1 large egg white
1 pound pecan halves
Sugar substitute equivalent to 1/2 cup sugar
3 teaspoons ground cinnamon
1/2 teaspoon salt

Steps:

  • In a large bowl, beat egg white until frothy. Add pecans; stir gently to coat. Combine the sugar substitute, cinnamon and salt; add to nut mixture and stir gently to coat., Spread into a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 325° for 20 minutes or until lightly browned, stirring once. Cool completely. Store in an airtight container.

1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1 large egg white
1 cup salted cashews
1 cup pecan halves
1 cup dry roasted peanuts
1/2 cup dried cranberries

Steps:

  • In a small bowl, combine the brown sugar, cinnamon and cayenne; set aside. In a large bowl, whisk egg white; add nuts and cranberries. Sprinkle with sugar mixture and toss to coat. Spread in a single layer on a greased baking sheet. , Bake at 300° until golden brown, 18-20 minutes, stirring once. Cool. Store in an airtight container.

I found a fabulous sweet spicy nut recipe here on Food.com that used sugar. Since I'm a low-carb gal I altered that recipe slightly, replacing the sugar with Swerve, which is a granular Erythritol. You could also use the Truvia granular. I guess you could use Splenda granular but they would have a funny after-taste. Also feel free to use whatever nuts you love. This is just what I love. These sweetly spiced nuts are soooo yummy!!! They look & taste just like the sugary version.

1 egg white
2 cups walnuts
1 cup macadamia nuts
1 cup pecans
3/4 cup erythritol, I used Swerve brand
1 teaspoon kosher salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 250 degrees.
  • Spray a sheet pan with non-stick spray.
  • Beat egg white in a large bowl until very frothy. Add all nuts and toss until the egg white is evenly distributed.
  • In a separate bowl, mix the remaining ingredients.
  • Pour the spice mix onto the nut mix and toss with a large spoon until the nuts are evenly coated. Pour nuts onto the sheet pan & shake to evenly distribute.
  • Bake at 250 degrees for 45 minutes, stirring every 15 minutes. Allow to cool on sheet pan & enjoy!

Saw a simple recipe that called for sugar, I switched over to using the sugar substitute and got this simple and pleasing result.

2 tablespoons water
1 1/2 cups raw nuts
6 (1 g) packets Splenda sugar substitute (whichever you prefer) or 6 (1 g) packets Equal sugar substitute (whichever you prefer)

Steps:

  • Bring the water and sugar substitute to a boil over a medium heat.
  • When the sugar substitute is dissolved, add the nuts and stir.
  • After two minutes of stirring, turn off heat and continue to stir.
  • After candy coating has set on the nuts, put on a plate to cool.

1/2 cup sugar-free syrup (caramel or vanilla)
2 tablespoons sesame oil (or olive oil)
1 lb nuts, of choice
2 teaspoons Splenda sugar substitute
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon

Steps:

  • Heat oil and sugar free syrup in a large skillet; stir while it heats.
  • Add nuts; cook over low heat stirring constantly until most of the liquid is absorbed.
  • Mix Splenda and spices together; sprinkle over nuts stir coating evenly.
  • Spread mixture into a release foil lined cookie sheet pan.
  • Bake at 300°F oven for 25 to 40 minutes time depends on type of nuts used--just be careful not to burn them.
  • Cool completely before indulging; store in covered container.

1 cup walnuts
1 cup pecans
1 cup almonds
1 cup cashews
1 cup pistachios
1 tablespoon fennel seed
1 teaspoon crushed red pepper flakes, optional
2 tablespoons garlic powder
6 tablespoons unsalted butter
2 tablespoons chopped fresh rosemary
2 teaspoons maple syrup
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the walnuts, pecans, almonds, cashews and pistachios on a rimmed baking sheet and spread out into an even layer.
  • In a spice grinder, food processor or high-speed blender, combine the fennel seed, red pepper flakes if using (omit if you don't like spicy) and garlic powder. Pulse several times until a fine powder forms. Place in a small bowl and set aside.
  • Place a medium skillet over a medium-low heat and add the butter and rosemary. Cook until the butter melts. Remove from the heat.
  • Drizzle the melted butter mixture and maple syrup over the nuts. Toss to coat. Sprinkle the spice mixture over the nuts. Sprinkle with salt and pepper. Toss again to coat.
  • Bake, tossing the nuts every 5 minutes to make sure they toast evenly, until toasted and fragrant, about 20 minutes.
  • Taste the nuts and add more kosher salt if necessary. Allow to cool completely. Store the nuts in airtight containers in a cool dark place for up to 2 weeks. Enjoy!

4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.
