Spanish Style White Bean and Sausage Soup image

Andouille sausage and kale are great additions to this white bean soup. This soups flavor is blended perfectly. It is a real taste bud pleaser.

3 andouille sausage links
8 ½ cups chicken stock
8 ounces dry great Northern beans
1 bay leaf
1 pinch crushed saffron threads
2 tablespoons olive oil
1 onion, finely chopped
4 cloves garlic, minced
1 red bell pepper, finely chopped
1 tablespoon sweet paprika
12 ounces kale, stems removed and leaves coarsely chopped

Steps:

  • Bring 2 cups of water to a boil in a large skillet. Add sausages, and cook over medium heat for 7 minutes on each side. Remove from the pan, dice, and set aside.
  • In a large pot, combine the chicken stock and dry beans. Bring to a boil, then reduce the heat to low. Add the bay leaf and a pinch of salt. Simmer, partially covered, for 2 hours. Discard bay leaf. Remove 1/2 cup of the stock to a small bowl. Stir in saffron, and set aside to soak.
  • Heat the oil in a large skillet over medium-high heat. Add the sausage, and brown for about 5 minutes. Remove from the pan, and reduce the heat to low. Add the onion, and cook for about 5 minutes, then stir in the garlic and cook for another minute. Mix in the red bell pepper and paprika. Cook for a few minutes before adding the mixture to the soup pot along with the sausage.
  • Bring the soup to a low boil, and stir in the kale. Simmer for 10 minutes, until kale is tender. Serve hot.

1 lb kielbasa or 1 lb other spicy cured sausage, cut in 1/2-inch pieces
2 medium onions, cut in 1/2-inch pieces
3 garlic cloves, minced
2 quarts chicken stock
4 medium potatoes, peeled and cut in 1/2-inch cubes
2 (15 ounce) cans garbanzo beans, drained
1 chicken bouillon cube
2 (5 g) packets sazon goya with azafran or 2 (1 g) packets Vigo flavoring and coloring
1 small bay leaf

Steps:

  • If the sausage has casings, remove them before cutting the sausage in pieces.
  • Sauté sausage in a soup pot over medium heat until fat is rendered.
  • Add onions and sauté until onions are translucent. Add garlic and sauté 2 more minutes.
  • Stir in remaining ingredients. Bring to a boil then reduce heat to medium low.
  • Boil gently for about 25 minutes.
  • Remove bay leaf before serving.

Spanish Chorizo, Kale and Cranberry Bean Soup with Oven-Dried Tomato-Garlic Toast image

8 ounces Spanish chorizo, cut into
1/4 -inch-thick slices
4 cloves garlic, coarsely chopped
1 large carrot, peeled and finely chopped
1 stalk celery, finely chopped
1 large Spanish onion, finely chopped
8 ounces kale, stemmed and leaves coarsely chopped
8 cups chicken stock
1 cup white wine
2 teaspoons kosher salt
2 cups dried cranberry beans or pinto beans, soaked overnight
Olive oil, for drizzling
3 plum tomatoes, sliced 1/8-inch thick horizontally
1/2 cup olive oil
4 cloves garlic
12 slices of French baguette, sliced into 1/3-inch thick slices on the bias
Salt and freshly ground pepper
2 tablespoons finely chopped fresh oregano

Steps:

  • Heat a medium saucepan over medium-high heat. Add the chorizo and cook until lightly golden brown and the fat has rendered, about 5 minutes. Transfer the chorizo to a paper-towel lined plate and pour out all but 2 tablespoons of the rendered fat. (The amount of fat will vary depending on the chorizo that is used. If your chorizo does not render at least 2 tablespoons of fat, then add olive oil.) Add the garlic, carrots, celery and onions to the fat and cook over medium heat until soft, 8 to 9 minutes. Add the kale and cook until slightly wilted, 2 minutes. Add the stock, wine and salt; cover and bring to a boil. Add the cranberry beans and cooked chorizo; lower the heat to a simmer and cook until the beans and kale are soft, about 1 hour.
  • Ladle the soup into bowls and drizzle with olive oil.
  • Preheat oven to 200 degrees F. Place sliced tomatoes on a baking sheet lined with parchment paper. Place tomatoes in the oven and bake in the oven for 6 to 8 hours or until the tomatoes are dried and have lost all of their moisture. Heat oil in a small saucepan over low heat. Add garlic, remove from heat and let sit for 20 minutes. Increase the heat in the oven to 350 degrees. Brush the bread on both sides with the garlic oil. Place a slice of tomato on each piece of bread, season with salt and pepper and sprinkle with some of the oregano. Bake in the oven for 5 to10 minutes, until the bread is lightly golden brown.

4 can(s) garbonzo beans or chick peas
3 clove garlic chopped
1 pkg 1 envelope of vigo saffron flavoring
1 large bay leaf
5 large peeled and cubed potatoes
1 medium green bell pepper chopped
1 medium ham steak chopped
1 medium chopped onion
1 tsp pepper
1 tsp salt
1 pkg of 2 chorizo's spanish sausage sliced

  • 1. place all ingrediants into large stock pot cover with water with about an extra inch on the top. Bring to a boil. Leave uncovered cook on low till potatoes get cooked well done and the liquid becomes a little cloudy with the well cooked potatoes. Let cool a bit and serve with a fresh loaf of french or italian bread or if you have cuban bread in your home town that would be awesome.

4 large cans Progresso garbanzo beans (I like this brand the best, because the beans are round and full).
1 onion, chopped
4 potatoes, peeled and cubed
smoked sausage, sliced or cubed, or polish kielbasa, or ham pieces if you prefer
olive oil
THE MOST IMPORTANT INGREDIENT 2 packages of GOYA brand SAZON con azafran seasoning. A seasoning, it is used in many spanish dishes. It is also used to make yellow rice. This brand is the best.
this recipe traditionally calls for chorizo (a spanish sausage, but can be replaced with any of the above meats if preferred.

Steps:

  • In a large pot add enough olive oil to easily sauté the onions and potatoes. Add the sliced sausage (or ham) and mix it in with the simmering ingredients. While they sauté open your cans of garbanzo beans and empty them in the pot along with all of their juices. Take each empty can and fill it to the top with water. Ex: if you used 4 cans of garbanzo empty 4 cans of water into the pot. This soup can be made with more or less water, I like it a little more watery but have seen it served very thick. Secret Ingredient! Add the two packets of seasoning. Your soup color will immediately turn golden yellow. Put your top on the pot and let the soup boil for at least 2 minutes. Reduce heat and let it simmer for at least 30 minutes. Keep checking it and stirring it periodically. Once the potatoes have cooked, your soup is done.

1 beef bone
2 quarts water
1 tablespoon salt
1/4 lb salt pork, cut in thin strips

2 potatoes, peeled and cut in quarters
1 pinch saffron
1/2 teaspoon paprika

Steps:

  • Wash garbanzo beans. Soak overnight with 1 tablespoon salt in enough water to cover beans. Drain the salted water from the beans.
  • Place beans in 4-quart soup kettle; add 2 quarts of water and ham and beef bones. Cook for 45 minutes over low heat, skimming foam from the top.
  • Fry salt pork slowly in a skillet.

Other than learning everything there is to know about olive oil, the stated purpose of our trip, all we did for a week was eat ourselves silly and drink many bottles of beautiful Spanish wine. Not surprisingly, I fell in love with Spanish cuisine. Based on impeccably fresh ingredients, it is gutsy, flavorful, and simple.

1/2 pound dried white beans, such as Great Northern, rinsed and picked over
8 1/2 cups chicken stock, (preferably homemade)
1 bay leaf, preferably Turkish
Kosher salt
Pinch saffron threads
2 tablespoons extra-virgin olive oil
3 Spanish chorizo sausages, about 3/4 pound, cut into 1/2-inch dice
1 large onion, finely chopped
4 garlic cloves, minced
1 large red bell pepper, finely diced
1 tablespoon sweet paprika
1 small bunch kale, about 3/4 pound, tough stems removed, washed well, and coarsely chopped
Freshly ground black pepper
Sherry vinegar, to taste

Steps:

  • Place the beans in a large pot or soup kettle. Pour in 8 cups of the stock and bring to a boil over high heat. Reduce the heat to medium and add the bay leaf and a pinch of salt. Cook, partially covered, stirring often and adjusting the heat to keep it at a slow steady simmer, until the beans are tender, about 2 hours. Remove and discard the bay leaf.
  • Soak the saffron in the remaining 1/2 cup chicken stock.
  • Heat the oil in a large skillet over medium-high heat. Add the chorizo and cook, stirring often, until lightly browned, about 5 minutes. Use a slotted spoon to transfer to a plate. Add the onion; reduce the heat to medium and cook, stirring often, until softened, about 5 minutes. Add the garlic and cook 1 minute longer. Stir in the red pepper and the paprika. Cook for 2 minutes longer, then transfer the contents of the skillet to the bean pot. Stir in the saffron with the soaking liquid, the chorizo, and the kale. Bring back to a simmer and cook just until the kale is wilted, about 5 minutes. Season with salt and pepper, stir in the vinegar, and serve hot in warmed soup bowls.

Our home town is Tampa Bay and we always visit our favorite restaurants when we go home. One is La Tropicana Cafe in Ybor City, where we have enjoyed the Devil Crabs and Spanish Bean Soup for many years. This recipe is my version of the soup. Please enjoy. SALUD, Lolly

2 can(s) garbanzo beans aka chick peas (drained & rinsed)
2 large white potatoes (peeled & chopped)
1 large yellow or white onion (peeled & chopped)
1/2 lb slice your favorite cooked ham (chopped)
1 pkg 5.5 oz dry spanish dry chorizos (sliced thin)
2 large cloves of fresh garlic (minced)
1 pkg spanish seasoning (vigo's spanish flavoring)
8 c water
4 tsp tone's chicken base or chicken broth to equal liquid

Steps:

  • 1. You will need a large Saute Pan with Lid.
  • 2. Coat pan with Olive Oil, about 2 Tablespoons.
  • 3. Add chopped potatoes, chopped onion and minced garlic. Saute till soft.
  • 4. Add drained and rinsed beans, chopped ham, sliced chorizos, chicken broth and spanish seasoning.
  • 5. Cover and Simmer all together for 15 minutes, stirring occasionally.
  • 6. Let it rest for the flavors to blend. You will need NO salt if you use chicken base and spanish seasoning. I do add fresh ground Pepper Corn Medley before serving.
  • 7. This is best served with fresh Cuban Bread or French Bread if Cuban is not available. SALUD and HAPPY DAYS. ENJOY.

2 tablespoons bacon fat
1 onion, diced
3 garlic cloves, minced
2 chorizo sausage, casings removed
1 (14 ounce) can beef broth
1 (14 ounce) can chicken broth
1 teaspoon Emeril's Original Essence
2 (15 ounce) cans garbanzo beans, drained
1 (15 ounce) can sliced potatoes, drained
2 bay leaves
1 pinch saffron

Steps:

  • In a medium stock pot, heat bacon grease over medium heat.
  • Cook onion and garlic until soft, being careful not to brown.
  • Crumble chorizo and heat until well cooked.
  • Drain grease and return pan to heat.
  • Add remaining ingredients.
  • Bring to a boil, reduce heat, cover and simmer for 30 minutes.

Bell Pepper - medium to large
Onion - 4 small or medium
Garbanzo beans - 4 or 5 large cans (29 oz?)
Choizo - Goya 3.5 oz pack - 3 each
Potatoes - White or Yellow - 5 - 7 lbs
Ham bone - 1 large, maybe 2
Vigo seasoning packet - 3
oregano - 2 or 3 tsp
Whole tomatoes - 15 oz can - 1 each

Steps:

  • Peel, cut into desired size pieces and cook the potatoes, set aside Dice the onions and green pepper and saute in olive oil I added one pack of the Vigo seasoning packets here slice or dice chorizo (I took the paper off the outside before slicing mine) and add to the onion and pepper When the onion and pepper have softened, add the ham bone(s) with some water and simmer for a few minutes - keep it below a boil add the two remaining packets of Vigo seasoning and one tsp of oregano add the beans (I drained them) add enough water to cover simmer for 15 or 20 minutes add the potatoes add the remaining oregano I cut up the canned tomatoes because I don't like big chunks of tomato... add undrained tomatoes Simmer until it's done to your liking. If it thickens, you can add more water to thin it out. As I said, my Uncle George uses a potato masher or a stick blender to puree some of the beans and potatoes. The last time I made it, I didn't do that, but with the amount of beans and potatoes, it came out very thick.
