A traditional Spanish side dish that I've served on holidays for many years. But it's a simple, tasty dish anytime!

2 tablespoons olive oil
2 cloves garlic, crushed
2 pounds fresh green beans, cut into 1-inch lengths
3 cups canned diced tomatoes with their juice
1 tablespoon chopped fresh chives
3 tablespoons pine nuts
2 tablespoons lemon juice
1 bay leaf
salt and pepper, to taste

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
  • Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

3 cups thinly sliced potatoes
2 cups frozen green beans
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 teaspoon vegetarian Worcestershire sauce
1 cup vegetable broth, divided
1 teaspoon cornstarch
¼ cup chopped fresh parsley

Steps:

  • In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.
  • In a small bowl blend remaining broth and cornstarch. Stir in parsley; add to potato mixture. Cook, stirring, until bubbly and thickened.

The quasi-classic Spanish side dish known as judias verdes con jamon. I substituted bacon for the Serrano ham. From 500 All-Time Great Recipes.

1 lb fresh green beans or 1 lb frozen green beans
3 tablespoons fruity olive oil
1 small yellow onion, thinly sliced
2 garlic cloves, finely minced
3 ounces bacon, cooked and crumbled (Serrano ham or Parma ham can be substituted)
salt
fresh ground black pepper

Steps:

  • In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
  • In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
  • Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
  • Season with salt and pepper. Serve warm.

1/4 cup green bell pepper, chopped
1 tablespoon olive oil
1 cup tomatoes, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary

  • Cook beans until tender. Drain and set aside. Saute onion and pepper in oil until soft. Add tomatoes and spices. Stir in beans. Heat through.
