125g butter, softened
100g caster sugar
50g brown sugar
2 eggs
200g self-raising flour
1 tsp baking powder
150g apples, peeled, cored and grated (prepared weight)
2 tsp mixed spice
1 tsp ground ginger
200g butter, softened
400g icing sugar
1 tsp vanilla bean paste
green and brown fondant
2 tbsp icing sugar for dusting
red and green sanding sugar (find online or in specialist shops)
12 paper cupcake cases, 6 red and 6 green

Steps:

  • First, make the decorations. Roll out the green fondant on a surface dusted with the sugar to a ½cm thickness. Cut out 12 small 'leaves' using a cutter or knife. Set aside on some baking parchment. Roll the brown fondant into 12 x 1cm 'stalks'. Set aside with the leaves.
  • Heat the oven to 180C/160C fan/gas 4. Line six holes of a 12-hole cupcake tin with red cases, and the other six with green. For the cake batter, beat the butter and both sugars with an electric whisk until light and fluffy. Slowly mix in the eggs, then fold in the flour, baking powder, grated apple and spices until fully incorporated.
  • Fill the cases three-quarters full and bake for 30-35 mins, or until golden and a skewer inserted into the middle comes out clean. Leave to cool completely in the tin. Meanwhile, make the icing. Beat the butter until light and creamy, then add the sugar and vanilla, and beat for 5 mins more until fluffy and pale.
  • Spoon the icing into a piping bag fitted with a large round nozzle. Working from the outside towards the centre, pipe the icing in a swirl over the cupcakes, applying a good amount of pressure to the bag. Use a small palette knife to smooth the icing into neat domes, then chill the cupcakes for 30 mins to firm up.
  • Tip the red and green sanding sugars into separate bowls. Dip the tops of the cupcakes with the red cases into the red sugar, and those with green cases into the green sugar, turning to fully coat the icing.
  • Make little indentations in the top of the icing for the fondant stalks, and add the leaves around them.

1 1/2 cups Original Bisquick™ mix
1/2 cup sugar
1 teaspoon apple pie spice
1/2 cup apple cider or juice
2 tablespoons butter or shortening, softened
1 teaspoon vanilla
1 egg
1 1/4 cups chopped peeled apple (about 1 medium)
3/4 cup Betty Crocker™ Rich & Creamy Vanilla frosting (from 1 lb-container)
1/4 cup caramel topping
1/4 teaspoon kosher (coarse) salt

Steps:

  • Heat oven to 375°F. Place Reynolds Baking Cup in each of 12 regular-size muffin cups
  • In large bowl, beat all cupcake ingredients except apple with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Fold in apple. Fill muffin cups about three-fourths full.
  • Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Immediately remove cupcakes from pan to cooling rack; cool completely.
  • In small bowl, mix frosting and caramel topping until smooth and spreadable. Frost cupcakes. Sprinkle with kosher salt.

3 cups all-purpose flour
1 cup granulated sugar
1 cup brown sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1/4 teaspoon ginger, ground
1/8 teaspoon clove, ground
3 eggs, beaten
3/4 cup vegetable oil
3/4 cup milk
2 teaspoons vanilla
3 cups apples, peeled, finely chopped (McIntosh, Granny Smith, Cortland, Northern Spy or any other tart, firm apple)
1 cup butter, salted
2 cups brown sugar
2/3 cup heavy cream
1 teaspoon vanilla
1/2 teaspoon salt
3 1/2-4 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees. Prepare muffin pans with cupcake liners.
  • In large bowl, combine flour, sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, ginger and cloves.
  • In a medium bowl, whisk eggs. Then whisk in oil, milk and vanilla.
  • Add wet ingredients to dry ingredients and beat at medium speed until combined.
  • Fold in chopped apples.
  • Fill cupcake liners 2/3 full with batter.
  • Bake for 18-19 minutes, until a toothpick inserted into the center comes out clean or cakes bounce back when pressed lightly.
  • Allow cupcakes to cool completely.
  • Meanwhile, prepare your caramel buttercream.
  • In saucepan over medium heat, melt butter. With a wooden spoon, stir in brown sugar and continue to stir until dissolved. Then stir in heavy cream, vanilla and salt. Once mixture reaches a slow, rolling boil, cook for 5-7 minutes or until mixture begins to thicken to a syrupy consistency. Remove from heat and set aside to cool. Once cooled to a manageable temperature, transfer to a mixing bowl.
  • With an electric mixer, gradually beat in confectioner's sugar until mixture is smooth and velvety. If necessary, use a little more or less to reach the desired consistency.
  • Frost cupcakes using your desired method. I prefer to pipe it in a thick swirl, using a wide round tip or spreading with a flat spatula.

I came up with the combination of cinnamon and cayenne. I was making cinnamon toast one day and accidentally sprinkled cayenne pepper on my toast instead of cinnamon! I decided to just add cinnamon to the cayenne and I loved it. I am constantly making cupcakes and thought I would try my new found combination in cupcakes. 1 medium apple, peeled and finely chopped
1/2 teaspoon ground coriander
1/2 cup butter, softened
3/4 cup packed brown sugar

4 eggs
1 cup unsweetened applesauce
2 cups all-purpose flour

1/2 teaspoon salt

  • In a small skillet, saute apple and coriander until tender. Remove from the heat and set aside., In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in applesauce (mixture will appear curdled). Combine the flour, baking soda, salt, cinnamon, nutmeg, allspice and cayenne; gradually add to the creamed mixture until combined. Fold in apple mixture. Fill paper-lined muffin cups two-thirds full. , Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a small bowl, beat cream cheese and butter until light and fluffy. Add confectioners' sugar and maple syrup; beat until smooth. Pipe frosting onto cupcakes. Sprinkle with allspice. Store in the refrigerator.

1 cup apple preserves
1/2 cup granulated sugar
1/2 cup firmly packed dark brown sugar
1/2 cup canola oil
2 eggs
7 ounces pure white chocolate, finely chopped
6 ounces cream cheese, at room temperature, cut into tablespoon-size pieces
6 tablespoons unsalted butter, at room temperature, cut into tablespoon-size pieces

Steps:

  • Preheat an oven to 350 degrees.
  • Line muffin tins with cupcake papers.
  • In a bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt.
  • Toss the apple with the flour mixture. (This will help prevent them from sinking to the bottom of the muffin tins.)
  • In a large bowl, whisk together the apple preserves, granulated sugar, brown sugar and oil.
  • Add the eggs one at a time, whisking after each addition.
  • Add the flour mixture in three additions, stirring with a large wooden spoon until just combined.

  • Bake until the cupcakes are golden and a toothpick inserted into the center comes out clean, 20 to 25 minutes for regular sized muffins, less for mini.
  • Transfer the tins to a wire rack and let cool for 10 minutes, then remove the cupcakes from the tins and let cool completely.
  • Meanwhile, in a double boiler, melt the white chocolate, stirring constantly, until smooth and creamy, 2 to 3 minutes.
  • Let stand until just warm to the touch.
  • In a large bowl, using an electric mixer, beat the cream cheese and butter on medium-high speed until smooth and blended.
  • Add the melted chocolate and beat again until smooth.
