CUBAN-SPICED CHICKEN THIGHS WITH CHORIZO AND RICE
Steps:
- Whisk first 11 ingredients in medium bowl for marinade. Place chicken in large resealable plastic bag; add marinade. Seal bag; turn several times to coat chicken. Refrigerate chicken at least 4 hours and up to 1 day, turning bag occasionally. Using tongs, transfer chicken from bag to plate, allowing excess marinade to drip back into bag. Reserve marinade.
- Heat 1 tablespoon oil in heavy large wide pot over medium heat. Add chorizo and sauté until beginning to brown and fat begins to render, about 3 minutes. Using slotted spoon, transfer chorizo to medium bowl. Increase heat to medium-high. Add half of chicken, skin side down, to pot. Sauté until brown, about 5 minutes per side. Transfer to plate. Repeat with remaining chicken.
- Pour off all but 3 tablespoons fat from pot; discard excess fat. Add chopped onions; sauté 4 minutes, scraping up any browned bits. Add chopped bell pepper and chopped garlic. Sauté until onions are translucent, about 2 minutes. Mix in rice, stirring to blend with vegetables. Add 2 1/2 cups broth, tomatoes with any juice, paprika, saffron, and reserved marinade. Bring to boil, stirring to blend. Return chicken, chorizo, and any accumulated juices to pot, pressing chicken partially into rice.
- Reduce heat to low, cover, and simmer 15 minutes. Arrange piquillo pepper strips over chicken pieces. Cover and continue to simmer until rice is tender and chicken is cooked through, adding more broth by 1/4 cupfuls if rice is dry, about 10 minutes longer. Season to taste with salt and pepper.
- Transfer rice and chicken to large shallow bowl. Garnish with cilantro and lime wedges and serve.

Steps:
- Combine the rice, cinnamon stick, 1 bay leaf, 1/2 teaspoon salt and 1 1/2 cups water in a saucepan over medium-high heat. Bring to a boil and stir. Reduce the heat to low, cover and cook until the liquid is absorbed and the rice is tender, about 17 minutes. Remove from the heat and set aside, covered.
- Meanwhile, season the chicken with salt and the paprika. Heat a large skillet over medium-high heat. Add the vegetable oil and heat until shimmering. Add the chicken and cook, undisturbed, until well browned, 4 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Remove to a plate.
- Add the shallot to the skillet; cook, stirring, 30 seconds. Stir in the figs, then add the vinegar and remaining 2 bay leaves. Cook, scraping up any browned bits, until the liquid is mostly reduced, 1 minute. Return the chicken to the skillet along with any juices from the plate; add the broth. Bring to a boil, then reduce the heat, cover and simmer until the chicken is cooked through and the liquid is reduced but still saucy, 10 to 12 minutes; season with salt.
- Fluff the rice, discarding the cinnamon stick and bay leaf, and divide among plates. Top with the chicken, figs and sauce and sprinkle with the parsley.

SLOW COOKER MOROCCAN-SPICED CHICKEN THIGHS WITH COUSCOUS

- Mix the cumin, corriander, cinnamon, and 1 t each salt and pepper in a 4-6 quart slow cooker. Add the chicken and toss to coat in the spice mixture. Add the tomatoes, carrots, and olives.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender. Shred the meat and return it to the liquid with the vegetables.
- Tem minues before serving, prepare the couscous according to the package directions.
- Serve the ckicken and vegetables over the couscous, topped with the cilantro (or not).
SPICED CHICKEN THIGHS WITH YOGURT SAUCE
I pulled this from the June '07 Cooking light. The directions as printed were somewhat lacking in information and suggested doing things in a bizarre order, so I've done some streamlining and recasting to make it more usable. It's quite simple despite the number of steps I've included for clarification. The only hot spices in this are the ground ginger and red pepper and as written make for a decently spicy dish. So if you prefer milder dishes I would suggest cutting back on the red pepper first and then the ginger.

- Combine 1/4 teaspoon salt, chopped cilantro, garlic, and yogurt in a bowl. Stir well and set aside.
- Combine the remaining 1/4 tsp salt, cumin, corianger, turmeric, ginger, and red pepper in a bowl. Stir well to combine.
- rub spice mixture into both sides of each chicken thigh.
- Heat a large heave skillet over medium heat. (If you have an exhaust hood, turn it on, otherwise crack a window since the next step will create a little smoke if you have to do it in mulitple batches.).
- Coat skillet with cooking spray. Add chicken to skillet, smooth side down, and in a single layer (do multiple batches if neccessary). Cook 5 minutes without moving the chicken pieces. (it is important not to move them so that they will form a tasty crust.).
- Flip the chicken and cook another 4 to 6 minutes or until cooked through.
- Serve with yogurt sauce.

Steps:
- Combine spices and salt in a dish, then rub over chicken thighs; let stand about 5 minutes.
- Heat oil in a skillet over medium; add chicken, skin side down, and saute until browned on both sides, 10 minutes total. Remove chicken and pour off all but 1 T drippings.
- Add onion and saute 3 minutes.
- Stir in ginger, garlic, pepper flakes and cinnamon stick; cook just until fragrant, about 1 minute.
- Deglaze with wine and tomato paste, stirring to combine. Simmer until liquid evaporates.
- Add tomatoes, broth, chickpeas, olives, honey, lemon and bay leaf; stir to combine.
- Arrange reserved chicken on top cover, and reduce heat to medium-low. Simmer until chicken is cooked through and sauce is reduced, 20-25 minutes.
- Finish with parsley and salt just before serving.
- Serve with pita bread.

- In small bowl, mix cumin, thyme, paprika, and salt. Rub mixture over chicken.
- Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add chicken; cook 2 minutes. Turn chicken over; stir in tomatoes. Heat to boiling; reduces heat. Cover; simmer 10 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165F). Uncover; cook 1 minute longer or until liquid is reduced by half.
