ONE-POT SPANISH-STYLE SHRIMP AND CHORIZO PASTA



One-Pot Spanish-Style Shrimp and Chorizo Pasta image

Fideos are very thin noodles that are traditionally cooked right in the sauce, allowing them to soak up maximum flavor. Both angel hair pasta and capellini are great substitutes if you don't have access to Spanish fideos. To create a nutty, smoky layer, the noodles are first toasted with olive oil and chorizo. A good-quality bottled clam juice is important here, since it creates the briny broth that accentuates the shrimp and enhances the overall seafood flavor; the Bar Harbour brand has a very clean and naturally briny clam flavor.

1/4 cup extra-virgin olive oil, plus more for drizzling
1/2 cup finely chopped onion
8 ounces fideos, angel hair pasta or capellini, broken into 3-inch pieces

3 garlic cloves, minced
2 tablespoons tomato paste
4 ounces Spanish chorizo, casing removed and sliced 1/2-inch thick
1 medium fennel bulb, trimmed, quartered and sliced into thin wedges
2 (8-ounce) bottles clam juice
1 pound large shrimp, cleaned
1/2 cup frozen peas
1/4 cup freshly grated Parmesan
1 tablespoon lemon juice
1/4 cup chopped parsley
Lemon wedges, for serving

Steps:

  • Heat oil in a large Dutch oven over medium heat. Add onion and pasta, season with salt and pepper and cook over moderate heat, stirring, until pasta starts to turn golden, about 5 minutes (pasta will break up a bit during stirring).
  • Lower heat and add garlic, tomato paste and chorizo, and cook until tomato paste is lightly caramelized, 2 to 3 minutes. Add fennel, clam juice and 1 cup of water and season with salt and pepper. Bring to a boil, cover and simmer over moderate heat until pasta has softened and most of the liquid is absorbed, about 5 minutes.
  • Stir in shrimp, peas and Parmesan, cover and cook until shrimp is opaque, about 3 to 4 minutes. Stir in lemon juice and parsley.
  • Drizzle with oil and serve with lemon wedges.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice
1/2 teaspoon smoked paprika, plus more, for serving
1/4 teaspoon finely grated garlic
1 cup grated manchego cheese
8 ounces dried penne
1 cup diced ham
1/4 cup chopped fresh flat-leaf parsley
1/4 cup jarred roasted red peppers, drained and chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, sour cream, lemon juice, smoked paprika, garlic, 3/4 cup of the manchego, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the ham, parsley and red peppers to the bowl and toss to combine. Season with salt and pepper. Top with the remaining 1/4 cup manchego and sprinkle with smoked paprika. The pasta salad is best if served right away.

Italy and Spain collide in this paella-like dish of orzo pasta with chorizo, peas and your seafood of choice

350g short pasta shapes (we used orzo )
1 chicken stock cube
1 tsp turmeric or a large pinch of saffron strands
85g chorizo , diced
200g pack mixed cooked seafood
2 roasted red peppers ,from a jar, sliced
100g frozen pea
2 tbsp chopped parsley

Steps:

  • Cook the pasta in lots of water following pack instructions, with the stock cube and half the turmeric or saffron. About 7 mins before the pasta is cooked, tip the chorizo into a frying pan and cook over a medium heat for 5 mins until slightly crisp. Tip out some of the fat, then add the remaining turmeric or saffron, seafood, peppers and peas.
  • Drain the pasta, reserving some of the stock. Tip the pasta back into the pan, add the chorizo and seafood mixture and a splash of the reserved stock, and heat through. Stir in most of the parsley.
  • Serve in warm bowls, with the remaining parsley sprinkled on top.

Fideua (pronounced FID-a-wah), a dish associated with Valencia -- where paella supposedly originated -- is essentially paella using noodles in place of rice. The noodles of choice are fideos, thin strands often sold in coils and found in Spanish and Latin American markets.

4 tablespoons extra virgin olive oil
1 pound fideo or other very thin pasta, in 2-inch lengths or shorter
Salt and pepper
1/2 teaspoon saffron threads
1 teaspoon sweet paprika
1 tablespoon minced garlic
1 pound cockles or small clams, well washed
1 pound mussels, well washed
1/2 cup stock (optional)
8 to 12 large shrimp, shells on
4 to 8 sea scallops, cut in half through their equators
1/2 cup chopped fresh parsley leaves
Lemon wedges

Steps:

  • Put oil in a skillet at least 12 inches across, and turn heat to medium-high. A minute later add noodles; sprinkle with salt and pepper, and cook, stirring almost constantly, until they darken. Try to avoid letting more than a few pieces blacken.
  • Add saffron, paprika and garlic, and stir for a minute more. Add clams and mussels and about 1/2 cup water (or stock) and continue to cook, stirring. Depending on how much liquid the clams and mussels release, you may have to add a little more liquid. Continue to cook and stir until the pasta is nearly tender, about 10 minutes.
  • Add shrimp and scallops and cook about 5 minutes, stirring occasionally, until cooked through. Stir in parsley, taste and adjust seasoning, and serve with lemon wedges.

1 bay leaf
8 ounces spaghettini or thin spaghetti, broken into 1- to 2-inch lengths
1 onion, chopped fine
1 (14.5-ounce) can diced tomatoes, drained and chopped fine
1 teaspoon paprika
1 teaspoon smoked paprika
1/2 teaspoon anchovy paste
1/4 cup dry white wine
1 tablespoon chopped fresh parsley

Steps:

  • 1. Combine 1 tablespoon oil, 1 teaspoon garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper in medium bowl. Add shrimp, toss to coat, and refrigerate until ready to use. 2. Place reserved shrimp shells, water, chicken broth, and bay leaf in medium bowl. Cover and microwave until liquid is hot and shells have turned pink, about 6 minutes. Set aside until ready to use. 3. Toss spaghettini and 2 teaspoons oil in broiler-safe 12-inch skillet until spaghettini is evenly coated.   • Heat the oil in a medium skillet over medium-high heat until it shimmers. Add the shrimp, paprika, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer to a plate and cool.

1 Can Rotel Tomatoes & Green Chiles
1 Box(32Oz.) Fat Free Chicken Broth
1 Sm. can Tomato Juice
Pinch of Cumin Powder
Can also Add Canned Jalapeno's To Taste if you Want to Heat it up a Few notches

Steps:

  • Add Butter and 1 Tbls. of Oil to pan. When Hot sear Scallops and or Shrimp Till Browned. Set aside. Heat 2 Tbls. Oil in Large frying pan. Add Onions saute till soft. Add Garlic, saute for apx. 1 Min. Longer. Add Orzo Pasta to Onions and Garlic. Saute Till Pasta starts to turn Golden. Add Rotel Tomatoes and Green Chiles. Stir and gradually add 1 C.Chicken Broth. Turn heat down to a low simmer. Add a small pinch of Cumin Powder to your taste, Cover Stir often Add 1/2 C. Chicken Broth when Liquid is absorbed. Add Small amount of Tomato Juice as it simmers to enhance the tomato flavor. Keep adding Chicken Broth as the liquid is aborbed. Simmer till Pasta is soft. The consistancy Should be Moist, semi-dry not liquidy. Cut Shell Fish to Desired Pieces Add to pasta right before serving.

½ pound applewood ham, cut into quarters
1 red bell pepper, chopped

1 15-ounce can fire-roasted diced tomatoes
2 1/4 cups low-sodium chicken broth

1 1/2 pounds skinless, boneless chicken breasts
3 tablespoons extra-virgin olive oil
1/2 onion, chopped
1 poblano chile pepper, chopped
2 cloves garlic, minced
1/4 teaspoon ground cumin
2 tablespoons chopped fresh parsley
2 tablespoons crumbled queso fresco cheese

Steps:

  • Heat a large skillet over high heat. Add the pasta and cook, stirring, until toasted, 5 to 6 minutes. Remove from the heat, then add the tomatoes, chicken broth, 1 teaspoon salt and a few grinds of pepper; set aside.
  • Season the chicken generously with salt and pepper. Heat 2 tablespoons olive oil in another large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 5 minutes; remove to a plate. Add the remaining 1 tablespoon olive oil to the skillet and reduce the heat to medium. Add the onion, poblano, garlic and cumin; cook, scraping up any browned bits, until the vegetables are tender, 6 to 8 minutes. Season with salt and pepper.
  • Add the pasta mixture to the skillet with the vegetables and bring to a boil. Nestle the chicken in the pasta; cover, reduce the heat to low and cook until the chicken is cooked through, about 12 minutes. Remove the chicken to a cutting board to rest, then continue to simmer the mixture until most of the liquid is absorbed, about 3 minutes.
  • Slice the chicken. Divide the pasta among plates and top with the chicken, parsley and queso fresco.

  • Since traditional short fideos noodles are hard to find, we came up with an easy way to break long strands into even lengths.
  • Loosely fold 4 ounces of spaghettini in kitchen towel, keeping pasta flat, not bunched.
  • Position so that 1 to 2 inches of pasta rests on counter and remainder of pasta hangs off edge. Pressing bundle against counter, press down on long end of towel to break strands into pieces, sliding bundle back over edge after each break.
