Roasted Brussels Sprouts and Butternut Squash are delicious on their own, but adding bacon and a maple soy glaze makes them over-the-top delicious!

Cooking spray
1 pound butternut squash (peeled, seeded and cut into ½-inch cubes)
1 tablespoons olive oil
1/2 teaspoon Kosher salt
Freshly ground black pepper
1 pound Brussels sprouts (trimmed and quartered)
2 center cut strips of bacon (chopped)
2 tablespoons pure maple syrup
2 tablespoons reduced sodium soy sauce

Steps:

  • Preheat oven to 400 degrees F. Spray a sheet pan with cooking spray.
  • In a large bowl, combine the squash, 1/2 tablespoon oil, 1/4 teaspoon salt and pepper, to taste. Toss to coat. In another large bowl, combine the Brussels sprouts, remaining tablespoon of oil, 1/4 teaspoon of salt and pepper, to taste.
  • Spread the vegetables in an even layer on 1 sheet pan. Top with bacon. Roast for 20 minutes, with a spatula, toss veggies and roast an additional 15 minutes.
  • Meanwhile, in a small sauce pot, combine the syrup and soy sauce. Over medium low heat, simmer sauce for 5 minutes, or until it begins to thicken slightly. Set aside.
  • When vegetables are done roasting, transfer to a serving dish. Add maple soy sauce and toss to coat.

2 tablespoons honey
1/4 cup balsamic vinegar
1 tablespoon lemon pepper seasoning
3 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • In a large bowl combine all ingredients and mix to coat the squash.
  • Place squash on a nonstick baking sheet or a baking sheet lined with foil. Bake until the squash is tender and brown about 30 to 35 minutes making sure to flip the squash after 15 minutes.

2 tablespoons brown sugar
1 teaspoon Himalayan sea salt
½ teaspoon ground cinnamon
1 pinch cayenne pepper
¼ cup coarsely chopped candied pecans

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
  • Combine squash, olive oil, brown sugar, sea salt, cinnamon, and cayenne pepper in a large bowl; toss until squash is evenly coated. Spread squash in an even layer onto the prepared baking sheet.
  • Roast in the preheated oven, turning midway through, until edges are lightly browned and centers are tender, 40 to 45 minutes. Transfer to a serving dish and garnish with nuts.

1 1/2 lbs butternut squash, peeled, seeded, and cut into 3/4-inch cubes (or other winter squash)
1 teaspoon orange peel, finely shredded
1/2 cup orange juice
2 scallions, finely chopped (or green onions)
3 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons oil
1/4 teaspoon crushed red pepper flakes (optional)

Steps:

  • Place squash in a lightly greased 13x9x2-inch baking pan.
  • In a small bowl combine orange peel, orange juice, scallions, soy sauce, brown sugar, oil, and red pepper flakes.
  • Drizzle over squash, tossing to coat.
  • Roast, uncovered, in a 425*F. oven for 20-25 minutes or until squash is tender, stirring several times. Stir cubes again before serving.
  • Place a toothpick in each squash cube, if using for appetizers. Serve warm.
  • Makes about 48 appetizers.

2 1 1/4- to 1 1/2-pound acorn squash
3 tablespoons honey
1 tablespoon reduced-sodium soy sauce
2 teaspoons rice vinegar

1 garlic clove, minced

Steps:

  • Preheat oven to 450°F. Line large baking sheet with foil. Spray with nonstick vegetable oil spray. Cut off both ends of each squash. Cut each squash crosswise into 4 rings. Scoop out seeds and discard. Place squash rings in single layer on prepared baking sheet. Cover baking sheet tightly with foil. Bake until squash begins to soften, about 15 minutes.

2 medium butternut squash (4 to 5 pounds total)
6 tablespoons unsalted butter, melted
1/4 cup light brown sugar, packed

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize.   • Peel, seed and slice the squash. Place in a pot with tight fitting cover and steam until squash is nearly tender, about 12-15 minutes. Drain well.

1 teaspoon dried thyme, divided
1 large butternut squash (about 5 pounds), peeled, halved, seeded and thinly sliced
3 tablespoons water
1/4 cup plus 2 tablespoons olive oil, divided
1-1/2 teaspoons salt, divided
1-1/2 teaspoons pepper, divided
1/2 cup panko bread crumbs

Steps:

  • Preheat oven to 375°. In a large saucepan, heat honey and 1/2 teaspoon thyme, stirring occasionally, over low heat until fragrant, 3-4 minutes., Meanwhile, in a large microwave-safe dish, combine squash and water; microwave, covered, on high until squash is tender, 6-8 minutes. Drain. Add 1/4 cup olive oil, 1 teaspoon salt and 1 teaspoon pepper; toss to coat., On a flat surface, stack squash slices. Arrange stacks on their sides in a greased 9-in. square baking dish. (To make stacking easier, set baking dish on end; fill with squash stacks. When dish is full, return to original position.) Drizzle 3 tablespoons honey mixture over squash., Bake until squash is tender, 45-50 minutes. In a small skillet, heat remaining oil over medium heat. Add bread crumbs; toss with remaining thyme and remaining salt and pepper. Cook and stir until golden brown, about 5 minutes.
