1 whole wheat tortilla (6 inch), cut in half, then into 1/4-inch-wide strips
1/4 cup KRAFT Lite Ranch Dressing
dash ground cumin
1 pkg. (10 oz.) salad greens
1 pkg. (6 oz.) OSCAR MAYER CARVING BOARD Southwestern Seasoned Chicken Breast Strips
1/2 cup chopped tomato es
1/4 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese

Steps:

  • Place tortilla strips on microwaveable plate sprayed with cooking spray. Microwave on HIGH 1 min. Meanwhile, mix dressing and cumin.
  • Toss greens with chicken, tomatoes, cheese and dressing mixture in large bowl; top with tortilla strips.

6 cups romaine lettuce
8 oz diced chicken
1 cup black beans
1 cup corn
1 cup halved grape or cherry tomatoes
1 avocado
1/2 cup sliced green onion
1/4 cup cilantro
Tortilla strips*, tortilla chips, or pepitas
3/4 cup mayonnaise (I like avocado oil mayo)
Juice from 1 lime (1-2 Tbsp)
1-2 Tbsp water
1 tsp chili powder
1/2 tsp dried dill (or 1 Tbsp fresh)
1/2 tsp pepper
1/4 tsp salt
1/4 tsp chipotle chili powder (optional-it adds some kick!)

Steps:

  • In a large bowl, combine lettuce, chicken, black beans, corn, tomatoes, avocado, green onion, and cilantro.
  • Drizzle with salad dressing and serve with tortilla strips, chips, or pepitas.
  • In a small bowl or jar, whisk together mayonnaise, lime juice, 1 Tbsp water, chili powder, dill, pepper, salt, and chipotle chili powder.
  • Whisk until it's totally smooth. Dressing will keep in the fridge about 1 week.

1 can (15 oz.) black beans, rinsed
1 avocado, sliced
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1/2 cup TACO BELL® Thick & Chunky Medium Salsa
1/2 cup KRAFT Classic Ranch Dressing
1 cup coarsely broken tortilla chips

Steps:

Butter-flavored cooking spray
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 teaspoon olive oil
6 cups ready-to-serve salad greens
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
2 cups chopped tomatoes, divided
1 medium green pepper, diced
1/2 cup cubed peeled jicama or sliced water chestnuts
1/3 cup chopped green onions
1/2 cup shredded reduced-fat cheddar cheese
2/3 cup fat-free ranch salad dressing
4 teaspoons barbecue sauce

Steps:

  • Place tortilla strips on a baking sheet; spritz both sides of strips with butter-flavored cooking spray. Bake at 350° for 4-5 minutes or until crisp. Whipping up a great pasta salad while the meat is grilling is easy with Suddenly Salad. Just toss in your favorite veggies, stir and voilà!

1 box Betty Crocker™ Suddenly Salad® classic pasta salad mix
1 cup frozen corn
1/2 cup spicy ranch or regular ranch dressing
1 tablespoon lime juice
1 1/2 cups small broccoli florets
1 cup grape tomatoes, halved
4 medium green onions, sliced (1/4 cup)
2 tablespoons chopped fresh cilantro
Tortilla chips, if desired

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally, adding corn during last 2 minutes of cooking.
  • Drain pasta and corn; rinse with cold water. Shake to drain well.
