet and bake at 300°F for 3 minutes, or until desired crispness.
  • Mix in reserved popcorn. Serve immediately or store in airtight container.

CHILI SPICED POPCORN

1 pouch natural microwave popcorn or 100g popcorn kernels
1 tsp chilli flakes
1 tsp cracked black pepper
2 tsp mixed spice

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pop the natural microwave popcorn pouch (or popcorn kernels) following pack instructions.
  • Meanwhile, mix together chilli flakes, cracked black pepper and mixed spice. Toss the popcorn with the spice mix, then tip onto a large baking tray and place in the oven for 5 mins until the corn is crisp and the spices are fragrant.
  • Sprinkle with a pinch of salt and eat warm or once cooled. Will keep in an airtight container for up to a week.

JAMIE'S SPICED SUGAR AND CHRISTMAS POPCORN RECIPE



Jamie's Spiced Sugar and Christmas Popcorn Recipe image

This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

3 fresh bay leaves
2 oranges, zest of, finely grated
2 lemons, zest of, finely grated
6 whole cloves
1/2 teaspoon ground cinnamon
whole nutmeg (10 gratings)
1 vanilla pod, halved lengthways
1 kg caster sugar, unrefined if possible
olive oil
1 slice butter
250 g popcorn
6 tablespoons spiced sugar

Steps:

  • SPICED SUGAR:.
  • Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
  • Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
  • Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
  • POPCORN:.
  • Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.
  • Put the sugar into a large bowl and when the popcorn is ready, add it to the bowl, tossing quickly to coat it with the sugar.

WARM SPICED VANILLA POPCORN

Popcorn is a lowfat, high-fiber treat that my whole family loves. Just a hint of sugar and some coconut oil add a lot of flavor for the calories. My favorite way to pop popcorn is in a heavy-bottomed pot-while it may take a few more minutes compared to a microwave or air popper, the results are exponentially better. Once you get the hang of it, I know you'll agree that old-fashioned stove-top popcorn is worth the five extra minutes.

2 teaspoons granulated sugar
1 teaspoon fine or table salt
1/2 teaspoon ground cinnamon
2 tablespoons coconut oil
1/3 cup popcorn kernels
1/2 to 1 vanilla bean, split and seeds scraped away

Steps:

  • Mix the sugar, salt, and cinnamon together in a small bowl and set aside. Place a rimmed baking sheet or a large paper bag on the work surface.
  • Heat the coconut oil in a large heavy-bottomed pot or Dutch oven over medium heat for 1 minute. Add 2 popcorn kernels. Once they pop, add the scraped vanilla seeds and stir. Immediately stir in the remaining popcorn kernels, wait 10 seconds, then quickly stir in the sugar-cinnamon mixture. Cover the pot, leaving the lid slightly askew (and facing away from you) to allow steam to escape. Use oven mitts to protect your hands as you shake the pot constantly over the burner. Keep shaking until most of the popcorn has popped and you hear 1 to 2 seconds between pops.

1 teaspoon sweet paprika
1/2 teaspoon ground ginger
1/4 to 1/2 teaspoon ground cayenne
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground allspice
Kosher salt
2 tablespoons vegetable oil
1/2 cup popcorn kernels
1/4 cup unsalted butter or ghee, melted

Steps:

  • Put about 1/3 cup of the roasted chickpeas in a spice grinder and grind until powdered but not pasty. Transfer to a small bowl and stir in the paprika, ginger, cayenne, garlic powder, onion powder, allspice and 1 teaspoon salt.
  • Heat the vegetable oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add a few kernels of popcorn. Once they begin to pop, scatter in all of the popcorn and cover the pot. Cook and shake the pot until the popcorn pops and the popping noise subsides, 3 to 4 minutes.
  • While still hot, add the remaining chickpeas and drizzle all with the melted butter. Toss well. Sprinkle with the spice mix and toss well again. Serve.

⅓ cup molasses
2 teaspoons ground cinnamon

½ cup crushed peanuts

Steps:

  • Melt butter in a large pot over low heat. Stir miniature marshmallows into melted butter; cook and stir until mostly melted, about 5 minutes. Add molasses, cinnamon, and nutmeg to the marshmallow mixture; continue cooking until the mixture begins to bubble, about 5 minutes more. Mix crushed peanuts into the mixture. Remove pot from heat.

Crisco® Original No-Stick Cooking Spray
2 (3 to 3.25 oz.) bags microwave popcorn, popped
1 cup Jif® Chocolate Flavored Hazelnut Spread
1/4 tsp. salt

1/8 tsp. cayenne pepper

Steps:

  • HEAT oven to 225 degrees F. Spray 15 x 10 x 1-inch baking sheet with no-stick cooking spray. Place popped popcorn in a very large bowl or Dutch oven.
  • COMBINE hazelnut spread, corn syrup, salt, cinnamon and cayenne pepper in a medium saucepan over medium heat, stirring constantly, until mixture begins to boil. Remove from heat.
  • POUR warm mixture over popcorn, stirring gently to combine. When all popcorn appears evenly coated, spread evenly on prepared baking sheet. Bake 55 to 60 minutes, stirring occasionally. Remove from oven and allow to cool. May be stored in airtight container for up to one week.
