1 package yellow cake mix (regular size)
1/2 cup quick-cooking oats
2 to 2-1/2 teaspoons pumpkin pie spice
1 can (15 ounces) solid-pack pumpkin
1 large egg, room temperature
2 tablespoons canola oil
FROSTING:
3 cups confectioners' sugar
1 teaspoon grated orange zest
3 to 4 tablespoons orange juice

Steps:

  • Preheat oven to 350°. Combine cake mix, oats and pie spice. In another bowl, beat pumpkin, egg and oil; stir into dry ingredients just until moistened., Drop by 2 tablespoonfuls onto baking sheets coated with cooking spray; flatten with the back of a spoon. Bake until edges are golden brown, 18-20 minutes. Remove to wire racks to cool. , For frosting, combine confectioners' sugar, orange zest and enough orange juice to achieve desired consistency. , Spread over cooled cookies.

1 1/2 cups softened butter
2 cups sugar
2 eggs
1/2 cup molasses
4 cups flour
4 teaspoons baking soda
3 teaspoons pumpkin pie spice
1 teaspoon salt
additional sugar
8 ounces softened cream cheese
1 (18 ounce) can pumpkin pie filling
2 cups powdered sugar
1 teaspoon cinnamon
1/2 teaspoon ground ginger

Steps:

  • In a large mixing bowl cream butter,sugar.
  • Add eggs one at a time, beating well.
  • Add molasses mix well.
  • Combine flour,soda,pumpkin spice and salt.
  • Add to creamed mixture and mix well.
  • Chill overnight.
  • Shape into 1/2 in.
  • balls, roll in sugar.
  • Place on ungreased baking sheet.
  • Bake 375 for 6 minutes or till edges are brown.
  • FOR DIP:Beat cream cheese till smooth,add pumpkin mix beat well,add sugar and spices beat untill smooth.
  • store leftover dip in the refrigerator.
  • Makes 3 cups dip.

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
2-3/4 cups all-purpose flour
2 tablespoons pumpkin pie spice
Cinnamon sugar, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. In another bowl, whisk flour and pie spice; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. If desired, sprinkle with cinnamon sugar., Bake until edges are light brown, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool. Freeze option: Transfer wrapped disks to an airtight container; freeze. To use, thaw dough in refrigerator overnight or until soft enough to roll. Prepare and bake cookies as directed.

1 (8 ounce) package cream cheese, softened
1 1/2 cups packed brown sugar
1/2 cup sugar
2 eggs
1 cup canned pumpkin
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 -1 1/2 teaspoon pumpkin pie spice
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 cups confectioners' sugar
1/4 cup butter, melted
1 teaspoon vanilla extract or 1 teaspoon maple flavoring
2 -3 tablespoons boiling water
2 cups chopped pecans

Steps:

  • 1. In a large bowl, beat cream cheese and sugars until smooth. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla. Combine the dry ingredients; gradually add to pumpkin mixture and mix well.
  • 2. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool.
  • 3. For frosting, in a small bowl, combine the confectioners' sugar, butter, vanilla and enough water to achieve frosting consistency. Frost cookies; sprinkle with pecans.
  • Tip's: I doubled the icing recipe to have enough and had a perfect amount. I also added a little cinnamon to the icing and sprinkled cinnamon sugar on top instead of using nuts.
  • Next time I will add more spices and maybe add some cinnamon or nutmeg to the frosting.
