Originally from Andalusia, this chilled Spanish soup is now enjoyed all over Spain. Similar to gazpacho, this deliciously different soup makes a spectacular summer starter or light lunch.

2 ¼ pounds tomatoes, peeled and halved
7 ounces day-old bread, sliced
1 clove garlic, or more to taste
salt to taste
1 cup extra-virgin olive oil
¼ cup red wine vinegar
4 slices Spanish serrano ham, chopped
2 hard-cooked eggs, chopped

Steps:

  • Place tomatoes in the bowl of a food processor; pulse until pureed. Add bread, garlic, salt, and vinegar and pulse until chopped. Pour olive oil in slowly, with the processor running, until soup is smooth. Chill in the refrigerator for 4 hours for best flavor.
  • Serve chilled tomato soup sprinkled with serrano ham and eggs.

Spanish Chorizo, Kale and Cranberry Bean Soup with Oven-Dried Tomato-Garlic Toast image

Number Of Ingredients 18

8 ounces Spanish chorizo, cut into
1/4 -inch-thick slices
4 cloves garlic, coarsely chopped
1 large carrot, peeled and finely chopped
1 stalk celery, finely chopped
1 large Spanish onion, finely chopped
8 ounces kale, stemmed and leaves coarsely chopped
8 cups chicken stock
1 cup white wine
2 teaspoons kosher salt
2 cups dried cranberry beans or pinto beans, soaked overnight
Olive oil, for drizzling
3 plum tomatoes, sliced 1/8-inch thick horizontally
1/2 cup olive oil
4 cloves garlic
12 slices of French baguette, sliced into 1/3-inch thick slices on the bias
Salt and freshly ground pepper
2 tablespoons finely chopped fresh oregano

Steps:

  • Heat a medium saucepan over medium-high heat. Add the chorizo and cook until lightly golden brown and the fat has rendered, about 5 minutes. Transfer the chorizo to a paper-towel lined plate and pour out all but 2 tablespoons of the rendered fat. (The amount of fat will vary depending on the chorizo that is used. If your chorizo does not render at least 2 tablespoons of fat, then add olive oil.) Add the garlic, carrots, celery and onions to the fat and cook over medium heat until soft, 8 to 9 minutes. Add the kale and cook until slightly wilted, 2 minutes. Add the stock, wine and salt; cover and bring to a boil. Add the cranberry beans and cooked chorizo; lower the heat to a simmer and cook until the beans and kale are soft, about 1 hour.
  • Ladle the soup into bowls and drizzle with olive oil.
  • Preheat oven to 200 degrees F. Place sliced tomatoes on a baking sheet lined with parchment paper. Place tomatoes in the oven and bake in the oven for 6 to 8 hours or until the tomatoes are dried and have lost all of their moisture. Heat oil in a small saucepan over low heat. Add garlic, remove from heat and let sit for 20 minutes. Increase the heat in the oven to 350 degrees. Brush the bread on both sides with the garlic oil. Place a slice of tomato on each piece of bread, season with salt and pepper and sprinkle with some of the oregano. Bake in the oven for 5 to10 minutes, until the bread is lightly golden brown.

2 cups low sodium chicken broth or 2 cups vegetable broth
1 bay leaf
2 cups fresh tomatoes, chopped
3 ounces tomato paste
6 leaves fresh basil, rolled and sliced
2 garlic cloves, coarsely chopped
2 tablespoons onions, chopped
1 teaspoon garlic powder
1/4 teaspoon dried oregano
1 pinch marjoram
1 dash sea salt
1 dash pepper

Steps:

  • Pour broth in saucepan and add bay leaf.
  • Purée remaining ingredients in a food processor or blender.
  • Pour purée in saucepan with broth and bring to a boil.
  • Reduce heat, cover and simmer for 30 minutes.
  • Serve hot, garnish with fresh basil leaves or parsley.

2 1/2 pounds tomatoes
1 small clove garlic, smashed
3 slices white sandwich bread, torn into 2-inch pieces
1/3 cup blanched almonds, toasted
1 tablespoon plus 1 teaspoon sherry vinegar
1/3 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
Assorted accompaniments, such as chopped hard-cooked eggs, tuna in olive oil, sliced ham or prosciutto, Spanish olives, Marcona almonds, manchego cheese, and crackers

Steps:

  • Make a 1/4-inch-deep X in bottom of each tomato with the tip of a paring knife, then core. In a large pot of boiling water, blanch tomatoes 30 seconds. Transfer to a large bowl of ice water and let stand until cool. Drain; peel and quarter tomatoes.
  • Transfer tomatoes to a blender along with garlic, bread, almonds, vinegar, and oil. Puree until smooth, about 1 minute; season with salt and pepper. Refrigerate until well chilled, at least 1 hour and up to 2 days. Serve soup with accompaniments.

4 1/2 pounds tomatoes
1 medium onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 cup extra-virgin olive oil
1 teaspoon sweet pimentón (smoked paprika)
3 garlic cloves, peeled
1 teaspoon cumin seeds
1/2 cup coarse bread crumbs (from a day-old baguette)
2 cups fresh figs or seedless green grapes, halved

Steps:

  • Cut a shallow X in bottom of each tomato. Blanch in batches in a pot of boiling water 15 to 30 seconds, then transfer to an ice bath. Peel and seed tomatoes, then coarsely chop.
  • Cook onion and bell peppers in oil with 1/2 teaspoon salt in a wide 5-quart heavy pot over medium heat, stirring occasionally, until soft, about 15 minutes. Stir in tomatoes, pimentón, and 1/2 teaspoon salt and cook, uncovered, stirring occasionally, until tomatoes are tender and falling apart, about 20 minutes.
  • Meanwhile, crush garlic to a paste with cumin using a mortar and pestle (or crush cumin with side of a heavy knife, mince and mash garlic, and stir together).
  • Stir garlic-cumin paste and bread crumbs into tomato mixture. Purée soup in batches in a blender until smooth (use caution when blending hot liquids) and return to cleaned pot. Thin to desired consistency with water and season with salt and pepper.
  • Serve soup topped with figs or grapes, depending on the season.

500 g tomatoes, ripe
100 g bacon, diced
1 onion, chopped
2 red peppers, chopped
2 teaspoons paprika
1 garlic clove, crushed
1 teaspoon oregano
1 teaspoon cumin
6 cups chicken stock

Steps:

  • Blanch tomatoes and skin them, or just use canned tomatoes.
  • Cook bacon; take out; saute onions and red peppers in bacon grease.
  • Add paprika and tomatoes, garlic, oregano and cumin; fry gently.
  • Add chicken stock.
  • Return bacon and bring to a boil.
  • Simmer 1 hour, stirring.
