1 spaghetti squash, halved lengthwise and seeded
2 tablespoons butter, softened
2 tablespoons cold butter
¼ cup brown sugar

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a large baking dish with aluminum foil.
  • Generously spread the softened butter over the flesh of the squash; lie in the prepared baking dish with the cut sides facing down.
  • Bake in the preheated oven for 30 minutes. Flip the squash and put about half the butter and about half the brown sugar in each of the cavities of the squash halves. Return to the oven until the outer shell is soft, about 10 minutes more. Spoon the flesh of the squash into a bowl to serve.

This is fantastic! I love using bratwurst in my pasta dishes in place of ground beef. It bursts with flavor and adds sweetness.

1 large spaghetti squash
4 -5 bratwursts, casings removed
2 bell peppers, your choice of colors, diced
1/2 red onion, diced
3 minced garlic cloves
1 (14 1/2 ounce) can diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Halve spaghetti squash and place cut side down on buttered baking sheet. Bake for 40 minutes or until tender. Cool to the point of being able to handle, remove and discard seeds then shred pulp gently with a fork so that strands resemble spaghetti noodles. Reduce oven temperature to 350 degrees.
  • While squash bakes, cook and crumble bratwurst in a skillet over medium heat. Add peppers, onion and garlic and continue cooking until vegetables are crisp tender.
  • Add squash, tomatoes, basil, oregano, salt and pepper to skillet and heat through. Remove from heat and drain excess liquid. Mix in 3/4 cup Parmesan and transfer to a greased 9×13 or oval 2 quart casserole dish. Bake uncovered for 30 minutes, topping with remaining Parmesan for the last five minutes of baking time.

1 medium spaghetti squash (2 pounds)
1/2 medium green pepper, sliced
1/2 medium sweet red pepper, sliced
4 medium fresh mushrooms, sliced
1 small onion, chopped
1 tablespoon olive oil
2 medium tomatoes, quartered
1 garlic clove, minced
1/2 cup chicken broth
1/4 teaspoon salt
3 tablespoons shredded Parmesan cheese

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down in a microwave-safe dish or plate. Microwave, uncovered, on high for 10-12 minutes or until tender. Cool., In a large nonstick skillet, saute the peppers, mushrooms and onion in oil until tender. Add tomatoes and garlic; saute 4-5 minutes longer. Add the broth and salt; simmer, uncovered, for 3-4 minutes., When squash is cool enough to handle, use a fork to separate strands. Place squash on a serving platter or individual plates; top with the pepper mixture. Sprinkle with Parmesan cheese.

This is my favorite thing to make spaghetti squash! It's like alfredo or macaroni and cheese but with a veggie instead of pasta. In other words it's seriously delicious comfort food!

6 - 6.5 lbs spaghetti squash ((3 medium or 2 large), halved, scoop out seeds and membranes*)
1 Tbsp olive oil
2 Tbsp butter
1 1/2 Tbsp minced garlic ((about 4 cloves))
1 Tbsp all-purpose flour
1 cup parmesan cheese ((imported))
1 1/4 cups mozzarella cheese, (divided)
1 1/4 cups half and half, (then a little more if needed)
Salt (and freshly ground black pepper, to taste)
1 Tbsp minced parsley, (for garnish (optional))

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  • Scoop seeds and stringy center portion of from squash and discard or reserve seeds for another use.
  • Place squash cut side up on baking sheet. Brush flesh with olive oil. Sprinkle with salt and pepper. Turn upside down.
  • Bake in preheated oven until tender, about 40 minutes.
  • Let cool slightly or use and oven mitt to hold squash, and shred spaghetti squash with a fork while leaving about 1/4-inch border. Set strings aside and return unfilled boats to baking sheet.
  • In a large saute pan melt butter over medium heat. Add garlic and flour and saute 1 minute.
  • While whisking vigorously slowly pour in half and half. Let cook, stirring constantly, until just thickened.
  • Reduce heat to low, add parmesan and stir until melted. If mixture seems too thick add in a splash or two of half and half. Season mixture with salt and pepper to taste.
  • Remove from heat. Add shredded spaghetti squash and 3/4 cup mozzarella cheese and toss to evenly coat (taste again for salt).
  • Divide mixture evenly among squash halves. Sprinkle with remaining 1/2 cup mozzarella cheese*.
  • Return to oven and bake until cheese has melted, about 10 minutes.
  • Sprinkle with parsley and serve warm.

1 tablespoon olive oil
salt and ground black pepper to taste
1 pound bulk Italian sausage
½ cup diced onion
2 teaspoons garlic, minced
1 medium green bell pepper, diced
1 cup sliced button mushrooms
1 (15 ounce) can tomato sauce
½ cup sliced black olives
½ cup sliced green olives
1 tablespoon Italian seasoning
2 cups shredded mozzarella cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cover a baking sheet with foil.
  • Drizzle the squash flesh with olive oil and sprinkle with salt and pepper. Place both halves, cut-sides down, on the prepared baking sheet.
  • Bake in the preheated oven until tender when pierced with a fork, 30 to 40 minutes.

1 slice day-old whole-grain peasant bread
2 1/2 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced
1 1/2 tablespoons finely chopped walnuts
1/4 cup chopped fresh flat-leaf parsley (Italian)
1 teaspoon salt
1 small yellow squash, cut into 2 inch (5-cm)
1 small zucchini, cut into 2 inch (courgette)
1 cup shredded carrot
1 small red bell pepper, cut into julienne (capsicum)
1/4 cup diced yellow bell pepper (capsicum)
1/2 teaspoon fresh ground pepper
1/2 lb whole wheat spaghetti (wholemeal)

Steps:

  • In a blender or food processor, process the bread to make fine crumbs.
  • In a large nonstick frying pan, heat 1 1/2 teaspoon olive oil over medium heat. Add the sliced garlic and sauté until lightly golden, about 1 minute. Stir in the bread crumbs and cook until lightly browned and crunchy, 3-4 minutes.
  • Transfer to a bowl and stir in the walnuts, parsley, and 1/2 teaspoon the salt: set aside.
  • Add the remaining 2 tablespoons oil to the pan and heat over medium heat.
  • Add the yellow squash, zucchini, and carrot and sauté until the vegetables are tender-crisp, about 5 minutes. Transfer to a plate and keep warm.
  • Add the bell peppers to the pan and sauté until they begin to soften, about 2 minutes. Stir in the remaining 1/2 teaspoon salt and the pepper. Return the squash mixture to the pan and toss to mix. Set aside and keep warm.
  • Fill a large pot three-fourths full with water and bring to a boil. Add the spaghetti and cook until al dente, 10-12 minutes, or according to package directions. Drain the pasta thoroughly.
  • In a warmed shallow serving bowl, combine the spaghetti, vegetables, and bread crumb mixture. Toss gently to mix.
  • Serve immediately. This dish does not reheat well.

1 spaghetti squash
2 tablespoons extra-virgin olive oil
1 onion, chopped
1 large clove garlic, minced
1 large zucchini, cut into bite-size pieces
1 green bell pepper, chopped
1 tablespoon dried Italian herb seasoning
fresh ground black pepper, to taste
1 ½ cups chopped tomato
¾ cup crumbled feta cheese

Steps:

  • Pierce the shell of the spaghetti squash with a fork and place in a microwave-safe dish; cook in microwave on High for 12 minutes. Set aside to cook until cool enough to handle. Slice in half lengthwise; remove the seeds. Use a fork to pull the flesh of the squash away from the shell and place into a large bowl; fluff with the fork to separate the strands as much as possible.
  • Heat the olive oil in a large skillet over medium heat. Cook and stir the onion in the hot oil until just tender, about 3 minutes. Add the garlic and continue cooking and stirring another 3 minutes. Stir the zucchini and green bell pepper into the mixture; season with the Italian herb seasoning and black pepper. Pour the tomatoes into the skillet. Continue cooking just until the tomatoes are warmed, 3 to 5 minutes. Add the squash to the skillet and toss until evenly mixed. Sprinkle with the feta cheese and toss again to serve.
