11.5 ounce thawed frozen purple grape juice concentrate
1/2 cup water
2 teaspoon vanilla
1 cup seltzer
2 to 4 tablespoons flavored syrup

Steps:

  • Combine one 11.5-ounce can thawed frozen purple grape juice concentrate, 1/2 cup water and 1 teaspoon vanilla in a medium skillet; cook over medium-high heat until syrupy, about 10 minutes. Stir in 1 more teaspoon vanilla; let cool. Add seltzer.
  • For each drink, combine 2 to 4 tablespoons flavored syrup with 1 cup cold seltzer in an ice-filled glass.

1/3 cup fresh cranberries
3 tablespoons fresh lemon juice (from 1 large lemon)
2 tablespoons Rosemary Simple Syrup, recipe follows
One 12-ounce bottle ginger beer, chilled
2 round slices fresh ginger, a slit cut in the side of each
2 small sprigs fresh rosemary
1/2 cup sugar
1 small sprig fresh rosemary

Steps:

  • Muddle the cranberries, lemon juice and Rosemary Simple Syrup in a large glass. Divide between 2 champagne flutes. Top with ginger beer and garnish the rim of each glass with a ginger slice and rosemary sprig.
  • Combine the sugar and 1/2 cup water in a small saucepan and bring to a boil over high heat. Cook, stirring, until the sugar is fully dissolved, about 1 minute. Remove from the heat and add the rosemary. Let steep until the simple syrup is cooled to room temperature, about 15 minutes. Remove the rosemary. The simple syrup will keep in the refrigerator for up to 1 week.

1/2 cup each white wine vinegar and rum*
2 tablespoons lime juice
1 cup sugar
2 tablespoons ginger root, julienne
1 teaspoon lime peel, grated
1 cinnamon stick (about 3-inches)
3 whole cloves
1/4 teaspoon salt
2 cups California seedless grapes
1 mango, peeled and cut into 1-inch cubes
1 papaya, peeled, seeded and cut into 1-inch cubes
1 cup fresh or canned pineapple chunks
* Optional, rum may be substituted with 1/2 cup water and 1-1/2 to 2 teaspoons rum extract

Steps:

  • Combine vinegar, rum, lime juice, sugar, ginger, lime peel, cinnamon, cloves and salt in small saucepan; mix well. Bring mixture to boil then pour boiling mixture over grapes in medium bowl. Let mixture cool at room temperature. Add remaining fruit and refrigerate at least 1 hour or until thoroughly chilled. Remove cinnamon stick and cloves then spoon into individual glass bowls.

  • Bring 1 cup water, 3/4 cup each white cranberry juice and white grape juice, 1/2 cup pear juice, 1/4 cup sugar, 1 teaspoon lemon juice and 1/4 teaspoon apple pie spice to a boil, then simmer, reducing to 3/4 cup, about 1 hour. Let cool. Stir about 3 tablespoons syrup into a glass and add about 8 ounces of seltzer, stirring until combined.
