Jamie Oliver says - "I remember meeting a lovely old couple outside my parents' pub and when they heard I was going to Italy they told me to make sure I cooked turkey tetrazzini - I hadn't a clue what they were talking about and then, by chance, I saw a recipe for chicken tetrazzini in an old Italian cookbook and it's great - really tacky but gorgeous! Here's my version..."

1 ounce dried porcini mushrooms
olive oil
4 chicken thighs, boned, skinned and cut into bite-sized pieces
sea salt & freshly ground black pepper
2 garlic cloves, peeled and finely sliced
12 ounces mixed fresh mushrooms, cleaned and torn
7/8 cup white wine
1 lb dried spaghetti
2 cups heavy cream
7 ounces parmesan cheese, grated
1 sprig fresh basil, leaves picked

Steps:

  • Preheat the oven to 400ºF. Put your porcini mushrooms in a bowl and pour over just enough boiling water to cover them (approx. 2/3 cup). Put to one side to soak for a few minutes.
  • Heat a saucepan big enough to hold all the ingredients, and pour in a splash of olive oil. Season the chicken pieces with salt and pepper and brown them gently in the oil.
  • Strain the porcini, reserving the soaking water, and add them to the pan with the garlic and fresh mushrooms. Add the wine, with the strained porcini soaking water, and turn the heat down.
  • Simmer gently until the chicken pieces are cooked through and the wine has reduced a little.
  • Meanwhile, cook the spaghetti in plenty of boiling salted water according to the packet instructions and drain well.
  • Add the cream to the pan of chicken, then bring to the boil and turn the heat off. Season well with salt and freshly ground black pepper.
  • Add the drained spaghetti to the creamy chicken sauce and toss well. Add three-quarters of the Parmesan and all of the basil and stir well.
  • Transfer to an ovenproof baking dish or non-stick pan, sprinkle with half the remaining cheese and bake in the oven until golden brown, bubbling and crisp.
  • Divide between your plates, drizzle with extra virgin olive oil and sprinkle with the rest of the cheese before serving.

1 spaghetti squash, halved and seeded
2 cups cubed skinless, boneless chicken breasts
2 tablespoons olive oil, divided
4 tablespoons salted butter, melted, divided
2 tablespoons minced garlic, divided
3 teaspoons chopped fresh basil, divided
1 tablespoon dried minced onion
½ teaspoon salt
⅛ teaspoon white pepper
1 cup half-and-half
1 (10.75 ounce) can condensed cream of chicken and mushroom soup
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake squash in the preheated oven until easily pierced with a knife, about 30 minutes.
  • Meanwhile, heat 2 tablespoons butter and 1 tablespoon oil in a frying pan over medium-high heat. Saute chicken in the pan with 1 tablespoon garlic and 1 teaspoon basil until browned and no longer pink, 7 to 10 minutes. Remove from heat.
  • Remove squash from the oven and cool until easily handled, about 5 minutes. Scrape insides of squash into strands with a fork and transfer to a bowl. Discard skins.
  • Mix remaining olive oil, garlic, basil, dried onion, salt, and white pepper together in a bowl.
  • Pour half-and-half and remaining butter into a Dutch oven and heat over medium heat. Stir in soup. Add the seasoning mixture and stir. Stir in chicken.
  • Ladle a bit of the sauce from the pot to cover the bottom of a baking dish. Put the spaghetti squash on top of the sauce and pour the remaining sauce and chicken on top. Stir to combine. Sprinkle Parmesan cheese over it.
  • Bake in the preheated oven, uncovered, until cheese is melted, 20 to 25 minutes.

This is a great way to use up leftover turkey or chicken, you can freeze one casserole and just thaw in the refrigerator overnight.

2 medium onions, chopped
2 cups fresh white button mushrooms, sliced (can use more)
1 -2 tablespoon fresh minced garlic (or to taste)
1/4 cup butter (can use less butter)
1 (10 ounce) can cream of mushroom soup, undiluted
2/3 cup half-and-half cream or 2/3 cup milk
1 (16 ounce) jar alfredo sauce
3 cups cooked turkey (can use more) or 3 cups cooked chicken (can use more)
12 ounces spaghetti, cooked (use the thin spagetti for this)
1 (10 ounce) package frozen peas, thawed
1 1/2 cups swiss cheese, shredded
1 1/4 cups parmesan cheese, divided
2 1/2 cups garlic-flavored croutons, crushed
paprika

Steps:

  • Set oven to 375 degrees F.
  • Butter two 11 x 7-inch baking dishes (or use 1 large casserole dish).
  • In a skillet melt butter over medium heat; add in onions and mushrooms and saute until softened (about 6-7 minutes) add in the garlic the last 2 minutes; remove from heat.
  • In a large mixing bowl combine the undiluted soup, half and half cream and alfredo sauce.
  • Add in the sauteed onion/mushroom mixture with cooked turkey or chicken and cooked spaghetti, peas, 1/2 cup Parmesan cheese and 1-1/2 cups Swiss cheese; mix well to combine and season with salt and pepper.
  • Transfer to the baking dishes or large casserole dish.
  • In a bowl mix together the crushed croutons with 3/4 cup grated parmesan cheese and pinch paprika; sprinkle evenly over the casserole.
  • Bake for about 30 minutes or until hot and bubbly.
  • Delicious!

A tasty, healthier alternative to the pasta entrée. From Chatelaine, March 2011. This is also a super fast, easy way to cook a spaghetti squash that can be used in most recipes that call for it. Don't struggle to get the knife throug that tough shell, microwave it first!

1 spaghetti squash, 1 . 5 k
1 tablespoon olive oil
2 garlic cloves, minced
227 g cremini mushrooms
2 tablespoons flour
1 teaspoon basil, dried
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/2 cup white wine
black pepper, to taste
1 cup 1% low-fat milk
1 cup part-skim mozzarella cheese
2 plum tomatoes, thinly sliced
1/2 cup parmesan cheese

Steps:

  • Use a sharp knife to make small slits all over the surface of a 1.5 kilo spaghetti squash. Place in a glass pie plate and micrwave on high, turning squash over halfway through, until tender, 12 to 15 minutes. Slice in half lengthwise. Let stand 10 minutes. Scoop out and discard seeds. Use tines of a fork to scrape out squash strands (about 4 cups). Reserve.
  • Preheat oven to 450°F Heat a large, non-stick frying pan over medium. Add 1 T olive oil, 2 minced garlic cloves, and a 227-g pkg sliced cremini mushrooms. Cook, stirring often, until mushrooms soften, about 4 minutes. Add 2T all-purpose flour, 1 tsp dried basil, 1/4 tsp salt, 1/8 tsp nutmeg, and 1/2 c white wine. Season with fresh pepper. Cook, stirring often, 1 minute. Stir in 1 cup milk. Cook until sauce thickens, 2 to 3 minutes. Remove from heat, then stir in 1 cup part-skim mozzarella cheese and reserved squash strands.
  • Scoop squash mixture into 4 individual oven-safe dishes or a greased 8x8 baking dish. Smooth tops. Top with 2 thinly sliced plum tomatoes. Sprinkle with 1/2 c grated parmesan. Bake until bubbly, 10-15 minutes.

Put to one side to soak for a few minutes. Heat a saucepan big enough to hold all the ingredients, and pour in a splash of olive oil. Season the chicken pieces with salt and pepper and brown them gently in the oil. Strain the porcini, reserving the soaking water, and add them to the pan with the garlic and fresh mushrooms. Add the wine, with the strained porcini soaking water, and turn the heat down. Simmer gently until the chicken pieces are cooked through and the wine has reduced a little.

1 med spaghetti squash (about 2-3 pounds)
1 med onion, chopped
1 clove garlic, crushed
1 pinch ground clove
1/4 C parsley leaves, chopped
1 pinch basil
1 1/2 C chicken broth
1 whole chicken breast
4 TBL butter
1 C mushrooms, sliced
2 TBL shallots (or scallions), chopped
2 TBL flour, all-purpose
3/4 C whipped cream
2 teas vermouth dry
1 pinch ground nutmeg
red hot pepper sauce (eg. Tabasco) to taste
1 teas lemon juice
salt and pepper to taste
1/4 C parmesan, grated

Steps:

  • Boil squash in large pot for 45 minutes until soft. Drain and let cool. Preheat oven to 375 degrees F. Divide squash in half and remove the seeds. Scrape the squash out into a bowl. Boil onion, garlic, clove, parsley, basil and chicken broth in a skillet. Reduce heat and add chicken. Cook for 4 minutes each side. Remove chicken. Reduce broth to 1 cup. Cut chicken into strips. Saute shallots or scallions in 2 tablespoons of butter for 2 minutes. Add mushrooms, continue cooking until soft. Melt remaining butter in saucepan. Add flour and cook for two minutes stirring continuously. Add cream, vermouth, nutmeg, dash of hot pepper sauce, lemon juice and salt (if desired) and pepper. Cook until thick (4 minutes). Combine everything into a greased baking dish and top with parmesan cheese. Bake for 20 minutes until lightly browned.
