Southern-Style Spanish Rice With Bacon image

This simple skillet Spanish rice has a Southern twist, the traditional combination of onion, tomato, and rice is enhanced with bacon and cheese.

4 slices bacon
1 to 4 teaspoons butter
1/2 cup onion (minced)
1 cup long-grain white rice
1 14.5-ounce can diced tomatoes (with juice)
2 cups water
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon chili powder
1 cup cheddar or Monterey jack cheese (shredded)

Steps:

  • Gather the ingredients.
  • In a large skillet, fry bacon until cooked, but not crisp, over medium heat. Remove from skillet, drain on paper towels, and dice and set aside.
  • Pour the bacon fat into a measuring cup; if there is less than 1/4 cup add enough butter to make 1/4 cup of fat. (Add a teaspoon of butter at a time, stirring-the hot bacon fat will melt the butter.)
  • Pour the melted fat back into the skillet, and add the onion and rice. Sauté over medium heat, stirring constantly, until rice is lightly browned and onion is tender.
  • Remove from heat; stir in diced bacon, tomatoes with juice, water, salt, pepper, and chili powder. Return to the heat, cover, and simmer until rice is tender and liquid is almost all absorbed-about 20 minutes.
  • Add cheese, lower the heat and stir until cheese is melted.
  • Serve hot and enjoy!

6 bacon strips, diced
1 tablespoon canola oil
1 medium onion, chopped
1 cup uncooked long grain rice
1-3/4 cups water
2 large tomatoes, chopped
1 medium green pepper, chopped
2 jalapeno peppers, seeded and chopped
1 to 1-1/2 teaspoons chili powder
1/2 teaspoon salt

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Add oil to the drippings; saute onion for 3 minutes. Add rice; stir until golden brown, about 5 minutes. 1/2 lb bacon
3 cups rice
1/4 onion, chopped
1/2 large green pepper, diced
1 large can (28 oz.) whole tomatoes
Dash of salt and pepper

Steps:

  • Cook bacon in skillet, cool. While bacon is cooking, cook rice, and chop onion and green pepper. After bacon is cooled, rip into small pieces, and mix with rice.
  • In the same skillet you cooked the bacon, quickly fry green pepper and onion (only about 1 minute, just until you smell the onion). Mix onion and green pepper with rice and bacon mixture, and pour into round casserole dish. Drain can of tomatoes, and pour over top of rice mixture. Sprinkle the top with salt and pepper.
  • Bake in 350°F oven for 20-30 minutes.

I orginally found this in a very old Better Homes and Garden cookbook. It's been my family's favorite for years . . . try it and you'll see why! Use hotter chilis to achieve more spice. The brown sugar can be deleted for less sweetness. The Chili Sauce I use in the US, is a slightly sweet (not hot) sauce, believe it's made by Heinz (small fat jar). I have substituted pureed tomatos here in Mexico and it works great!

1 cup onion, finely chopped
1/4 cup green bell peppers or 1/4 cup poblano pepper, chopped
1 (16 ounce) can diced tomatoes
1 1/2 cups water
1/2 cup bottled chili sauce
1 teaspoon salt
1 dash pepper
1 teaspoon brown sugar
1/2 teaspoon Worcestershire sauce
1/4 cup fresh cilantro (optional)
3/4 cup uncooked white rice

Steps:

  • Fry the bacon until crisp.
  • Remove bacon and crumble.
  • Save 1/2 of bacon fat.
  • Saute onion and pepper (in 1/2 of the fat from the bacon) until tender. Add rest of ingredients.

1 cup uncooked white rice

Steps:

  • Bring chicken broth and tomato sauce to a boil in a small saucepan, about 5 minutes. Reduce heat to medium and maintain a simmer while preparing the remaining ingredients.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate, reserving bacon grease in the skillet. Chop bacon.

1 lb. hamburger
1 medium onion, chopped
1/2 of one green bell pepper, chopped
1 teaspoon salt

2 tablespoons worcestershire sauce
1/2 cup ketchup
2 cups water
1 can (14.5 oz.) whole tomatoes, cut-up (*see note)

  • 1. In a 12-inch skillet, cook bacon slices until crisp; drain on paper towel and set aside.
  • 2. In the same skillet, along with the bacon grease, brown the hamburger and cook the vegetables; then drain off any excess grease in a colander.
  • 3. Return cooked beef and vegetables to the skillet, then add the remaining ingredients.
  • 4. Crumble the cooked bacon; add to the skillet, and stir.
  • 5. Bring ingredients in skillet to a boil, then reduce heat, cover, and simmer for 30 minutes, or until rice is tender and liquid is absorbed, and stirring occasionally.

I tweaked it so that it had lots of taste without the green peppers some people use because I have a son who hates them. If you like them feel free to add them to the dish.

1/2 lb of mild breakfast sausage (or spicier if you wish more bite)
1/2 lb bacon
1 medium onion
2 teaspoons fresh crushed garlic
1/2 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
3 ounces tomato paste
3 cups water
1 1/2 cups uncooked rice

Steps:

  • Cook sausage and crumble in small pieces and set aside.
  • Cook bacon until crisp, drain then crumble into small pieces and add to the sausage.
  • Saute the onion and garlic in the bacon drippings until golden, drain on paper towels, then add to meat mixture.
  • In a large saucepan bring the water and tomato paste to a boil.
  • Add the rice, cover and cook over medium-low heat for 20 minutes.
  • Add meat mixture to rice mixing well and serve while still hot.
  • You can double or triple this recipe easily then freeze the leftovers in ziplock freezer bags for quick sides to Mexican meals.

1 cup chopped onion
1 cup chopped green bell pepper
1 (16 ounce) can whole peeled tomatoes, halved
1 (15 ounce) can tomato sauce
1 tablespoon ground black pepper

4 cups cooked white rice
4 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Partially drain fat from the skillet.
  • Heat remaining bacon fat in the skillet over medium heat. Cook onion and bell pepper in the fat until tender, about 5 minutes.
