- 1. Hard boil your eggs.
- 2. While they are boiling, chop or grate the Spam, celery, carrot, onion and cheese into a large bowl.
- 3. Add the chopped eggs, dill relish, mayo, salt, and pepper. Stir together and refrigerate.
- 4. Great spread on wheat bread with crispy lettuce or on crackers for an appetizer.

From Creamettes & Spam I have had this recipe that I cut from a magazine for I probably 20 years. To tell the truth, never made it. We love Spam, yes it's true so I though and it just sound good. Hope I will get around to making it some day. I think the colored noodles would be fun with all the other colors.

- Cook macaroni according to directions. Drain, do not chill.
- While hot drizzle with oil and vinegar.
- Add onion, seasonings and cheese, toss well.

One day I made the salad and another friend took a bite and said, "This would taste magnificent if you added Spam to it. So I added Spam and now it's a hit when I take it to parties or serve it to my lunch quests.

SPAM AND EGG SALAD/ SPREAD
My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

- Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.

SPAM TURKEY SALAD SPREAD

- Stir the first 9 ingredients together in a small bowl. Using the largest holes (6mm) of a 4-sided box grater, grate the turkey into a larger bowl. Pour dressing mixture over grated turkey and thoroughly combine using spatula or spoon. Cover and chill overnight or at least 3 hours before serving. Suggestion: Add minced onion or celery, if desired. Note: I use a box grater because of the simplicity and ease of clean up. It results in a smooth spread when combined with the dressing. When there are remaining turkey chunks too small to grate, I simply mince with a knife and add to the grated turkey.

- Heat a large skillet over medium-high heat. Fry the meat in the preheated skillet until it is golden brown and crispy. Remove from skillet and drain on paper towels. Cook the mushrooms in the same skillet until softened. Remove from skillet and set aside. Crack the eggs into the skillet and cook while stirring until they are cooked through and scrambled. Turn off the heat.
- Divide the red leaf lettuce and baby spinach leaves between two large salad bowls. Top the salad greens with the fried luncheon meat, mushrooms and scrambled eggs. Sprinkle both salads with crumbled feta cheese, Parmesan cheese, chopped peanuts, and dill. Arrange the anchovy fillets across the top of the salads and drizzle two tablespoons of Ranch dressing on each serving. Garnish with croutons.
