Aperol Spritzers are very popular right now. So, we came up with our own version. There aren't as many flavors in ours as in the store bought version. 1 valencia, hamlin or seville oranges
28 g vodka
397 g unsweetened orange juice
28 g rhubarb
4 tsp sugar
425 g dry sparkling wine
142 g club soda
ice

Steps:

  • 1. Chop rhubarb into crescents
  • 2. Peel one orange leaving on the white pith
  • 3. Slice the second orange. Cut the slices in half to form crescents.
  • 4. Add peel and pith of one orange, chopped rhubarb, orange juice and sugar to a pot.
  • 5. Heat on the lowest setting on your stove.
  • 6. When the mixture is warm, add the vodka and simmer for an additional 20 minutes.
  • 7. Stir to make sure that sugar is dissolved and to ensure that mixture doesn't get too hot. You don't want steam.
  • 8. After 20 minutes, remove mixture from heat and strain.
  • 9. Refrigerate until chilled.
  • 10. Add ice to glass.
  • 11. Add sparkling wine, club soda and 3 ounces of the orange rhubarb mix to the glass.
  • 12. Garnish with an orange wedge and serve.
