MUFFIN TIN SPAGHETTI MEATBALL BITES
Steps:
- Preheat oven to 375 degrees F. In a large pot set on the stove top, cook spaghetti with 1/2 tablespoon olive oil. Cook according to package directions. Strain spaghetti and toss with 1/2 tablespoon olive oil or cooking spray to prevent the noodles from sticking together. Allow mixture to cool. Meanwhile, cook meatballs according to package directions (or make your own). Toss spaghetti with 3/4 cup Parmesan cheese crumbs and 1 tablespoon parsley. Spray a 12 cup muffin tin pan well with cooking spray. Spoon noodle mixture into tins, filling it nearly to the top. Spoon 1 tablespoon Ragu® Sauce on top of the noodles then top with 1 meatball for each. Spoon 1 tablespoon over the top of each meatball then sprinkle with Parmesan cheese and parsley or basil. Cook in oven for about 20 minutes.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 7 minutes. Drain and toss in a bowl with olive oil; refrigerate until cooled, about 15 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
- Toss cooled spaghetti with 1 cup Parmesan cheese. Divide spaghetti between the 12 prepared muffin cups, arranging noodles in each cup to create "nests" for the meatballs.
- Top each "nest" with 1 tablespoon pasta sauce, 1 meatball, and 1 more tablespoon pasta sauce, respectively. Sprinkle remaining Parmesan cheese over the tops of each meatball "nest."
- Bake in the preheated oven until pasta and meatballs are heated through and cheese melts, 20 to 25 minutes. Cool slightly before transferring muffin bites to a serving platter.

- Preheat oven to 425 degrees F.
- Place a large pot of water on to boil for spaghetti. When it boils, add salt and pasta and cook to al dente.
- Mix beef and Worcestershire, egg, bread crumbs, cheese, garlic, salt and pepper. Roll meat into 1 1/2 inch medium-sized meatballs and place on nonstick cookie sheet or a cookie sheet greased with extra-virgin olive oil. Bake balls 10 to 12 minutes, until no longer pink.
- Heat a deep skillet or medium pot over moderate heat. Add oil, crushed pepper, garlic and finely chopped onion. Saute 5 to 7 minutes, until onion bits are soft. Add beef stock, crushed tomatoes, and herbs. Bring to a simmer and cook for about 10 minutes.
- Toss hot, drained pasta with a few ladles of the sauce and grated cheese. Turn meatballs in remaining sauce. Place pasta on dinner plates and top with meatballs and sauce and extra grated cheese. Serve with bread or garlic bread (and some good chianti!)
