3 tbsp unsalted butter
2 cups uncooked long grain white rice
1 medium onion, diced
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp dried oregano
4 cups chicken stock
15.5 ounce can fire roasted diced tomatoes, with juices
1 bay leaf
salt and pepper

Steps:

  • Heat a large skillet over medium high heat and melt butter.
  • Add in rice and cook until lightly browned, stirring frequently, 2-3 minutes. Add in onion and saute for 2-3 more minutes, stirring frequently or until slightly golden brown.
  • Add in garlic, cumin, chili powder and oregano. Saute for one minute. Pour in the chicken stock, fire roasted tomatoes and bay leaf.
  • Bring to a boil then reduce to a simmer. Cover and simmer for 15-20 minutes or until the rice is tender. (Refer to the back of your rice, some cook times are shorter or longer depending on what rice you choose)
  • When the rice is done fluff with a fork and season with salt and pepper to taste. Serve immediately!

Authentic Spanish Rice may be traditional but it's also simple with just a handful of ingredients including long-grain white rice, water, chicken broth, tomato sauce and Rotel canned tomatoes. With a lot of stirring and a little patience, you too will master this easy side dish.

2 tablespoons lard or butter
2 cups long grain white rice
1 cup water
1 cup chicken (or vegetable broth)
8 ounces canned tomato sauce
10 ounces Rotel (canned tomatoes with chiles), drained

Steps:

  • Melt lard in a large skillet; add rice and cook, stirring constantly until lightly browned. Do not burn.
  • Once browned, add water and bring to a boil.
  • Once the water has mostly absorbed, add broth and cover over low heat.
  • Let simmer and cook for approximately 20 minutes. Stir often so that a crust doesn't form. If it does, do not scrape it.
  • Once the rice is fluffy, add drained Rotel (keep the juice) and tomato sauce. Stir.
  • If the rice isn't perfectly fluffy, add the reserved Rotel liquids, turn off heat and cover until the rice steams to perfection.

1/4 cup butter
1/3 cup onion, chopped
1/3 cup green pepper, diced
1/4 cup celery, diced
1/2 lb mushroom, sliced
19 ounces tomatoes, 1 can
1 teaspoon salt
1/4 teaspoon pepper
2 cups cooked rice

Steps:

  • Heat butter in frying pan and fry onion, green pepper, celery and mushrooms until tender.
  • Add tomatoes, salt and pepper.
  • Simmer slowly for 10 minutes.
  • Stir in 2 cups cooked rice.
  • Turn into buttered 2 quart casserole.
  • Bake in 375 degree oven for 25 minutes, or until bubbling.
  • More tomatoes or tomato juice may be added if desired.

My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. 2 tomatoes (, stemmed and quartered)
1/2 yellow onion (, peeled and quartered)
2 cloves garlic (, peeled)
1 teaspoon kosher salt
1 tablespoon canola oil
1 cup uncooked long grain white rice
1 1/2 cups chicken broth

Steps:

  • Place the tomato, onion, garlic and salt in a blender or food processor and blend until smooth, then set aside.
  • Add the oil to a large skillet over medium heat. When the oil is hot, add the rice and cook for about 5 minutes or until golden brown, stirring constantly so it doesn't burn. 2 tablespoons olive oil
1 ½ cups long-grain rice
3 cups water
2 roma (plum) tomatoes, chopped
1 cup chopped onion
¾ cup chopped fresh cilantro, or more to taste
1 tablespoon tomato bouillon with chicken flavoring (such as Knorr®), or more to taste

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
