I whipped up this pasta dish to satisfy a craving for olives and feta cheese. Add artichokes or spinach for variation.

8 ounces uncooked whole wheat spaghetti
1 tablespoon olive oil
2 cloves garlic, minced
8 ounces crimini mushrooms, sliced
2 small zucchini, sliced
dried oregano to taste
salt and pepper to taste
12 black olives, pitted and sliced
1 ounce crumbled feta cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the olive oil in a skillet over medium heat, and saute the garlic 2 minutes. Mix in mushrooms and zucchini. Season with oregano, salt, and pepper. Stir in olives, and cook until heated through. Place pasta in the skillet, toss to coat, and continue cooking about 2 minutes. Top with feta cheese to serve.

This impressive looking torte is deceptively easy to make and a perfect dish to serve when you're entertaining. If you like ripe olives, add a can (four ounces) of sliced ripe olives to the spaghetti mixture. Serve with whole green beans and warm crusty bread.

1 package (16 ounces) spaghetti
1/2 cup grated Parmesan cheese
1/2 cup ricotta cheese
1 tablespoon Italian seasoning
2 eggs, beaten
1/4 cup chopped fresh or 1 1/2 teaspoons dried basil leaves
2 medium tomatoes, each cut into 5 slices
4 slices (1 ounce each) provolone cheese, cut in half

Steps:

  • Heat oven to 350°. Spray springform pan, 9x3 inches, with cooking spray. Cook and drain spaghetti as directed on package. Rinse with cold water; drain.
  • Toss spaghetti, Parmesan cheese, ricotta cheese, Italian seasoning and eggs until spaghetti is well coated.
  • Press half of the spaghetti mixture in bottom of pan. Sprinkle with half of the basil. Layer with half of the tomato and cheese slices. Press remaining spaghetti mixture on top. Sprinkle with remaining basil. Layer with remaining tomato and cheese slices.
  • Bake uncovered 30 minutes until hot and light brown. Let stand 15 minutes. Remove side of pan. Cut torte into wedges.

2 teaspoons olive oil
1 teaspoon dried oregano
1 clove garlic, minced
3 cups diced tomatoes
1/2 cup sliced green onion
1/4 cup chopped fresh parsley, divided (I usually subsitute dried parsley)
2 tablespoons lemon juice
8 ounces thin spaghetti, cooked (about 4 cups cooked)
1 cup crumbled feta cheese

Steps:

  • Heat oil in a large nonstick skillet over medium high heat.
  • Add oregano and garlic, and saute 30 seconds.
  • Add tomato, green onions, 2 tablespoons parsley, and lemon juice; cook 2 minutes or until heated.
  • Combine tomato mixture, spaghetti, and 3/4 cup cheese, toss gently.
  • Top with remaining 1/4 cup cheese and 2 tablespoons parsley, and sprinkle with pepper, if desired.
  • Serve at room temperature or store in a an airtight container in refrigerator.

8 ounces spaghetti
1/2 cup oil-packed sun-dried tomatoes, drained and chopped
4 large eggs
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
3/4 cup grated Parmesan
3/4 cup grated fontina
1 tablespoon unsalted butter
1 tablespoon olive oil

Steps:

  • Cook the spaghetti in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain. Toss with the sun-dried tomatoes. Set aside to cool completely otherwise the hot pasta could curdle the eggs when you add them later on.
  • In a large bowl, whisk the eggs, salt, and pepper, Parmesan, and fontina to blend. Add the cooled spaghetti mixture; toss to coat.
  • Preheat the broiler. Melt the butter and oil in a 9 1/2-inch-diameter nonstick skillet over medium heat. Transfer the spaghetti mixture to the skillet, pressing to form an even layer. Cook until the bottom is golden brown, about 3 minutes. Transfer the skillet to the broiler. Broil until the top is golden brown, about 5 minutes. Cool in the skillet to room temperature.
  • Invert the torta onto a platter. Cut into wedges and serve at room temperature.

A great summer pasta dish. The Feta cheese is a wonderful match for the tomatoes, and the heat of the spaghetti and garlic oil makes the cheese soft. This is a recipe you can change to your own likes. Try using Mozzarella instead of Feta, or using fresh basil, or fresh herbs instead of parsley.

1 1/2 lbs tomatoes, seeded and cut into 1/2-inch pieces (about 3)
1/2 cup kalamata olives or 1/2 cup other black olives, pitted
1/4 lb feta cheese, crumbled
3 tablespoons capers, drained
3 tablespoons parsley, chopped
1/4 teaspoon salt and pepper
3/4 lb spaghetti
6 tablespoons olive oil
3 cloves garlic, minced

Steps:

  • In a large glass or stainless steel bowl, combine the tomatoes, olives, feta, capers, parsley, salt and pepper.
  • Cook the spaghetti in salted water until just done, about 12 minutes.
  • Drain.
  • While spaghetti is cooking, heat olive oil in a medium frying pan over medium-low heat.
  • Add the garlic and cook, stirring, for 1 minutes.
  • Add the cooked pasta and garlic oil to the tomato mixture and toss.

1 lb uncooked spaghetti
1/2 cup grated parmesan cheese
1/2 cup ricotta cheese
1 tablespoon italian seasoning
4 egg whites
1/4 cup chopped fresh basil
2 tomatoes, chopped (can substitute canned tomatoes)
4 slices provolone cheese, cut into fourths (can substitute motzerella)

Steps:

  • Spray a 9 x 3 inch springform pan with cooking spray.
  • Cook spaghetti according to package directions.
  • Rinse spaghetti with cold water and drain.
  • In a large bowl, combine Parm with ricotta cheese, Italian seasoning and egg whites.
  • Toss with cooked/rinses spaghetti to coat.
  • Press half the spaghetti mixture the pan.
  • sprinkle with half the basil.
  • top with half the tomatoes
  • place half the provolone cheese on top of tomatoes.
  • Repeat last 4 steps with remaining half of ingredients.
  • Bake in preheated 350 (F) degree oven for 30 minutes.
  • Let stand about 15 minutes.
  • Remove sides of pan.
  • Transfer to a serving platter, cut into wedges to serve.

1 pound dried spaghetti
1/4 cup olive oil
1 1/4 cups mixed olives, pitted and halved
1/2 tablespoon red pepper flakes, plus more if desired
3 cups tomato sauce, recipe follows
1/2 cup grated Parmesan
1/2 cup basil leaves, shredded
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • In a large pot, bring 6 quarts of salted water to a boil. When water comes to a boil, add pasta, stirring constantly for the first minute to help prevent spaghetti from sticking together. Cook until al dente, about 8 to 10 minutes.
  • In a large saute pan, heat oil. When almost smoking, add olives and red pepper flakes. Saute for 3 minutes over medium high heat. Reduce heat to low and carefully pour in tomato sauce and simmer for 10 minutes.
  • Drain pasta in a colander, reserving 1/4 cup pasta water. Add pasta to the sauce and toss to coat completely. Add pasta water if you need to thin out the sauce a bit. Plate pasta and sprinkle with Parmesan cheese and basil.
  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

PASTA WITH FETA AND GREEN OLIVES



Pasta With Feta and Green Olives image

Bold, briny and tangy, this 15-minute pasta is full of personality. Olives are first slightly blistered in oil, drawing out their brininess, then crumbled feta is stirred into the pasta at the end until melty. Keep the feta chunky when breaking it apart so that the squares become soft and creamy, tasting almost baked. Castelvetrano olives are best here for their meaty texture and gentle flavor, but you can also use your preferred olive. Smash them with the flat side of a chef's knife - or even the heel of your palm in a pinch - then use your fingers to pluck the olive flesh off the pit. Any stubborn meat clinging to the pit is fair game to be eaten then and there.

1 pound dried cavatappi, fusilli or other short, curly noodle
1/3 cup olive oil
12 ounces green olives, such as Castelvetrano or Cerignola, smashed and pitted
1 garlic clove, grated or minced
1 lemon, zested and juiced (about 1 tablespoon zest and 3 tablespoons juice)
1/2 teaspoon red-pepper flakes, plus more as desired
1/2 to ¾ cup loosely crumbled or cubed feta, depending on preference
Black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook at a gentle boil until al dente, about 2 minutes less than the package instructions.
  • Meanwhile, in a saucepan or skillet, heat the oil over medium-high until shimmering. Add the olives, cooking until they start to blister in spots, 2 to 3 minutes. Remove from the heat, then add in the garlic, lemon zest and red-pepper flakes, stirring constantly for about 30 seconds, then let sit uncovered until the pasta is finished.
  • Reserve 1 cup pasta water, drain the pasta, then return it to the pot over medium-low heat. Pour in the olive mixture, the lemon juice and ¾ cup pasta water, and stir well for 1 to 2 minutes until the noodles are coated in a smooth, glossy sauce, adding more water if needed. Turn off the heat, stir in the feta and let it soften and melt slightly. Finish with a grind or two of black pepper and a sprinkle of red-pepper flakes, if desired. Season to taste with salt, and serve immediately.
