1 1/2 lbs calf liver or 1 1/2 lbs baby beef liver, cut into 1 inch strips
1/2 teaspoon salt
1 dash cayenne pepper
1/4 cup butter (or bacon drippings)
2 onions, thinly sliced
1 (8 ounce) can sliced mushrooms, undrained
2 cups sour cream
1 teaspoon Worcestershire sauce

Steps:

  • Season liver with salt and cayenne.
  • Preheat frypan.
  • Melt butter and saute onions until tender.
  • Add liver and brown on all sides.
  • Add mushrooms with liquid.
  • Reduce heat, simmer covered for 8 to 10 minutes.
  • Stir in sour cream and continue cooking for an additional 8 to 10 minutes.
  • Stir in Worcestershire sauce.

1/2 cup butter
1 1/2 cups milk
2 onions, sliced
1 1/2 lbs calf liver, sliced
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 (8 ounce) can mushrooms, with liquid
2 cups sour cream
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a casserole dish place liver and cover with milk use more if necessary. Refrigerate 1 hour minimum. Do not skip this step!
  • In a large skillet, melt butter over medium high heat. Cook and stir onions until tender, about 7 minutes.
  • Remove liver from milk. Discard milk. Sprinkle liver slices with salt and pepper, and add to the skillet. Brown liver slices, turning once, for 5 minutes.
  • Pour in mushrooms with their liquid. Reduce heat, cover, and simmer for 8 to 10 minutes.
  • Stir in sour cream and Worcestershire sauce, and continue simmering another 8 to 10 minutes. Serve. Don't forget the creamed potatoes!

3 tablespoons of olive oil
1 large onion, sliced
1 clove garlic, minced
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary leaves
Coarse salt and freshly ground pepper to taste
2 apples, peeled, cored and cut in slices 1-inch thick
2 tablespoons unsalted butter
3/4 pound calf's liver, trimmed of gristle and sliced into 1 1/2-inch strips
1/2 cup white wine

Steps:

  • Heat two tablespoons of olive oil in a large frying pan. Add onion and cook it slowly over low heat, uncovered, with garlic, thyme, rosemary, salt and pepper. The onion should take about 45 minutes to become tender and almost caramelized. Do not let it burn.
  • Meanwhile, saute apples in butter until lightly brown. Set aside and keep warm.
  • Remove the onion from frying pan and keep warm. Add remaining olive oil (a little more if necessary) and saute liver quickly on both sides (about three minutes altogether) in order for it to be pink. Add the wine and over high heat scrape up the cooking juices. Put liver onto a serving dish with onions and top with apple. Serve immediately.

1 pound calf's liver, cut into 1/2 inch thick pieces
1 1/2 cups whole milk
4 tablespoons unsalted butter
2 medium onions, thinly sliced
1/2 cup all-purpose flour
Coarse salt and freshly ground pepper
2 tablespoons sunflower or other neutral-tasting oil, plus more as needed
4 fresh sage sprigs, thinly sliced

Steps:

  • Place liver in a nonreactive (ceramic or glass) bowl and pour milk over. Refrigerate, covered, 5 to 6 hours.
  • In a large skillet, heat 2 tablespoons butter over medium-high heat. When butter is shimmering, add onions. Cook, stirring occasionally, until softened and translucent, 5 to 10 minutes. Reduce heat to medium-low and continue to cook, stirring more frequently until onions are very soft and brown, 30 to 40 minutes more.
  • Drain liver and discard milk. Pat liver dry with paper towels.
  • Spread flour on a plate and season with salt and pepper. Thoroughly coat liver with the flour mixture, shaking off excess.
  • Heat a large (13-inch) saute pan over medium heat and add remaining 2 tablespoons butter and the oil and heat until shimmering. Cook (in batches, if necessary, to avoid crowding pan) until liver is firm (but not hard) and browned on the outside but still slightly pink in the center, 1 to 2 minutes per side. Repeat with remaining liver, adding more oil to the pan as necessary. Add sage and cook for 1 minute more.
  • Divide liver among plates and top with onions.

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

Ugh....as a child, I absolutely, t-totally hated liver. It wasn't until I was married that I acquired a taste for liver and onions. This is another recipe of my mom's. It is a bit different, but has a nice flavor and even liver-haters will enjoy it. Goes well with steamed rice and carrots.

1 lb beef liver
2 tablespoons flour
1/2 teaspoon paprika
1/2 teaspoon salt
1 pinch pepper
1/4 teaspoon thyme
2 tablespoons butter
2 tablespoons vegetable oil
1 1/2 cups chopped onions
1/2 cup beef consomme
1 cup sour cream

Steps:

  • Cut liver into 2 inch long strips & 1/2 inch thick.
  • Pat dry on paper towels.
  • Mix together flour, paprika, salt, pepper& thyme.
  • Roll liver strips in flour mixture.
  • In large frying pan, melt butter with oil, add liver and saute for about 3 minutes or until well browned.
  • Remove from pan and set aside.
  • To fat in pan, add onions and cook for 3 or 4 minutes.
  • Return liver to pan, pour in consomme and cover.
  • Simmer about 30 minutes.
  • Just before serving, blend in sour cream and heat through.

1 -26 ounce Campbell's Cream of Mushroom Soup
1 (10 1/2 ounce) can French onion soup
2 medium onions (thinly sliced)

Steps:

  • Mix soups together, spread a thin layer over bottom of 13"x9"x2" baking dish.
  • Put a layer of liver, a layer of onions,and a layer of soup mixture. Repeat with second layer if needed.
  • Cover with remaining soup mixture.
  • Cover dish with foil and bake at 350 for 1-1/2 hour.

CALF'S LIVER WITH PANCETTA AND MARSALA

1 ounce (about 6 slices) thinly sliced pancetta, or 4 slices bacon
1 tablespoon butter
8 ounces calf's liver, in 4 large, thin slices
1/4 cup Marsala
1/4 cup chopped parsley

Steps:

  • Place a large skillet over medium heat, and add pancetta. Cook (with no additional oil) until crispy on both sides. Transfer to a plate and cover with foil to keep warm.
  • Return skillet to medium heat and add butter. When it foams, add slices of liver and cook for about 2 minutes a side, or to taste. Add liver to plate of pancetta and cover to keep warm.
  • Return skillet to medium heat, and add Marsala, stirring with a wooden spoon to deglaze the pan. When it bubbles and becomes syrupy, turn off the heat. Arrange liver on a large plate, and pour the Marsala sauce over it. Crumble pancetta on top, and garnish with chopped parsley. Serve immediately.
