BROCCOLI CHEDDAR CRESCENT RING

Your favorite comfort soup finds a cozy home in crescent dough. This shareable ring is perfect as a vegetarian option for a big crowd.

4 cups finely chopped broccoli florets (about 13 ounces)
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
6 ounces cream cheese, diced
Nonstick cooking spray, for greasing the pan
Two 8-ounce tubes refrigerated crescent roll dough
5 slices Cheddar, cut in half (about 5 ounces)
Ranch dressing, for serving

Steps:

  • Preheat the oven to 375 degrees F. Add the broccoli, oil, crushed red pepper, garlic and 2/3 cup water to a large skillet and stir until combined. Cover and bring to a boil. Let the broccoli steam until bright green and just crisp tender, about 3 minutes. Remove the lid and let the water continue to boil until it is completely evaporated, 3 to 4 minutes. Stir in 1/2 teaspoon salt and a few grinds of pepper and transfer to a medium bowl. Let cool slightly, about 15 minutes. Stir the cream cheese.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the broccoli mixture over the short ends of the triangles closest to the ramekin. Cover the broccoli with the cheese slices and remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the broccoli mixture).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with Ranch dressing for dipping.

2 pkg frozen broccoli, thawed & drained
2 can(s) spam or off brand treet
2 c minute boiled rice
1 jar(s) cheese sauce, lg. ragu or favorite kind
2 can(s) c ream of chicken soup
2 can(s) cream of chicken and broccoli soup

Steps:

  • 1. First, put on a sauce pan of boiling water for broccoli to be boiled in till tender, reserve some of the water, when you drain.
  • 2. In a skillet with Pam spray, and low heat, cook bite size chunks of Spam for about 5 minutes.
  • 3. Boil Minute Rice and cover to let stand 5 minutes.
  • 4. In a smaller sauce pan, heat the soups with 1 can milk and cheese sauce.
  • 5. In baking dish or cake pan, 9 x 13 inch. Pour the rice, Broccoli, Spam and Soup mixture. Mix altogether, may need to add a wee bit more milk to be more moist. Add S & P. We like our's to be creamy moist!
  • 6. Bake in preheated oven at 350 till bubbly. About 25-30 minutes. Remove and add to meal. Enjoy!

This sounds really strange but my honeybunny threw it together one evening when I wasn't feeling so hot and it was awesome!!! Hope you like!

2 tablespoons olive oil
1 (12 ounce) can Spam, cubed
1 head broccoli
5 fresh mushrooms, sliced
4 scallions, sliced
1/4 cup dale's seasoning
1 lb pasta, bow ties are my favorite
2 tablespoons butter or 2 tablespoons white truffle butter

Steps:

  • Cook Pasta to desired doneness.
  • In a large skillet heat olive oil, add Spam, onions, broccoli & mushrooms (whatever kind you prefer), stir to coat, cover & cook until the broccoli is done to your taste (usually about 5 minutes for us, gives it a lovely intense green color).
  • Add cooked pasta, Dale's & truffle butter (you can use regular butter if you don't have the truffle butter but if you can get your hands on some it really makes a difference! D'artagnon sells it on Amazon.com if you can't find locally), stir to combine, cover & cook for an additional 3 or 4 minutes & serve. Make sure not to add the Dale's any sooner as it will be too strong and take over the flavor of the veggies.
  • Serve.

1 cup fully cooked luncheon meat (such as SPAM®), grated
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the three slices of bread onto a baking sheet. Stir together the luncheon meat and Cheddar cheese in a bowl. Press the meat and cheese mixture on top of each slice of bread.
  • Broil in the preheated oven until the sandwiches are hot and the topping is beginning to brown on top, 3 to 5 minutes.

This is my neighbor's very simple, but good take off on a Pampered Chef recipe, using their large round stone. I have made this quite a few times since she shared her version with me. I have guessed at the amounts and you can too. It is very easy to eyeball. If you have mix left over, it is even good cooked in a small casserole without the rolls.

1 (8 ounce) can refrigerated crescent dinner rolls
2 cups fresh broccoli florets
8 -10 ounces canned chicken, drained
1 cup cheddar cheese, shredded
1/4-1/2 cup mayonnaise (just enough for the mix to stick together some) or 1/4-1/2 cup salad dressing, adjust to your liking (just enough for the mix to stick together some)
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • Unroll the crescent dough and place in a circle on round stone, with the wide ends in the middle and the pointed ends to the outside.
  • You should have an circle in the middle of the stone.
  • You will need to overlap the wide ends a bit to make a circle.
  • Mix the remaining ingredients in a bowl, using more mayo if mixture appears to be dry.
  • Place the mixture in a circle on the crescent rolls on the wide ends.
  • Fold the pointed ends over the mixture to the middle of the stone.
  • Tuck the ends under.
  • Bake for 25-30 minutes, or until the crescent rolls are golden brown.
  • Slice and serve.

1 garlic clove, finely grated
3 Tbsp. toasted sesame oil
3 Tbsp. unseasoned rice vinegar
1 Tbsp. finely chopped mint or cilantro
Kosher salt, freshly ground pepper
Assembly
1 large or 2 small heads of broccoli (about 1 lb.), ½" trimmed from stem
1 Tbsp. tamari or low-sodium soy sauce
1 Tbsp. finely grated peeled ginger
¼ tsp. crushed red pepper flakes
¼ tsp. ground cinnamon
2 Tbsp. vegetable oil
2 shallots, thinly sliced crosswise, rings separated
Kosher salt
1 (12-oz.) can Spam classic, sliced into ¼"-thick planks, planks halved lengthwise
1½ cups cooked farro or brown rice

Steps:

  • Vinaigrette
  • Whisk garlic, oil, vinegar, and mint in a small bowl to combine; season with salt and pepper. Set aside.
  • Assembly
  • Hold broccoli so crown is resting against the cutting board and stem is pointing up and slice through stem all the way down through the crown to create ¼" -thick planks. Working one at a time, lay planks flat against the board and slice lengthwise through stems to create ¼"-thick strips with florets attached on top.
  • Mix tamari, ginger, red pepper flakes, cinnamon, and 2 Tbsp. water in a small bowl to combine. Set tamari sauce aside.
  • Heat 2 Tbsp. vegetable oil in a large skillet over medium-high. Cook shallots, stirring occasionally, until brown and crisp, about 5 minutes. Using a slotted spoon, transfer to paper towels to drain and immediately season with salt.
  • Set skillet with oil back over medium-high and cook Spam in a single layer, turning halfway through, until golden brown and crisp, 8-10 minutes. Transfer to a plate.
  • Cook broccoli in same skillet, stirring occasionally, until lightly browned and crisp-tender, about 8 minutes. Mix in farro and reserved tamari sauce and cook, stirring occasionally, until heated through, about 2 minutes. Mix in Spam and transfer to a platter or plates. Drizzle reserved vinaigrette over and top with crispy shallots.

1-1/2 cups shredded Swiss cheese
1/4 pound boneless fully cooked ham, cubed

2 tablespoons Dijon mustard
1 teaspoon lemon juice

Steps:

  • Unroll crescent roll dough and place triangles on a 12-in. pizza pan, forming a ring with pointed ends facing outer edge of pan and wide ends overlapping. Lightly press wide ends together. , In a large bowl, combine the remaining ingredients; spoon over wide ends of rolls. Fold points over filling and tuck under wide ends (filling will be visible). , Bake at 375° for 20-25 minutes or until golden brown.
