3/4 cup white rice
3 tbsp vegetable oil
1 medium tomato (chopped fine)
1 clove garlic (minced)
1/2 white onion (quartered or diced)
2-3 strips bell pepper
1 tbsp granulated chicken bouillon
1 3/4 hot water

Steps:

  • Saute rice in 3 tablespoons of oil on medium heat until golden brown (about 5-7 minutes). Stir constantly to brown the rice evenly.
  • Add the onion,garlic, and bell pepper and saute 1 minute.
  • Add the diced tomato and cook slightly.
  • Add the chicken bouillon and stir just to coat the rice.
  • Immediately add about 1 1/4 cups of the hot water, reserving some liquid to add back later as needed. Stir the rice and bring to a boil.
  • Reduce heat, cover and simmer for 20-25 minutes until tender. Check the rice at 15 minutes to add more water and/or adjust the temperature as needed.
  • Let stand 5 minutes before serving.

2 tomatoes (, stemmed and quartered)
1/2 yellow onion (, peeled and quartered)
2 cloves garlic (, peeled)
1 teaspoon kosher salt
1 tablespoon canola oil
1 cup uncooked long grain white rice
1 1/2 cups chicken broth

Steps:

  • Place the tomato, onion, garlic and salt in a blender or food processor and blend until smooth, then set aside.
  • Add the oil to a large skillet over medium heat. When the oil is hot, add the rice and cook for about 5 minutes or until golden brown, stirring constantly so it doesn't burn. Add the tomato mixture to the skillet (be careful, it will sizzle and splatter) and cook for 2 minutes while stirring. Add the chicken broth, stir, and cover with a ild. Reduce to a simmer and cook for about 30 minutes or until the liquid is totally absorbed. Fluff with a fork to stir in the tomato bits that have risen to the top. Serve warm.

1 small onion, chopped
1/2 cup bell pepper, chopped
1 carrot, peeled & finely chopped
1 stalk celery, chopped
1 garlic clove, crushed
1 cup uncooked white rice
1 (14 1/2 ounce) can Mexican-style stewed tomatoes
1 (8 ounce) can tomato sauce
1 1/4 cups water
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon chili powder, to taste
1/2 teaspoon cumin
1 dash crushed red pepper flakes

Steps:

  • Melt margarine in a medium saucepan. Add onions, bell pepper, carrots, celery, garlic and rice. Cook and stir over medium heat until rice is lightly brown and vegetables are tender.
  • Add stewed tomatoes, tomato sauce, water, salt, pepper, chili powder, cumin, and red pepper. Mix well.

2 garlic cloves, peeled
1 lb boneless lean pork, cut into 1 in cubes
1 tablespoon parsley, finely chopped
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon pulverized saffron
1/2-1 onion, chopped
1 sweet red pepper, seeded & cut into strips
1 green pepper, seeded & cut into strips
1 cup water
1 cup ripe tomatoes, peeled, seeded, & chopped
1 1/2 cups short-grain rice (preferably imported Spanish rice) or 1 1/2 cups medium grain rice (preferably imported Spanish rice)
3 cups boiling beef broth or 3 cups boiling vegetable broth

Steps:

  • Heat the oil in a skillet & brown the garlic & pork on all sides. Once done remove the garlic & pork then sauté the onion & peppers in the oil for 5 minutes.
  • Mash the garlic into a puree & place into a large casserole along with the pork. Add the parsley, spices, tomatoes, onions, peppers & water, stirring throughly.
  • Meanwhile, preheat the oven to 425. Then heat the broth in a sauce pan until it begins to boil.
  • Pour the boiling broth into the casserole then stir in the rice. Cover & cook in the oven for 20 minutes.
  • Check on the rice, stirring & adding more water if needed. Then return to the oven for another 15-20 minutes. Remove once the rice is tender & there is no more liquid. Let stand for 5 minutes before serving.

Ground beef, fresh onion, green bell pepper, garlic, tomatoes, and rice are simmered in a sweet-hot sauce then baked with Cheddar cheese and garnished with fresh cilantro. Spice it up with Ro-Tel® instead of regular canned tomatoes, cayenne, and jalapeno peppers.
