This hearty one-pot is full of Mediterranean flavour, with pork, red onion, peppers and smoked paprika - an impressive 4 of your 5 a day

350g lean pork mince
2 tsp olive oil
1 large red onion, chopped
2 peppers, sliced, any colour will do
3 garlic cloves, crushed
1 tbsp sweet smoked paprika
2 x 400g cans chopped tomatoes
400g can butter beans, drained
2 tsp golden caster sugar
small bunch parsley, chopped
crusty bread, to serve (optional)

Steps:

  • Season the pork, working the seasoning in with your hands, then shape into small meatballs. Heat the oil in a large pan, add the meatballs and cook for 5 mins, until golden brown all over. Push to one side of the pan and add the onion and peppers. Cook for a further 5 mins, stirring now and then, until the veg has softened, then stir in the garlic and paprika. Stir everything around in the pan for 1 min, then add the tomatoes. Cover with a lid and simmer for 10 mins.
  • Uncover, stir in the beans, the sugar and some seasoning, then simmer for a further 10 mins, uncovered. Just before serving, stir in the parsley. Serve with crusty bread for dunking, if you like.

Cannellini beans, chicken thighs and spicy chorizo make for a satisfying and simple one-pot supper

1 tbsp olive oil
200g chorizo sausage, thickly sliced
1 onion , chopped
400g/14oz chicken thigh fillets, cubed
1 tomato , roughly chopped
410g can cannellini bean , drained
1 large potato , cut into small cubes
500ml hot chicken stock
4 tbsp chopped parsley

Steps:

  • Heat the oil in a large pan. Cook the chorizo, onion and chicken over a high heat for 5 mins. Add the tomato and cook for a further 2-3 mins until pulpy.
  • Stir in the beans, potato and stock. Bring to the boil, then cover and gently simmer for 20 mins until the potato is soft and the chicken cooked through. Stir through the parsley and serve. You can cool and freeze the stew for up to 2 months. To serve, defrost and heat through thoroughly.

1 cup dried black turtle bean
1 large onion, chopped
2 garlic cloves, crushed
1 chili, chopped
2 large tomatoes, chopped
2 teaspoons spanish hot smoked paprika
1 teaspoon cocoa powder
2 bay leaves
1 little oil, for frying
salt, to taste

Steps:

  • Soak the dried black beans overnight in a large bowl of water.
  • The next day, drain well, rinse and transfer to a pot with 4 cups water, bring to boil and turn down to a simmer.
  • Meanwhile, sauté garlic, onion and chilli in about one teaspoon oil until soft. Add in the chopped tomatoes and hot smoked paprika and lightly sauté for a few more minutes. Stir the mixture into the pot with black beans. Add in the bay leaves and cocoa powder.
  • Simmer until the liquid is thick and reduced, and the beans are tender (a little under 2 hours). If you like, you can lightly puree half the beans for a creamier soup/stew.
  • Season with salt to taste. Garnish with fresh tomatoes and a sprinkling of herbs such as parsley, if desired. Retrieve bay leaves before eating.

A winter warmer and no mistake! This sensational store-cupboard recipe is taken to another level by the picante perfection of a good Spanish sausage.

Steps:

  • Start by taking the skin off the chorizo sausage and then chop it into small cubes.
  • Fry the chorizo in a little olive oil until it begins to release its own beautiful red oils into the pan. The meat should crumble until it resembles mince meat.
  • Add the onion, garlic and red pepper to the pan and fry gently until soft and sweet. Add more olive oil if the onion begins to take on colour.
  • Turn up the heat and pour in the glass of wine. Allow to reduce by a third and then turn the heat back down.
  • Remove the tomatoes from the tin, retaining as much of the juice as possible. Squish each tomato between your fingers and then add to the pan.
  • Stir in the paprika, chilli and then season with salt to taste. Cook over a low heat for ten minutes and then add the beans. Simmer gently for a further fifteen minutes or until the sauce is thick.
