KIMCHI PANCAKE W/ VINEGAR SOY DIPPING SAUCE image

Yield 12 pancakes

Number Of Ingredients 9

3/4 cup flour
1 egg
1 cup water
1 green and 1 red chili, deseeded and sliced lengthwise into fine shreds
1 green onion, minced
1 cup cabbage kimchi
1 tbsp. white sesame seeds, lightly dry-roasted in a pan until fragrant
3 tbsps. olive oil
Substitute: 1/4 cup kimchi juice + 3/4 cup water

Steps:

  • Place flour in a bowl and make a well in the centre. Add egg and whisk well, gradually adding water. Stir in red and green chilies, green onion, kimchi and sesame seeds, mixing well. Heat 1/2 tbsp. olive oil in nonstick skillet over medium-high heat. Make small pancakes by pouring 1 tbsp. of batter onto skillet. Gently panfry each pancake for 2 minutes on each side until light brown, pressing pancake flat after turning. Repeat until the mixture is used up.

1/3 cup tamari (preferably San-J brand)
2 tablespoons mirin (Japanese sweet rice wine)
1 tablespoon sugar
4 teaspoons rice vinegar (not seasoned)
2 tablespoons water
1 tablespoon fresh lemon juice

Steps:

  • Stir together all ingredients until sugar has dissolved.

1 whole scallion, trimmed and sliced
