HONEY & SPICE ROASTED ALMONDS
Seasoned nut mixes can be expensive to buy. So I buy unblanched almonds to toast and season at home. The sweet honey and spicy cayenne pepper come together beautifully.-Patty Getzin, Wenatchee, Washington

- Arrange almonds in a single layer in an ungreased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 10-15 minutes or until golden brown, stirring once., In a small bowl, combine 1/4 cup sugar, salt and cayenne; set aside. In a large skillet, heat oil over medium heat. Add roasted almonds and honey; cook and stir for 2 minutes. Sprinkle with remaining sugar; cook 1 minute longer or until sugar is dissolved. Remove from the heat; add reserved sugar mixture and toss to coat., Immediately spread onto waxed paper; cool completely. Break into pieces. Store in an airtight container.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, toss the almonds with the olive oil.
- Spread almonds out on a sheet pan in a single layer. (Keep the mixing bowl handy - you will need it again.)
- While oven heats, mix the spices, salt, and sugar in a small bowl; set aside.
- Bake almonds for 10 minutes.
- Remove pan from oven and carefully pour the hot almonds back into the mixing bowl.
- Sprinkle spices over the nuts and toss well with a spoon.
- Pour the seasoned almonds back onto the sheet pan and return to the oven for 5 minutes.
- Remove from oven and let nuts cool completely on pan.
- Store cooled nuts in a covered container.
FIVE-SPICE ROASTED CARROTS WITH TOASTED ALMONDS

- Arrange one oven rack at the top and one at the bottom of the oven. Place a baking sheet on the bottom rack and heat the oven to 425 degrees.
- In large bowl, stir together 2 tablespoons olive oil with the five-spice powder, garlic and 1 teaspoon salt. Add the carrots and toss to coat. Transfer carrots to the hot baking sheet and arrange in an even layer and roast, on the bottom rack, until the carrots are tender and browned all over, 20 to 25 minutes, flipping halfway through.
- While carrots are roasting, toast almonds on a separate baking sheet, on the top rack, until golden brown, 7 to 8 minutes. Allow to cool, then finely chop and transfer to a large bowl or serving platter. Add the chives, vinegar, ginger and remaining olive oil to the almonds, and season with salt. Add roasted carrots and toss to coat. Serve hot.
SPICE ROASTED ALMONDS

- Preheat oven to 350 degrees. In a medium bowl, combine chili powder, olive oil, kosher salt, cumin, coriander, cinnamon, and pepper; add almonds and toss to coat. Transfer mixture to a 13 x 9 x 2-inch baking pan. Bake about 10 minutes or until almonds are toasted, stirring twice. Cool almonds completely before serving. Store in an airtight container for up to 5 days.
