CINNAMON CANDIED APPLES

Cinnamon Candied Apples image

For years, we enjoyed candied apples at Christmas when my great-grandmother made them. When she passed away, no one could find the recipe. I eventually came across this stovetop version and have continued her tradition. -Angie Marquart, Mt. Gilead, Ohio

SPICED APPLE RINGS

Spiced Apple Rings image

Nostalgic for some tasty, old-fashioned treats? Start with spiced, candied apple rings.

Provided by Renee Pottle

Categories     Canning

Time 40m

Yield 5 pints

Number Of Ingredients 10

5 pounds of 2 ½ inch diameter apples
8 cups of water and 2 Tbsp of vinegar
4 ½ cups of sugar
2 ¼ cups water
⅓ cup red hot cinnamon candies
½ cup cider vinegar
1 lemon, sliced
1 Tbsp whole cloves
1 Tbsp whole allspice berries
½ Tbsp ground mace

Steps:

  • Peel and core the apples. Slice into ½ inch rings. Add apple rings to a large pot filled with the 8 cups of water and 2 Tbsp vinegar to prevent the apples from browning.
  • In another large pot combine the remaining ingredients.
  • Bring to a boil over medium heat. Be sure to stir almost constantly so the sugar doesn't burn. Reduce heat and let simmer 3-5 minutes (the candy should be dissolved by this point).
  • Drain the apple rings and add to the syrup. Gently stir the apple rings into the syrup and simmer for 5 minutes.
  • Fill 4-5 clean, hot, pint canning jars with the apple rings. Remove the lemon slices from the syrup.
  • Pour the syrup over the rings leaving ½ inch headspace. Wipe the jar lips with a moist paper towel, add lids, and process in a water bath canner for 10 minutes.

POMEGRANATE-ORANGE GELATIN "GUMMIES", SCD FRIENDLY

Pomegranate-Orange Gelatin

These are tasty & packed with anti-inflammatory goodness! My thanks to those who shared their "paleo gummy" recipes, who gave inspiration for my versions. This one in particular, my kiddo with IBD who is on the Specific Carbohydrate Diet for medical reasons, enjoys everyday, knowing that not only are they delicious,...

Categories     Candies

Time 15m

Number Of Ingredients 4

1 c lakewood organic pomegranate juice
2 Tbsp honey
1 tsp frontier coop orange flavoring
4 Tbsp unflavored gelatin, (1 oz box, or four 1/4 oz. envelopes)

Steps:

  • 1. Feel free to double the ingredients for a larger batch. Warm the juice till steaming. Whisk in the honey & orange flavoring & remove from heat.
  • 2. Slowly whisk in the gelatin, making sure it has all dissolved before adding the next spoonful. If it has trouble fully dissolving, you may add low heat, but be careful not to get too hot or it will foam up & boil over very quickly. Mainly you just need patience & to keep whisking until it has all dissolved.
  • 3. Once all the gelatin has dissolved, you can pipe into gummy molds in various cute shapes. Small mold shapes will set within minutes in the fridge or freezer. Bigger shapes may take about 15 minutes. Alternatively, you can pour into a wide shallow container, and then cut into bite sized pieces after it has cooled. These keep best stored in the fridge, but most people like the texture best if allowed to warm up to room temperature before eating. These also freeze & then defrost pretty well, but that's not usually needed as they keep well and get eaten up.
  • 4. Feel free to experiment with your own juice & flavor combinations. See my recipe for spiced-apple version here: https://www.justapinch.com/recipes/dessert/other-dessert/spiced-apple-gummies-scd-scope-prep-okay.html?new=1
