The sweetness of the pineapple lends itself surprisingly well with the lentils. Spice it up a bit with some hot sauce of chile powder!! Freeze leftovers for later.

6 tablespoons canola oil
2 medium onions, diced
1 teaspoon salt
2 teaspoons fresh ground pepper
6 cloves garlic, minced
4 cups picked over lentils
6 cups water
1 (8 ounce) can crushed pineapple

Steps:

  • Heat oil in medium pot over moderate heat.
  • Saute onions with the salt and pepper, about 10 minutes.
  • Stir in garlic and lentils, cook for 2 minutes.
  • Add water and bring to a boil.
  • Reduce to a simmer, cook covered for 45 minutes.
  • Stir in the pineapple and serve.

Steps:

  • Brown 1 bunch leeks (halved lengthwise and sliced crosswise) in 3 tablespoons olive oil in a pot over medium-high heat, 7 to 8 minutes; add 1/2 teaspoon kosher salt. Add 3/4 cup dried brown or green lentils, 3 cups water, 1 bay leaf, 1 star anise pod and 1/2 teaspoon salt. Simmer, partially covered, until the lentils are soft, 25 to 30 minutes. Discard the bay leaf and star anise. Season with salt, top with mint and drizzle with olive oil. Serve with lime wedges.

Spiced Cracked Wheat and Lentils for Grown-Ups image

2 tablespoons vegetable oil
1 tablespoon butter
1 teaspoon each ground ginger and minced garlic
1/2 teaspoon each turmeric, paprika, ground coriander and cinnamon
1 teaspoon ground cumin
3/4 cup each of cracked wheat and red lentils
3 cups water
Salt and freshly ground black pepper
4 tomatoes, seeded and chopped
2 jalapeno pepper, seeded and minced, optional
Plain yogurt and 1/4 cup chopped fresh cilantro for garnish

Steps:

  • Heat oil and butter in a large sauce pan. Add ginger, garlic, turmeric, paprika, coriander, cinnamon and cumin and saute for a couple of minutes. Add cracked wheat and lentils and saute for 2 to 3 minutes to coat with oil. Add water, salt and pepper. Bring to a boil and cover; cook for 20 to 30 minutes or until wheat and lentils are tender (if water is evaporating too quickly, add more). Adjust seasoning. Transfer mixture to a serving bowl and garnish with tomatoes, and jalapenos. Center some yogurt in middle of the dish and garnish with cilantro.

6 cups water
2 cups lentils, rinsed, drained
1 tablespoon chopped fresh ginger
1 teaspoon salt
3 tablespoons vegetable oil
2 cups finely chopped onions
1 teaspoon chili powder
Pinch of ground cloves
Curry powder
1/3 cup chopped fresh cilantro

Steps:

  • Bring first 4 ingredients and 1 tablespoon oil to boil in large saucepan. Reduce heat to medium; simmer uncovered until lentils are tender, about 35 minutes. Meanwhile, heat remaining 2 tablespoons oil in heavy medium skillet over medium heat. Add onions and sauté until brown, about 18 minutes. Mix in chili powder and cloves; stir 1 minute.
  • Stir onion mixture into lentils. Season with pepper. Transfer to bowl. Sprinkle with curry powder, then cilantro.

2 cans (one 20 ounces, one 8 ounces) pineapple chunks
1-1/4 cups sugar
1/2 cup cider vinegar
1 cinnamon stick (3 inches)
6 to 8 whole cloves
Dash salt

Steps:

  • Drain pineapple, reserving 1 cup juice. In a saucepan, combine the sugar, vinegar, cinnamon, cloves, salt and reserved pineapple juice. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Discard cinnamon and cloves. Add pineapple. Return to a boil; cook and stir for 2-3 minutes. Serve warm with a slotted spoon.
