The classic combination of pork and pineapple lives on in this slightly retro and irresistible sweet and sour one-pan dish

2 tsp vegetable oil
4 pork steaks , trimmed of excess fat
2 tbsp light muscovado sugar
1 tsp tomato purée
432g can pineapple rings in juice, drained, but juice reserved
½ tsp chilli powder
1 tsp Chinese five-spice powder
coriander leaves, to serve
1 tbsp dark soy sauce

Steps:

  • Add the oil to a large non-stick pan, season the steaks well, then fry for 5 mins on each side until golden and almost cooked through. Mix the sugar, soy, tomato purée and most of the pineapple juice in a bowl.
  • Add the pineapple rings to the pan and let them caramelise a little alongside the pork. Add the chilli and five-spice to the pan, then fry for 1 min until aromatic. Tip in the soy mix and let it bubble around the pork and pineapple for a few mins until slightly reduced and sticky. Sprinkle with coriander, and serve with rice and Chinese greens.

1 teaspoon tomato paste
14 ounces pineapple, rings in juice, drained, but juice reserved
1/2 teaspoon chili powder
1 teaspoon Chinese five spice powder
cilantro leaf, to serve
1 tablespoon dark soy sauce

On the top of this roast there is a tasty glaze poured over a layer of crushed pineapple and baked in.

1 small 1.5oz hormel roast flavored pork roast (walmart)
1/2 c pineapple preserves
1 Tbsp honey
1 Tbsp red wine vinegar
1 tsp yellow or dijon mustard
1/4 tsp all spice
1 small can crushed pineapple, drained

Steps:

  • 1. Line a 8' square dish with foil and place your roast wrapped snuggly in foil in the oven. Bake at 350 2 hours.
  • 2. For the glaze, mix the preserves, honey, vinegar, mustard, and allspice in a bowl , and set aside.
  • 3. Remove roast from oven after the two hours, meat should be browning nicely. At this point, place crushed pineapple on roast and then pour your glaze over top to run down the sides.
  • 4. Leave foil open and place back in oven 30-40 minutes to let glaze bake into meat. Serve warm.
