Rich, moist and cinnamony, this old-fashioned cake recipe was handed down from our beloved Grandma Kelly. It's a perfect way to use up a few carrots and an apple...and it's ideal for smaller families, since it yields fewer servings.

2 large eggs
1/2 cup canola oil
1/2 cup sugar
1/2 cup packed brown sugar
1 cup all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups finely shredded carrots
1 cup shredded peeled apple
CREAM CHEESE FROSTING:
3 ounces cream cheese, softened
1 tablespoon butter, softened
1 teaspoon lemon juice
1/4 teaspoon vanilla extract
1-1/4 cups confectioners' sugar

Steps:

  • In a large bowl, beat the eggs, oil and sugars until smooth. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to egg mixture just until combined. Stir in carrots and apple., Spoon into a greased 9-in. square baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a small bowl, combine the frosting ingredients; beat until smooth. Spread over cake. Store in the refrigerator.

3/4 cup finely shredded carrots (2 medium)
1 cup flaked coconut
1 box Betty Crocker™ Super Moist™ yellow cake mix
2/3 cup vegetable oil
1/3 cup water
2 teaspoons ground cinnamon
1 teaspoon ground allspice
4 eggs
1 can (11 oz) mandarin orange segments, undrained
1 package (8 oz) cream cheese, softened
1 container Betty Crocker™ Rich & Creamy vanilla frosting
1/2 cup finely chopped pecans, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • In medium bowl, stir carrots and coconut with 3 tablespoons of the dry cake mix. In large bowl, beat remaining cake mix, the oil, water, cinnamon, allspice, eggs and oranges with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in carrots and coconut. Pour into pan.
  • Bake 41 to 46 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In large bowl, beat cream cheese on medium speed until smooth and creamy. Stir in frosting until well mixed. Spread frosting over cake. Sprinkle with pecans (or top with additional mandarin orange segments just before serving). Refrigerate 30 minutes before serving. Store covered in refrigerator.

You can use more orange juice instead of the orange liqueur if you prefer. The soaking time of the apricots is not included in the recipe timing.

1 medium orange
3/4 cup finely chopped dried apricot
1 1/2 cups plain flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1 teaspoon baking soda
1 cup brown sugar
1 cup grated carrot
3/4 cup chopped pecans
3 large eggs
1/2 cup sunflower oil (or canola)
2 tablespoons Grand Marnier
7 ounces cream cheese
1/3 cup confectioners' sugar
5 -6 pecan halves, to decorate (optional)

Steps:

  • Zest the orange, cover and set aside for the frosting.
  • Juice the orange, add the chopped apricots and mix with the orange juice, leave to soak for at least 3 hours.
  • When ready to make the cake, preheat the oven to 300F and line the base of a 2lb loaf tin with parchment paper.
  • Sift the flour together with the cinnamon, ginger, allspice, cloves and the baking soda into a mixing bowl.
  • Add the brown sugar, chopped pecans, carrots and the apricots with the juice, (reserve 2 tablespoons of the orange juice), mix well.
  • Beat together the eggs with the oil, add to the mix and mix again.
  • Spoon into the prepared loaf tin and bake for 50-60 minutes.
  • Test with a wooden skewer whether the cake is done, (it should come out clean and dry), otherwise cook a bit longer.
  • Turn the cake out of the tin and let it cool until slightly warm.
  • Mix the two tablespoons of Grand Marnier and the two tablespoons of the reserved orange juice, return the cake to the tin, poke holes in the top and drizzle the liquid over to soak up the juices.
  • Beat together the cream cheese, confectioners sugar and the orange zest, taste if you find it sweet enough, if not, add more sugar.
  • Take the cake out of the tin, remove parchment paper and spread the frosting on the top.
  • Decorate with the halved pecans.

1 tablespoon cinnamon
1 teaspoon baking soda
1 pinch salt
3/4 cup vegetable oil

1/2 cup dark brown sugar, packed

1 cup grated apple
6 ounces cream cheese, softened
3 tablespoons unsalted butter, softened (no substitutes)
2 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 350*F and grease and flour a 9x9 inch baking pan.
  • Mix together flour, cinnamon, baking soda and salt in a large bowl.
  • In another bowl, whisk together oil, sugars and eggs until well combined.
  • Gradually stir dry ingredients into wet ingredients, until thoroughly mixed.
  • Stir in grated carrots and apples until just combined and pour into baking pan.
  • Bake for 30-35 minutes or until tests done in the center with a butter knife.
  • Cool for 5 minutes then take out of pan to cool completely on a wire rack.
  • For frosting, mix cream cheese and butter in a large bowl with a wooden spoon.
  • Stir in lemon juice and vanilla then gradually start adding the confectioners' sugar until blended.
  • Beat with an electric mixer to get frosting smooth, then frost top and sides of cooled cake.
  • Cut into squares and serve, garnish with walnut halves and grated lemon peel, if desired.

Steps:

  • Preheat oven to 350 degrees. Oil and flour an 8 inch cake pan.
  • In your mixing bowl cream butter and sugar until fluffy. Add egg and mix until well combined. Stir in orange spiced apple butter.
  • In a separate bowl combine flour, salt, baking soda, and spices. Stir until combined.
  • Add dry mixture to butter and sugar mixture. Mix until combined. Stir in raisins, carrot, pecans, and pineapple.
  • Pour into prepared baking sheet and bake until done about 25 minutes.
