GRANDMA MCDOWELLS SPAM CASSEROLE

My husbands grandmother use to make this casserole it was so easy and tasted great, also inexpensive to make.

2 c macaroni, elbow or shell, uncooked
1 can(s) cream of mushroom soup
1/4 lb processed cheese, cubed ( like velveeta )
1/2 c milk
1 medium chopped onion
1 medium chopped green bell pepper
1/4 tsp pepper
1 can(s) spam , cubed.

Steps:

  • 1. Cook macaroni as directed on package.
  • 2. Combine soup, milk, green pepper, onion and pepper.
  • 3. Place over low heat.
  • 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
  • 5. Pour mixture into a 1 1/2 quart casserole dish.
  • 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.

A great simple casserole to make and it makes a ton!!! My husband doesn't like Spam but LOVES this!!! My grandmother used to make this for us on Friday nights after she got off of work. Its been a favorite ever since. You can substitute shredded cheese for Velvetta.

1 (8 ounce) can cream of mushroom soup

  • Boil noodles according to directions.
  • Chop Spam into small cubes.
  • Chop Velvetta into small cubes.
  • Mix cream of mushroom and cream of chicken with Spam.

1 (12 ounce) can Spam, classic
5 medium potatoes, sliced (very thin)
1 mild red onion, chopped
1 (15 ounce) jar Cheez Whiz
10 1/2 ounces cream of mushroom soup
1 (12 ounce) can evaporated milk
salt and pepper, & season salt taste

Steps:

  • Slice potatoes into round slices, very thin.
  • Chop onion and spam into small chunks and combine with potatoes. Salt and pepper these.
  • Place potatoes & onions in a casserole dish.
  • Mix Cheze-Whiz, soup, milk and Season All or Season Salt, in sauce pan and heat until chez-whiz is melted.
  • Pour over the potatoes and spam.
  • Bake for 1 hour at 375 degrees, maybe longer until potatoes are tender.

1 (16 ounce) package tri-color rotini pasta
1 (10.5 ounce) can cream of mushroom soup
¾ cup ketchup
1 (3 ounce) can chopped green chile peppers
½ onion, chopped
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
2 cups shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Place the cooked pasta into a large mixing bowl, and add the cream of mushroom soup, ketchup, green chiles, onion, and luncheon meat. Pour into a 9x13 inch baking dish, and evenly sprinkle with the Cheddar cheese.
  • Bake in the preheated oven until the casserole is hot and the Cheddar cheese has melted, about 10 minutes.

1 cup celery, chopped

1/2 teaspoon thyme
1/2 teaspoon onion powder
1/4 teaspoon dried celery flakes

Steps:

  • Cook pasta 2 minutes under package directions. Drain.

1 potato
1/2 cup onion
1/2 cup pineapple (sliced or chunks)

Steps:

  • Slice a washed, but not peeled potato, and mix thoroughly with diced onion and olive oil in bottom of a one and a half casserole dish.
  • Follow with a layer of sliced Spam.
  • Top with the pineapple.
  • Mix mustard, pineapple juice and pepper in a small bowl and pour over the other ingredients.

  • 1. Cook the Kraft Macaroni and Cheese by following the instructions on the back of the box.
  • 2. Drain the water off of whole kernel corn. Rinse the corn off with cold water. Diced up the Spam.
  • 3. When the Macaroni and Cheese is done, drain the water off in a straining pot. Add the powdered cheese, Spam, corn, tomato paste, and tomatoes. Mix everything together and let it simmer on top of the stove for about 20 minutes.

1 cup quick-cooking grits
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), grated
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) container sour cream
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring the water to a boil in a large saucepan over high heat. Slowly pour the grits into the water while stirring constantly. Reduce heat to medium-low, and simmer until the grits are tender and thick, 3 to 4 minutes. Stir the grits constantly as they cook. Set aside.
  • Heat a skillet over medium-high heat, and sprinkle in the grated luncheon meat. Cook, turning occasionally, until the luncheon meat has browned. Pour off any excess grease, and stir half of the luncheon meat into the grits along with the tomatoes, sour cream, and half of the Cheddar cheese. 2 pkg frozen broccoli, thawed & drained
2 can(s) spam or off brand treet
2 c minute boiled rice
1 jar(s) cheese sauce, lg. ragu or favorite kind
2 can(s) c ream of chicken soup
2 can(s) cream of chicken and broccoli soup

Steps:

  • 1. First, put on a sauce pan of boiling water for broccoli to be boiled in till tender, reserve some of the water, when you drain.
  • 2. In a skillet with Pam spray, and low heat, cook bite size chunks of Spam for about 5 minutes.
  • 3. Boil Minute Rice and cover to let stand 5 minutes.
  • 4. In a smaller sauce pan, heat the soups with 1 can milk and cheese sauce.
  • 5. In baking dish or cake pan, 9 x 13 inch. Pour the rice, Broccoli, Spam and Soup mixture. Mix altogether, may need to add a wee bit more milk to be more moist. Add S & P. We like our's to be creamy moist!
  • 6. Bake in preheated oven at 350 till bubbly. About 25-30 minutes. Remove and add to meal. Enjoy!

1/2 cup pumpernickel breadcrumbs
3 german stick ducks eggs, beaten
8 fluid ounces goat's milk
1/2 lb german Tilsit cheese or 1/2 lb Limburger cheese, cubed
6 whole dill pickles, sliced lengthwise
1 medium onion, chopped
1 lb german fries fried potato (like French fries, but deep-fried in melted Bratwurst fat instead of oil)

Steps:

  • Make sure that your German fries have been made from Blah potatoes, and keep them warm.
  • Grind the Spam, cheese, onion and pepper together.
  • (Grinding makes the dish easier to eat for those guest trolls who left their dentures at home).
  • Combine with the Pumpernickel crumbs, eggs, and milk.
  • Grease a large casserole dish with a generous amount of the Bratwurst fat.
  • Place the Spam mixture in the casserole, and then arrange the sliced dill pickles on top.
  • Bake, covered, at 350°F for 1¼ hours.
  • Uncover and bake 15 minutes more to brown.
  • Serve with German fries in individual emesis basins.

...heh... heh... heh..... Hey! Some folks really like Spam! I like Treet even a little better because it's sweeter. The recipe comes off the back of the del Pino's shell macaroni box. If you don't like canned Spam or Treet, then I would look elsewhere for a casserole more to your liking but, if Spam is your thing, this is easy and tasty! You could melt some extra cheese on top if you wished to do so. This is probably a great college student recipe. By the way, THEY didn't call it "Spam Fantasy" -- they called it "Shell Bake", which I thought sounded pretty unexciting. I was just being artistic. pat.

1 box 8 1/2 oz. size cornbread mix
1 can(s) 8 oz. whole kernel corn, drained
1/2 c cheddar cheese, shredded

Steps:

  • 1. Cut Spam into 8 slices, then the slices into 16 triangles.
  • 2. Arrange 8 triangles spoke fashion into the bottom of a greased 9 inch round cake pan.
  • 3. Prepare muffin mix as directed on package, stir in the corn and cheese. pour on top of Spam wedges. Arrange the remaining 8 triangles on top of the batter, also in a spoke wheel fashion.
  • 4. Bake for 25-30 minutes at 400* until cornbread is golden brown. Serve in wedges with warm syrup.. Enjoy!
