This recipe is an old-time favorite that was given to me by my mother-in-law. She told me the cake shouldn't be eaten the day it's baked...aging makes it so much better. She once entered this cake in a contest and won first prize!

2 cups raisins
1-1/2 cups water
1/2 cup shortening
2 cups packed brown sugar
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon baking soda
3 large eggs, beaten
Confectioners' sugar

Steps:

  • In a saucepan, combine raisins and water. Cook until plump. Drain and set aside raisins, reserving 10 tablespoons cooking liquid. , In a bowl, cream shortening and sugar. Combine flour, cinnamon, cloves nutmeg and salt; set aside. Combine milk, soda, eggs and reserved cooking liquid. Add dry ingredients alternately with milk mixture to creamed mixture. Stir in cooked raisins. Pour into a greased 13x9-in. baking pan. , Bake at 350° for 35-40 minutes or until a toothpick comes out clean. Cool on a wire rack. Just before serving, sprinkle with confectioners' sugar.

1 cup boiling water
1/2 cup butter, softened

Steps:

  • Place raisins in a small bowl; cover with boiling water. Let stand for 5 minutes; drain and set aside. , In a large bowl, cream the butter, shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine the flour, cinnamon, baking powder, salt, nutmeg, baking soda and ginger; add to creamed mixture just until blended. Stir in walnuts and raisins. , Pour into a greased 11x7-in. baking dish. Long-standing family favorite. I prefer mine made with chopped dates. Food processor makes it so easy. Adapted from The Pleasures of Your Food Processor by Norene Gilletz.

2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon allspice
1 cup walnuts
2 medium zucchini (2 c. grated)
3 eggs
1 1/2 cups brown sugar (packed)
1 cup oil
1 teaspoon vanilla
1 cup golden raisin (or chopped dates)

Steps:

  • Best if prepared with food processor:.Process dry ingredients about 10 seconds to blend. Empty into a large mixing bowl. Process nuts until chopped, about 6 seconds. Empty into a small bowl.
  • Using grater: Grate unpeeled zucchini, using medium pressure. Empty into a measuring cup and measure loosely packed.
  • Steel knife: process eggs with sugar for 1 minute. Do not insert pusher in feed tube. While machine running, Add oil and vanilla through tube. Process about 45 seconds. Add zucchini and process 8-10 seconds. Remove cover and add dry ingredients. SEE NOTE. Process 3 or 4 quick bursts, just until flour disappears. Sprinkle nuts and raisins over batter . Give 1 0r 2 more quick bursts.
  • Pour batter into greased and floured 9" by 13" baking pan, or 12-cup Bundt pan. Bake at 350 degrees for 55 to 60 minutes, or until cake tests done. Cool 15 minutes before removing from pan. Can be iced or glazed when cool, but it's great just plain. Keeps very well in fridge and freezes well.
  • NOTE: This amount of batter will nearly completely FILL the bowl of standard sized food processors, but probably not overflow. You can add zucchini mixture to dry ingredients in mixing bowl, Mix with wooden spoon until blended then add nuts and raisins, or dates.

1 cup all-purpose flour
2 cups wheat flour (or use 3 cups of All Purpose)
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 1/2 cups sugar
2 large eggs
1/2 cup molasses or 1/2 cup dark corn syrup
1 cup applesauce
1/2 cup raisins (soak in Orange juice)
1 1/2 cups diced fuji apples
1/2 cup orange juice
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375* next Grease and flour a Bundt pan.
  • Except for the Sugar, Sift Dry Ingredients together into a large mixing bowl. Add Sugar, beaten Eggs, Applesauce, Molasses, Orange juice, Raisins, Apples and Nuts. Batter should be thick.
  • Pour Batter into the bundt pan and Bake for 45 minutes or until toothpick inserted comes out clean.
  • Let cake cool, remove from pan and sprinkle with powdered sugar or make a glaze.

3 c flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice, ground
2 stick butter, softened
1 c brown sugar
1 c sugar
1 egg
2 c applesauce
1 c chopped nuts (i used pecans, toasted if desired)
1 c raisins
RUM GLAZE
2 Tbsp butter
1 c powdered sugar
1/2 tsp rum flavoring
3-4 tsp milk

Steps:

  • 1. Heat oven to 350. Grease and flour (or spray) bundt pan generously.
  • 2. Combine flour, soda, cinnamon, and allspice. Set aside.
  • 3. In large bowl, mix together butter, brown sugar and sugar until creamy. Beat in egg. Add applesauce and mix until just combined. Add flour mixture one cup at a time until fully incorporated. Stir in raisins and nuts by hand.
  • 4. Spoon into bundt pan. Cook 60-70 minutes until wooden skewer inserted comes out clean. Cool in pan for about 10 minutes before removing.
  • 5. To make glaze, melt butter in microwave. Add all remaining ingredients, mixing well until smooth. Let cool slightly before spooning over cooled cake.

  • Let mixture cool 1/2 hour.

  • In large bowl, with electric mixer at medium speed, beat 3/4 cup butter until creamy.

  • Beat after each addition; scrape side of bowl with rubber spatula.

  • Bake 25 to 30 minutes, or until top springs back when lightly pressed with fingertip and cake pulls away from edge.
  • Cool on wire rack 5 minutes.
  • With small spatula, loosen edge.
  • Turn out on wire rack; turn top up; let cool completely—about 1 hour.
  • MAKE FROSTING: In large bowl, with electric mixer at medium speed, beat cheese with butter and vanilla until creamy.
  • Add the confectioners; sugar; beat until light and fluffy.
  • Using 1 1/2 cups frosting, put layers together.
  • Use rest of frosting to cover top and side of cake.
  • With metal spatula, make decorative swirls in frosting; coarsely chop remaining walnuts; sprinkle around top.
  • Refrigerate until serving.

This is an incredibly moist dense cake that just reminds you that fall is on the way. I had a box of spice cake mix and a can of pumpkin, we needed a cake for dinner one night and this was born. Its pretty basic but the flavors are nice and you can adjust the spices according to your own tastes. We like ours spicy so I always add more :) I hope you like it.

1 (18 1/4 ounce) box spice cake mix, I use Duncan Hines
1 (3 1/2 ounce) box instant vanilla pudding
1 (15 ounce) can pumpkin puree, I use Libby's
1 cup water
1/4 cup canola oil
1/2 teaspoon cinnamon (to taste)
1/2 teaspoon allspice (to taste)
1/4-1/2 teaspoon ground cloves (to taste)
1 teaspoon vanilla
1 cup raisins, plumped in warm water
3 eggs
1 (14 ounce) can condensed milk
1/2 cup milk
3/4 cup maple syrup
1 egg yolk

Steps:

  • First put the raisins into the warm water to plump them up. Do this before you start the cake and they should be good in 10 minutes or so. Grease a 10 cup bundt pan really well.
  • For the Cake:.
  • Empty the mix into a large bowl and add the vanilla pudding mix. Then add the pumpkin,3 eggs, water , oil and the vanilla and mix well. Next add your spices altering them to your own tastes. The batter will be very thick.
  • Drain the raisins and fold them into your batter. Pour into the prepared bundt pan.
  • Bake at 350 for about 45-50 minutes. Test to check for doneness since all oven are a little different.
  • Cool Completely and drizzle glaze over the cake.
  • For the Glaze:.
  • In a small pot over medium heat add the condensed milk, regular milk, egg yolk and syrup. Mix well and cook until the mixture starts to thicken. Be careful not to burn the bottom of your pan. If it happens, simply strain the glaze into a bowl. Cool completely, and drizzle over cake.

2 egg whites
1 1/3 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp allspice, ground

1/2 c butter, softened
1 c granulated sugar
2 egg yolks
2/3 c milk
1 tsp vanilla
3/4 c raisins
ICING
1/4 c butter, softened
2 c sifted icing sugar
1 Tbsp lemon juice
1-2 Tbsp cream or milk
chopped walnuts

Steps:

  • 1. Beat egg whites to stiff but moist peaks. Combine flour, baking powder, salt and spices in a large mixing bowl. Stir well to blend. Add butter, sugar, egg yolks, milk and vanilla. Beat with electric mixer on medium speed until smooth, about 1 1/2 minutes. Stir in raisins. Fold in stiff egg whites.
  • 2. Spread batter evenly in greased 9 " square cake pan.
  • 3. Bake at 375 degrees F. for 30 - 35 minutes. Cool completely.
  • 4. Icing: Cream butter, half of icing sugar and lemon juice together until light. Gradually add icing sugar and enough cream to make a smooth spreading consistency. Spread over cooled cake. Sprinkle with chopped walnuts, to decorate, if desired.

1/2 cup shortening
1/4 cup molasses
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 3/4 cups flour
1 teaspoon baking soda

Steps:

  • Mix the raisins, brown sugar, water, shortening, molasses and spices in a microwaveable container.
  • Microwave on high for 5-7 minutes until it is boiling.
  • Cool slightly.
  • Mix the flour and baking soda together.
  • Add to the raisin mixture.
  • Pour into a greased 8 inch microwave pan and bake on HIGH 5 minutes or until the centre is done (test with a toothpick).
  • Tastes great with a brown sugar icing.

1 cup plain fat-free yogurt
1/2 cup fat-free margarine, softened
1 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon baking soda
1 cup seedless raisin

Steps:

  • Preheat over to 350°F Lightly grease a 9x9 inch baking pan.
  • In a large bowl, beat margarine until well creamed.
  • Add egg and vanilla and beat until well combined.
  • Stir in yogurt.
  • Sift together flour, nutmeg, cinnamon, cloves and baking soda.
  • Fold into yogurt mixture.
  • Add raisins and mix until just combined.
  • Spoon mixture into prepared pan.
  • Bake 35-45 minutes or until tester inserted in center of cake comes out clean.
  • Cool 5 minutes on rack.
