SPARKLING WHITE SANGRIA

With sparkling wine and fresh fruit, this white sangria is pretty and festive -- perfect for a party!

1 ounce (2 tablespoons) brandy or cognac
1 ounce (2 tablespoons) orange liqueur, such as Grand Marnier
⅓ cup superfine sugar (see note)
1 orange, halved
2 limes
1 small apple, such as Fuji or Honeycrisp, peeled and chopped
1 nectarine, chopped
1 bottle chilled sparkling wine, such as Cava, Prosecco or Champagne
1 cup lemon-lime soda, such as Sprite
A few bunches frozen grapes

Steps:

  • In a large pitcher, combine the brandy, orange liqueur and sugar. Squeeze juice from one lime and one orange half into the pitcher. Stir until the sugar dissolves. Slice the remaining orange half into thin slices and add to pitcher, then add chopped apples and nectarines. Add the sparkling wine, lemon-lime soda and a large bunch of frozen grapes. Place ice cubes in glasses (do not put them in the pitcher or they'll water the drink down) along with small bunches of frozen grapes and pour sangria over top. Spoon chopped fruit into glasses, garnish with lime slices if desired and serve.
  • Note: Superfine sugar dissolves much faster than regular sugar. It is available at most supermarkets. This recipe makes a fairly sweet sangria; if you prefer it dry, use less sugar.

1 red apple (the better the apple the better the flavor of the sangria!, sliced thin)
1 cup of diced pineapple
2 oranges (sliced into thin rounds)
2 tablespoons sugar
1 cup of red grapes (frozen)
1/2 cup brandy
1/2 cup orange liqueur (Gran Marnier is preferred, otherwise use Triple Sec)
3/4 cup pineapple juice
8 fresh sprigs of mint
2 cinnamon stick
1 star anise (optional)
2 750 ml bottles of chilled Spanish cava (I prefer to make with brut and add sugar to taste. But if you like it on the sweet side buy semi-seco or even dulce)
Sugar or simple syrup to taste
Ice cubes

Steps:

  • In a large bowl combine the sliced apple, orange and diced pineapple. Cover with two tablespoons of sugar and let sit for at least 10 minutes.
  • Add the brandy, orange liqueur, pineapple juice, mint and spices. Using the back of a wooden spoon, muddle the mint and fruit just a bit.
  • Chill this mixture (if possible) for at least an hour.
  • Before serving, add the chilled cava and frozen grapes, and lightly stir to combine. Adjust for sweetness by adding sugar (superfine is best) or simple syrup. To serve, either ladle it into glasses filled with ice cubes, or into a serving pitcher filled halfway with ice.

2 kiwis
6 strawberries
15 green seedless grapes
1/2 cup orange juice
1 tbsp fresh lemon juice
1/4 cup Spanish brandy
1/4 cup granulated sugar
1 750ml Spanish brut cava
orange slices for garnish
ice cubes

Steps:

  • Remove the skin from the kiwis and cut into 1/4 inch thick rounds, cut the strawberries into 1/4 inch thick rounds as well and cut the grapes in half lengthwise, add all the cut fruits into a large pitcher
  • Pour in a 1/2 cup of orange juice into the pitcher with the fruits, also add in 1 tbsp of fresh lemon juice, a 1/4 cup of brandy and a 1/4 cup of sugar, gently mix everything together until the sugar dissolves
  • Once everything is well mixed, slowly pour in a 750ml bottle of Spanish cava, then give it a gentle mix to bring all the flavors together
  • To serve the cava sangria, add ice cubes into a wine glass, pour in the sangria, making sure to add some of the fruit in the pitcher and garnish with a slice of orange, cheers!

1/2 cup orange liqueur
1/4 cup sugar, super fine
1 orange, thinly sliced
1 pint raspberries
1 lime, thinly sliced
1 lemon, thinly sliced
2 bottles sparkling wine or cava, chilled

Steps:

  • In a large pitcher, combine the brandy, and orange liqueur. Pour in the sugar, stir or shake the pitcher thoroughly to mix until the sugar dissolves. Add all the fruit at once. Add the cava and serve as is or on ice.
