Spam® Fried Rice image

A simple recipe to use up all your pantry ingredients and the Spam® in the back of your cupboard.

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
1 tablespoon sesame oil
1 onion, diced
4 cups leftover cooked rice
1 cup frozen peas and carrots
4 large eggs, beaten
2 tablespoons soy sauce
½ tablespoon Sriracha
4 large eggs
salt and ground black pepper to taste
1 tablespoon shredded nori, or to taste
1 tablespoon sliced scallions, or to taste
1 teaspoon sesame seeds, or to taste
1 teaspoon black sesame seeds, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Add Spam® and fry until lightly browned, 5 to 7 minutes. Transfer to a plate.
  • Heat sesame oil in the same pan until shimmering, about 1 minute. Add onion and saute until it softens slightly, about 5 minutes. Reduce heat and add rice and frozen vegetables; mix and fry until heated through, about 5 minutes. Push the rice mixture to the sides or edges of the pan, add beaten eggs to the center, and scramble until curds form, 3 to 4 minutes.
  • Stir half of the Spam® back into the pan and mix the eggs in with the rest of the rice mixture. Add soy sauce and Sriracha. Mix and remove from the heat.
  • Crack remaining eggs into a skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes. Season with salt and pepper.
  • Place fried eggs on top of the fried rice, add reserved Spam®, and garnish with nori, scallions, and sesame seeds.

I really like fried rice and was searching and searching for a recipe that I liked. My brother is a college student and one of his friends made some for dinner the night before and I snitched a bite the next day (I tried it cold, right from the fridge) and it was the best I have ever had (and it was cold)! His friend didn't have a written recipe to give me (he made the recipe up and just makes it), so I finally talked him into coming to my house to show me while I wrote the recipe down. My brother told me that there would be 5 of them coming over and to have the rice cooked and cooled. I had no idea how much rice to cook, so I made 4 1/2 cups (dry) rice. It made a ton, but after 7 of us ate (most had 2 bowls full) there was only 1 bowl as left overs. I am sure you can adjust this to make less. I had the original Kikkoman soy sauce to use and it was saltier and less sweet as the Aloha Shoyu that my brother's friend nomally uses. The serving amounts is a large range because you can have it as a meal like we did, or as a side dish.

4 1/2 cups dry rice, cooked and cooled (preferably day old)
6 -7 eggs, with a splash water, scrambled
1 (11 ounce) can spam lite, diced
1 yellow onion, diced
12 ounces frozen peas and carrots, thawed
1 cup aloha shoyu soy sauce (or Kikkoman soy sauce, just use a bit more sugar to sweeten)
4 -5 tablespoons sugar, for aloha shoyu or 6 -7 tablespoons for Kikkoman soy sauce
4 -5 garlic cloves, minced
2 tablespoons oyster sauce
1 teaspoon sesame oil

Steps:

  • Scramble eggs in about 1/2 tablespoon of vegetable oil in a wok on medium high heat. When done, set aside in a bowl.
  • Place another tablespoon of oil in wok and sauté onions and Spam on medium high heat. When golden & starting to crisp on the outsides add the thawed peas and carrots.
  • Combine ingredients for the sauce and stir until sugar is dissolved, tasting along the way to be sure it is sweet enough for you. Add to the vegetables and boil on high until the sauce reduces to a glaze.
  • Slowly add the cooled rice and eggs to the vegetable mixture, being sure to break up any clumps of rice and so the coloring is even. Warm the rice through and serve.

½ Spam®, (1 12 ounce can (340 G))
2 tablespoons olive oil, divided
1 carrot, peeled and chopped
¼ cup onion, diced
1 teaspoon fresh ginger, minced
¼ cup frozen peas
1 clove garlic, minced
1 cup white rice, cooked
1 tablespoon soy sauce
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Dice the Spam into medium cubes.
  • In a large cast iron skillet, heat 1 tablespoon of olive oil over medium heat. Add the Spam and cook until golden brown and crispy, stirring often, 3-5 minutes. Remove the Spam from the pan and set aside.
  • Add the remaining tablespoon of olive oil to the pan. Add the carrots, onion, and ginger and cook until softened, about 5 minutes.
  • Add the peas and garlic and cook until the garlic is fragrant, about 1 minute.
  • Add the rice, soy sauce, salt, pepper, and crispy Spam and stir until heated through, another minute or 2.
  • Serve warm.

2 tablespoons salted butter
2 tablespoons olive oil
One 12-ounce can Spam, diced
1 orange bell pepper, diced
1 red bell pepper, diced
4 scallions, sliced, whites and greens separated
2 cloves garlic, minced
1 tablespoon minced ginger
3 cups leftover rice
One 8-ounce can pineapple chunks, drained
1 cup frozen peas, thawed
1/4 cup low-sodium soy sauce
2 tablespoons honey
1 lime, juiced
2 tablespoons sesame seeds
1/2 cup mayonnaise
2 tablespoons BBQ sauce
Dash sesame oil
Asian chile sauce, to taste

Steps:

  • Heat the butter and oil in a large skillet over medium heat. When the butter has melted and the oil is hot, add the Spam and bell peppers. Cook until the Spam becomes crispy, about 5 minutes.
  • Add the whites of the scallions, garlic, ginger and rice. Stir together and cook until the rice begins to crisp and brown, 3 to 4 minutes. Add the pineapple, peas, soy, honey and lime juice. Stir together and continue to cook until everything comes together, another minute. Add to a platter and sprinkle over the sesame seeds and reserved scallion greens.
  • For the spicy BBQ aioli: Quickly mix together the mayonnaise, BBQ sauce, sesame oil and Asian chile sauce. Drizzle over the fried rice before digging in.

2 Tbsp vegetable oil, divided
1 egg, slightly beaten
ground black pepper, to taste
1/2 c chopped spam
1 clove garlic, peeled and minced

1 Tbsp soy sauce, or more to taste
1/3 c cooked vegetables (peas, diced carrots, corn, etc)
2 green onions, thinly sliced

Steps:

  • 1. Heat 1 tablespoon oil in a large skillet or wok on high heat. Add egg, salt and pepper and lightly scramble. Remove to a plate.
  • 2. Add remaining oil to pan. When hot, add Spam and garlic and cook until lightly brown-DO NOT BURN GARLIC!
  • 3. Add rice (break up any chunks first). Stir in soy sauce and keep stirring until rice is heated through.
  • 4. Add cooked vegetables, green onions, and cooked eggs. Heat through and serve.

I use my own homemade broth for a slightly healthier, cheaper alternative, but boxed broth is just as delicious! Great with your favorite hot sauce, or served with fried eggs.

½ large white onion, chopped

Steps:

  • Heat 2 tablespoons olive oil and butter in a medium saucepan over medium heat. Add onion and cook until soft and golden, 6 to 7 minutes. Add garlic and cook for 1 minute more. Stir in rice until coated and lightly fry for 2 minutes. Pour in broth and season with pepper. Bring to a boil; reduce heat to a gentle simmer and cover. Cook until rice is tender, about 18 minutes.
  • Heat remaining olive oil in a large skillet over medium-high heat. Fry luncheon meat, stirring constantly, until crispy and golden on the edges, about 5 minutes. Add coleslaw and cook until wilted, about 6 minutes. Remove from heat.

1 (15 1/2 ounce) can black-eyed peas
1 (12 ounce) can Spam
1 cup uncooked rice
2 cups water
half a medium onion, diced
1 teaspoon minced garlic
cajun seasoning

Steps:

  • Heat up some bacon grease in a pot, add the diced onion and garlic, cover and saute slowly on low heat.
  • While your onion is cooking, cut the Spam into bite-sized pieces, then add those pieces to the pot. Continue to cook on low heat for about ten minutes, stirring occasionally.
  • Add the beans, water and rice, and finally, your cajun seasonings (to taste), bring to a boil. Cover and simmer for 20-25 minutes until rice is done.

2 pkg frozen broccoli, thawed & drained
2 can(s) spam or off brand treet
2 c minute boiled rice
1 jar(s) cheese sauce, lg. ragu or favorite kind
2 can(s) c ream of chicken soup
2 can(s) cream of chicken and broccoli soup

Steps:

  • 1. First, put on a sauce pan of boiling water for broccoli to be boiled in till tender, reserve some of the water, when you drain.
  • 2. In a skillet with Pam spray, and low heat, cook bite size chunks of Spam for about 5 minutes.
  • 3. Boil Minute Rice and cover to let stand 5 minutes.
  • 4. In a smaller sauce pan, heat the soups with 1 can milk and cheese sauce.
  • 5. In baking dish or cake pan, 9 x 13 inch. Pour the rice, Broccoli, Spam and Soup mixture. Mix altogether, may need to add a wee bit more milk to be more moist. Add S & P. We like our's to be creamy moist!
  • 6. Bake in preheated oven at 350 till bubbly. About 25-30 minutes. Remove and add to meal. Enjoy!

2 cups ketchup (more or less to taste)
3 -4 cups cooked rice (day old)
2 tablespoons canola oil
2 tablespoons sesame oil
1 medium onion, chopped
4 eggs
1/4 cup of chopped green onion
1 dash Tabasco sauce (optional)

Steps:

  • Chop the Spam into 1/2 inch pieces, fry with the cooking oil on medium/high heat.
  • Add the chopped round onion, cook until the onions are clear.
  • Add the sesame oil.
  • Immediately add the cold rice. Keep stirring and tossing to heat up the rice, when the rice starts to get hot and loosen up.
  • Slowly add the ketchup. Keep stirring until the rice is covered with the ketchup and until the desired taste is achieved. When done, set aside.
  • Grab another frying pan and fry the eggs. When the eggs are done, scoop some of the rice in a bowl, top with an egg and garnish with the chopped green onion.
  • Serve with Tabasco.
  • This recipe typically does not work too well with freshly cooked rice.

2 pounds boar, cut into 2-inch cubes, brined in salted water for 1 hour
1/2 cup lapsang soochong tea
1/2 cup rice
1/2 cup sugar
2 onions, 1 inch dice
2 carrots, peeled, 1 inch dice
2 ribs celery, 1 inch dice
1 head garlic, broken into cloves
1/2 cup soy sauce
1 cup raw sugar
2 cups red wine
Water, to cover
1/2 pound local mesclun
6 scallions, sliced, white and green separated
1 cup Spam, 1/2-inch dice
1 cup white pineapple, 1/2-inch dice
4 cups cooked long grain rice
Salt and black pepper, to taste
Canola oil, to cook

Steps:

  • Place the boar in a bamboo steamer. Line wok with foil and mix tea, rice and sugar together and place on foil. Place the bamboo steamer over the wok. Cover and seal with wet towel. On low heat, smoke the mixture for 20 to 30 minutes then turn off heat and let stand for 20 more minutes. Meanwhile, in a stock pot coated with oil, saute the onions, carrots, celery and garlic. Add the smoked boar. Season and add the soy, sugar, wine, and water, to cover. Check for seasoning and bring to a simmer. Simmer for 1 1/2 to 2 hours until meat is extremely tender. Right before serving, add the greens to wilt. In a wok or large saute pan, coat lightly with oil and saute the scallion whites and add the Spam and pineapple. Add the rice and season. Plating: In large bowl, place a mound of fried rice and top with boar. Garnish with scallion greens.

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Stir together the luncheon meat, kidney beans with liquid, butter, and onion flakes in a large saucepan. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 15 minutes, stirring occasionally. Spoon the beans over the cooked rice to serve.

4 oz spam, cubed
4 oz bacon, uncooked (cut in strips)
1/3 lb shrimp, cooked
3/4 c frozen green peas & carrots
1/2 small onion, chopped

1 large egg
1/4 c soy sauce
2 tsp black or white pepper
1 Tbsp sesame oil, toasted
2-3 Tbsp green onions, chopped

  • 1. whisk eggs in a mixing bowl. in a large heated skillet/wok, add 1 TBSP peanut oil. pour egg mixture in skillet/wok. cook for 1 minute carefully flip and cook another minute until done. remove from skillet. roll and slice into pieces. add bacon to skillet/wok fry until half way done. add spam and continue to fry until bacon is crispy. add garlic, onion & ginger. stir-fry until onion are almost translucent. add rice to skillet/wok. carefully stir-fry for a couple of minutes. add peas, carrots, soy sauce, sesame oil, pepper and stir-fry for 1 minute add egg, shrimp and green onion. stir-fry for 1-2 minutes until everything is combined well..plate up and enjoy!

3 c leftover, cold white rice
3 large eggs, scrambled
1 1/2 tsp cane sugar or brown sugar
1 1/2 tsp dark soya sauce
2 green onions, white part only, finely chopped
1 large carrot, finely chopped
1/4 large sweet white onion, finely chopped
1/2 Tbsp finely chopped, peeled, fresh ginger
2 large garlic cloves, finely chopped
vegetable oil
1/2 can(s) spam, cut into small cubes
1 Tbsp mirin
1/2 tsp sesame oil
1 Tbsp dark soya sauce
1/2 Tbsp rice wine vinegar
1 c frozen, spring peas
3 green onions, sliced thin
1 c fresh pineapple, coarsely chopped
season with salt and black pepper (optional)
1/4 c chopped macadamia nut (garnish)
1/8 c toasted coconut, shredded (garnish)

Steps:

  • 1. Remove leftover rice from fridge and set aside until needed.
  • 2. In a small bowl lightly scramble the egg, sugar, soya sauce and green onion. In a pan add some oil or butter and softly scramble the eggs, then remove from heat and set aside until needed.
  • 3. Brown the spam in a little oil and then remove from heat, set aside until needed.
  • 4. In a large pan, saute the carrot, onion, ginger and garlic until soft and tender.
  • 5. Now add the sesame oil, rice and peas, mix well.
  • 6. Mix in the mirin, rice vinegar and soy sauce, mix well and add the spam, egg, pineapple and green onion. Taste and season with sea salt and freshly ground black pepper if necessary.
  • 7. Garnish with macadamia nuts and or toasted coconut and serve immediately. .

1/3 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
3 1/4 cups water
20 ounces Spam
1 large cucumber
4 sheets Japanese roasted nori

Steps:

  • cook the rice and the rice water in a rice cooker.
  • when rice is done, wait for the rice to cool.
  • after rice is cooled, add the rice vinegar, salt, and sugar and mix thoroughly.
  • place the seaweed sheets onto the bamboo sheet and spread a layer of the sushi rice onto the seaweed.
  • add the cooked spam and chopped cucumber onto the rice.
  • using the bamboo sheet, roll the sheet.
  • cut the sushi roll into desired pieces.
