Steps:
- Pour oil into 13x9x2-inch broilerproof ceramic baking dish.
- Add tomatoes, turn to coat with oil.
- Sprinkle with salt and pepper.
- Top with parsley and cheese.
- Preheat oven to 400.
- Bake tomatoes just until plump and shiny but not split, about 10 minutes.
- Preheat broiler.
- Broil until tomatoes begin to split and cheese begins to color, about 2 minutes.
- Serve hot or warm.

SPANISH BAKED CHERRY TOMATOES
Adapted from The New Spanish Table by Anya von Bremzen. You could make this with Greek or Italian flavours by omitting the saffron and smoked paprika and replacing them with oregano, basil or rosemary. This can be used as a bruschetta topping, pasta sauce, filling for panini, or a side dish. It's a great use for tomatoes that aren't quite fresh enough for salads.

Steps:
- Preheat oven to 400°F.
- Heat the olive oil and saffron in an ovenproof skillet over medium heat. The skillet should be big enough to hold all the tomatoes in one layer. Add the tomatoes and garlic and cook for one minute.
- Remove pan from heat and stir in paprika and pepper flakes. Scatter thyme and salt over tomatoes.
- Bake until they are plump and tender and just beginning to split.
- Let cool for 5 minutes. Garnish with chopped parsley.

ROASTED CHERRY TOMATOES
This is one of the easiest side dishes I've found. I don't even like most tomatoes, but I love these sweet little cherry tomatoes. This is the basic recipe, but you can also add slivered garlic to the roasting pan and/or chopped fresh basil and Parmesan cheese at the end. Very good with pasta!

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk olive oil, balsamic vinegar, salt, and pepper in a large bowl. Add cherry tomatoes; toss to coat.
- Spread cherry tomatoes in an even layer on a rimmed baking sheet.
- Roast until skins are slightly shriveled, 35 to 40 minutes.

ROASTED CHERRY TOMATOES
Steps:
- Preheat the oven to 400 degrees F.
- Toss the tomatoes lightly with olive oil on a sheet pan. Spread them out into one layer and sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
- Transfer the tomatoes to a serving platter and sprinkle with basil leaves and sea salt. Serve hot or at room temperature.
