SPAGHETTI FOR 100
Spaghetti for 100 comes from Marilyn Monroe of Lansing, Michigan. "A club I belong to used this main dish for a fund-raising dinner," she reports. "One man came 50 miles because he'd had the dinner the year before and liked it so much. We sent him home with an extra container of sauce."

- In a large stock pot, brown beef, onion and garlic; drain. Add tomato sauce and paste, salt, sugar and seasonings; bring to a boil. Reduce heat; cover and simmer for 2-3 hours, stirring occasionally. Serve over spaghetti.

Steps:
- Cook beef in steam-jacketed kettle or stock pot until beef loses its pink color (CCP: 155F or higher), stirring to break apart.
- Drain or skim off excess fat.
- Add tomatoes, tomato paste, water, onions, sugar, salt, garlic powder, basil, thyme, oregano, pepper and bay leaves to beef.
- Mix well.
- Bring to a boil; reduce heat; cover; cook at low heat about 1 hour, stirring frequently.
- CCP: Temperature must reach 140°F or higher.
- Remove bay leaves before serving.
- CCP: Hold for service at 140°F or higher.
- Add salt to boiling water.
- Slowly add spaghetti while stirring constantly until water boils again.
- Cook 14 to 18 minutes or until tender, stirring occasionally.
- Do not overcook.
- Drain thoroughly.
- NOTES: In step 2, 8 oz (2 2/3 cups) dehydrated onions may be used.
- In step 2, 15 tbsp (45 cloves) dry minced garlic may be used.
#10 CAN SPAGHETTI SAUCE - OAMC
I really did make up this recipe on my own, with the help of an Italian lady through emails. The mingling of the oil/spices is the key. We were really into Once a Month Cooking for awhile and this sauce is/was a hit.

Steps:
- Brown sausage in pan, crumbling with spatula, until no pink remains. Drain and rinse. Put into a 5 quart crockpot.
- Saute onions and garlic in olive oil until translucent and golden but not brown. Add all the spices and mix well. Turn off the heat and let the spices mingle for about 10 minutes. The heat will let the oils release from the dried herbs.
- Add the tomato sauce and spice mixture to the meat in the crockpot and stir to mix. Cook on high for 1 hour and then low for 7-8 hours. Use over pasta.
- If freezing, cool sauce and pour into quart sized freezer bags. Remove all the air and place flat on a cookie sheet and put into freezer. When frozen, they will stand up like records in the freezer.

- In a large pot, cook and stir the bulk italian sausage with onions until the meat is brown; drain fat.
- Add remaining ingredients.
- Bring sauce to a boil; reduce heat.
- Partly cover, and simmer for 2 hours, stirring occasionally.
- You can can also simmer in crockpot instead of a pot if desired.
- Allow sauce to cool.
- Can be frozen in containers or ziplock bags.
- To serve, thaw and heat in a sauce pan.

GRANDMA'S ONE PAN SPAGHETTI
This is a great quick and easy recipe that everybody loves. It is a sure crowd pleaser and easy on the budget. You can adapt it to suit any one. Just a great recipe all around.

- Start by browning the hamburger with the onion, green pepper and mushrooms. ( I use a lid to get the peppers and onions soft).
- Next, after the meat is brown, the onion and green peppers are soft and the mushrooms have cooked, add the ketchup and tomato juice.
- Break your spaghetti noodles into thirds, add and stir GENTLY into the sauce.
- Cover and cook stirring about ever 5-10 minutes for about 30-45 minutes, or until the noodles are done.
- HINT: You may want to start off by not using all the tomato juice from the can. I usually find that the more noodles you use the more juice you need. I like mine filled with noodles so I always use much more.

This gem is handwritten in the back of a 1948 cookbook I have entitled Recipes and Menus for Fifty by Frances Lowe Smith, revised by Florence P. Stoddard.

- Put salad oil, onion, green pepper, and garlic in a good-sized pan. Cook over very slow heat about 5 minutes. Then add your meat and cook, this time over medium heat, stirring frequently, until meat is well browned. Now add your canned tomatoes, tomato paste, salt, sugar, and cayenne. Stir until well mixed. Let the sauce simmer, uncovered, over very slow fire about two hours.
- Cook spaghetti according to the directions on package, rinsing in hot water when done. Drain thoroughly. Cover a good serving of spaghetti with meat sauce (about 3/4 of a cup). Sprinkle with cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer to a bowl and mix spaghetti sauce into ground beef.
- Place half the slices of butter into the bottom of a 9x13-inch casserole dish. Spread half the spaghetti into the dish. Mix cottage cheese, cream cheese, and sour cream together in a bowl; spread mixture over spaghetti. Layer remaining spaghetti over creamy mixture. Top with remaining pats of butter.
- Pour ground beef mixture over spaghetti and spread to cover casserole.
- Bake in the preheated oven for 30 minutes. Spread Cheddar cheese over casserole and continue baking until cheese has melted and is lightly browned, about 15 more minutes.
