SPARERIBS AND SAUERKRAUT
You just cannot do this one wrong. You don't have to drain the sauerkraut. You don't even brown the ribs; they brown without your help. The recipe was handed down to Camille MacKusick by her father-in-law, from the family archives. All sorts of magical juices ooze out of everything. When the last finger is licked and the last lip smacked, everyone will weep.

- Preheat the oven to 300°F. Choose a baking pan that will accommmodate the ribs in pieces or all hitched together, with the kraut in the space left over. Eight country-style ribs cut into a 6-rib and a 2-rib hunk, plus the can of kraut, fit perfectly in a 9-by-13-inch pan. For more ribs, get a bigger pan and more kraut.
- Place the ribs in the pan and the sauerkraut in a mound beside them. Cover the ribs - not the kraut - with the barbecue sauce. Use as much as you like, maybe more than half the bottle, maybe less. Cover the pan tightly withaluminum foil and bake for 3 hours. Lift a corner of the foil near the end of the time to sneak a look. The ribs should be nicely browned and glazed and your mouth should water. Serve hot.

- Heat oven to 450°F degrees.
- Cut ribs into serving pieces.
- Place in 13x9-inch pan; sprinkle with salt and pepper.
- Bake uncovered for 20 minutes.
- Reduce oven to 350°F degrees.
- Remove ribs; drain fat from pan.
- In same pan, combine sauerkraut, sugar, apples, onion, and water.
- Spread it all out evenly.
- Put ribs on top; bake uncovered for 1 1/2 hrs, stirring occasionally.
GERMAN SPARERIBS AND SAUERKRAUT
This scrumptious dish was introduced to me by my German college roommate many years ago. We fixed it in our dorm room, which was verbotten, so I always associate this meal with an electric fry pan. I seem to remember we cooked the potatoes with the ribs in the same pan, but I think boiling the potatoes separately is a better idea.

Steps:
- Brown spareribs in a large frying pan on medium heat until most of the fat has been rendered.
- Remove to a platter temporarily as you fry each batch.
- Brown the sliced onions and then add the garlic and cook another minute or two, but do not brown the garlic.
- Remove onions and garlic from the pan briefly with a slotted spoon and pour off any fat that may have accumulated.
- Place mushroom soup and sauerkraut in the pan and stir well and scrape up any browned bits that may have stuck to the pan.
- Add onions, garlic, and apples and stir again.
- Place spareribs on top and cover pan.
- Cook for about an hour on low, stirring occasionally.
- Be cautious in adding any salt because of the sauerkraut, but taste and season accordingly.
- Boil potatoes in salted water until just barely fork-tender.
- Serve the sauce over the potatoes.

- 1. Season the ribs with salt,pepper,garlic and paprika. Let marinade several hours or overnight. Place the ribs and a small amount of water to prevent burning in a 350 degree oven,cover and bake until tender.
- 2. Cut larger potatoes in half,sprinkle with salt and pepper,remove the ribs,cut in serving size pieces. Place potatoes in the same baking dish,add undrained sauerkraut and place the ribs on top,bake until potatoes are tender. The juice from the sauerkraut and from the ribs help cook the potatoes.

- Brown the beef, spareribs and loin chops in a large heavy pot. Put the browned meats and the smoked pork butt with 1 cup of water into a separate, covered pan and simmer until tender, removing the pork chops after about 30 minutes, the butt after 1 hour, the beef after 1 1/2 to 2 hours and the spareribs after 2 hours.
- Meanwhile, pour off all the fat from the first pot and put in the sauerkraut and one cup of water. Stir in the chopped cabbage. Cover and cook until cabbage is tender, about 30 minutes. Remove lid and keep pot on a very low simmer.
- In a third pan, fry bacon until crisp, then crumble into sauerkraut mixture. Remove most of the bacon fat and fry onions and flour until they just brown. Mix into sauerkraut mixture.
- As you remove the meats from the second pan, cut away fat and bone and cut the meat into small pieces. Add to sauerkraut mixture.
- Skim the fat off the meat juices and add to sauerkraut mixture. Take off skin from kielbasa and cut into slices. Add to sauerkraut mixture with the tomatoes. Salt, pepper to taste. Bring to a boil, simmer 5 minutes and serve hot.

- Melt margarine in pan.
- Add onions and celery and cook til gender and golden.
- Add remaining ingredients except for meat, potatoes and sauerkraut.
- Simmer 20 minutes.
- Brown ribs in Dutch oven.

SAUERKRAUT AND SPARERIBS
This is a New Year's Day tradition for my hubby's family. It has German origins and is supposed to bring good luck in the New Year. Note: My MIL says that the spareribs must be country-style; baby back don't work for this one. The amount of sauerkraut used depends on how much you want to eat. We found 2 cans to be too much; next time, we'll scale it down to 1 1/2. *Note: In light of Charlotte J's review, I also want to suggest adding apples or onions if you feel that it needs more flavor. This is how hubby's family has done this one for years, and I would probably tinker with it if given the chance, but I better not mess with his tradition ;)

- Preheat oven to 425°F.
- Bake spareribs for 45-50 min, covered. This is to remove excess grease.
- Drain sauerkraut and reserve the liquid.
- Layer sauerkraut and ribs in crockpot. Add 1 tsp brown sugar to each layer of sauerkraut. (The end layers should be: sauerkraut layer on bottom, followed by 3 ribs, another layer of sauerkraut, 3 more ribs, and a final layer of sauerkraut).
- Pour 1/2 cup of reserved sauerkraut liquid into crockpot.
- Cook on low in crockpot for 4-5 hours. Check liquid levels occasionally and add more reserved liquid if necessary.

- Heat oil in a Dutch oven over medium high heat; saute ribs until well browned on all sides.
- Reduce heat to medium, add onions, and saute until translucent; season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Add water, cover, reduce heat to simmer one hour.
- After an hour, push ribs to one side of Dutch oven and add sauerkraut, caraway seeds, and apple to the other side; cover and cook 20 minutes.
- Season to taste.
- To serve: lift sauerkraut from liquid and arrange on one end of serving platter; place spareribs on the other end of the platter.

- Sear the ribs, remove from pot. Saute onions and scrap up bits on the bottom of pot. Add potatoes and return ribs to the pot. Add the beer, cover and place in the oven, 325 degrees for 45 min - 1 hr. Serve with dark bread or good rye bread.

I've made this dish for years in the oven and it takes more than an hour. In the pressure cooker, 15 minutes. It comes out even more tender and perfect too!
