1/4 cup soy sauce
1 tablespoon ketchup
1/4 cup water
3 tablespoons honey
1 tablespoon brown sugar
2 tablespoons grated fresh ginger
1 tablespoon olive oil
1 teaspoon scallion, thinly sliced
1 teaspoon minced wet garlic
1 tablespoon cold unsalted butter
4 (7 ounce) tuna fillets
garlic pepper seasoning, to taste

Steps:

  • In a mixing bowl, mix the first 6 ingredients.
  • In a small saucepan on medium, heat olive oil, scallions and garlic about 3 minutes until scallions sizzle.
  • Remove from heat and stir in butter until smooth.
  • Tuna: Coat four, 7-ounce tuna fillets with unsalted butter and garlic pepper.
  • Grill on each side about 4 to 5 minutes, turning halfway through to make diamond-shaped marks on tuna.
  • When done, spoon sauce over tuna steaks.

1 small piece ginger, about 2 ounces
2 scallions (green onion)
1/2 cup soy sauce
2 tablespoons white vinegar
1 1/2 teaspoons sugar
2 tablespoons water
1 teaspoon spicy Chinese chili red paste (optional)

Steps:

  • Peel ginger and cut into small pieces. Press about 1/2-inch piece of ginger in a garlic presser and squeeze ginger juice and small bits into a medium size bowl. Grate another 1/2-inch piece into same bowl. Finely chop the scallions and place in the same bowl. Add all other ingredients and mix well. Adjust by tasting and enjoy this fantastic Chinese dumpling dipping sauce.

1/2 teaspoon dried thyme
4 6-ounce bluefish fillets, skin and bones removed

  • Place a large cast-iron griddle or ovenproof skillet under the broiler and preheat until very hot, at least 10 minutes.
  • Meanwhile, combine the mayonnaise, mustard and thyme in a small bowl.
  • Generously season the fillets with salt and pepper. Paint one side of each fillet thickly with the mustard mixture.

4 8-ounce bluefish fillets
1/3 cup Dijon mustard
1 tablespoon packed light-brown sugar
2 teaspoons chopped fresh tarragon or 1 teaspoon dried
1 teaspoon soy sauce

Steps:

  • Preheat oven to 375 degrees. Lightly oil a baking dish large enough to hold the fish in a single layer. Place the bluefish skin side down in the dish.
  • In a small bowl, combine the mustard, sugar, tarragon and soy sauce, and spread evenly over the fish.

1 teaspoon Dijon mustard
2 teaspoons soy sauce
2 teaspoons minced fresh ginger
1 bluefish fillet (about 1 1/2 pounds)
12 scallions, trimmed

Steps:

  • Preheat a charcoal grill. Combine the mustard, soy sauce and ginger and rub the mixture over the flesh side of the bluefish. Let stand for 10 minutes. Place the fish on the grill, flesh side down. Grill for 7 minutes. Carefully turn the fish over and grill until just cooked through, about 5 minutes more.
  • Meanwhile, place the scallions on the grill and grill until tender, about 10 minutes, turning once. Cut the fish in half lengthwise; cut again crosswise, making roughly equal pieces. Place 1 piece of fish and 3 scallions on each of 4 plates and serve immediately.
