This recipe comes to you from Mr. Food. I saw it on tv a few years ago and just recently ran across it. I have made it several times and we always enjoy it. Mr. Food says this is a great make ahead dish, and that it freezes well.

Number Of Ingredients 8

4 tablespoons vegetable oil, divided
1 (4 ounce) can sliced mushrooms or 1 (4 ounce) can mushroom stems and pieces (drained)
1 medium onion, chopped
1 cup uncooked spaghetti, broken into 3 inch pieces (about 4 oz)
1 1/2 cups uncooked long grain rice or 1 1/2 cups whole grain rice
2 (14 1/2 ounce) cans ready-to-serve chicken broth
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In a large skillet, heat 3 tablespoons oil over medium high heat.
  • Add mushrooms and onions and saute until lightly browned; remove from skillet and set aside.
  • Heat the remaining tablespoon of oil in the skillet and brown spaghetti over medium-low heat.
  • (Be careful--it browns quickly).
  • Remove the skillet from the heat and return mushrooms and onions to the skillet.
  • Add the remaining ingredients, mixing well.
  • Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes, or until all the liquid is absorbed.

Water
Kosher salt
1 cup rice, thoroughly rinsed
1 1/2 tablespoons butter

Steps:

  • Fill a large pot with water 3/4 full, and bring to a boil over high heat. Season the water with a few big pinches of salt. It should taste like sea water. Stir in the rice, drop the heat to medium, and cook uncovered until al dente, stirring occasionally. For white rice, start checking for doneness (tasting) at 7 minutes. For me, white rice is usually done around 8 minutes. For brown rice, start checking for doneness at 25 minutes. For me, brown rice is usually done around 27 minutes.*
  • Drain the rice and return it back to the same pot set over the lowest heat possible. Stir in butter and a pinch of salt. Cover and let rest for 10 minutes, stirring once after 5 minutes. Fluff with a fork and season to taste with additional salt.

2 cups uncooked brown rice elbow pasta
1 tablespoon coconut oil
1/2 small red onion, sliced
2 teaspoons ginger paste
2 teaspoons garlic paste
1-1/2 cups chopped fresh Brussels sprouts
1/2 cup chopped red cabbage
1/2 cup shredded carrots
1/2 medium sweet red pepper, chopped
1/2 teaspoon salt
1/4 teaspoon ground ancho chile pepper
1/4 teaspoon coarsely ground pepper
1 rotisserie chicken, skin removed, shredded
2 green onions, chopped

Steps:

  • In a Dutch oven, cook pasta according to package directions., Meanwhile, in a large skillet, heat coconut oil over medium heat. Add red onion, ginger paste and garlic paste; saute 2 minutes. Stir in next 7 ingredients; cook until vegetables are crisp-tender, 4-6 minutes. Add chicken; heat through., Drain pasta, reserving 1 cup pasta water. Return pasta to Dutch oven. Add vegetable mixture; toss to coat, adding enough reserved pasta water to moisten pasta. Sprinkle with green onions before serving.

MY FRIEND shared this recipe with me several years ago. It is a good side dish that compliments chicken, pork and beef. It's a big hit whenever I serve it.

2 tablespoons butter
1/2 cup uncooked long grain rice
1/4 cup uncooked egg noodles or vermicelli, broken into small pieces
1-1/3 cups chicken broth

Steps:

  • In a small saucepan, melt butter. Add rice and noodles; cook and stir for 3-4 minutes or until lightly browned. Stir in broth. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender and broth is absorbed.

Boil 3 minutes, then stir, cover and simmer 15 minutes. Let sit 5 minutes; fluff with a fork and smash the garlic. Stir in some butter and cilantro.
