SOUTHWEST TURKEY BURGERS

Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

2 pounds ground turkey
2 large eggs, beaten
¼ cup diced yellow onion
¼ cup plain dry bread crumbs
4 tablespoons garlic-infused olive oil, divided
3 tablespoons seeded and diced fresh jalapeno peppers
2 tablespoons Worcestershire sauce
2 teaspoons prepared yellow mustard
1 teaspoon paprika
1 teaspoon chili powder
½ teaspoon ground cumin
1 teaspoon salt
½ teaspoon freshly ground black pepper
8 each whole wheat hamburger buns, toasted
½ cup guacamole
½ cup salsa

Steps:

  • Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
  • Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
  • Serve patties on toasted buns with guacamole and salsa.

1/2 cup seasoned bread crumbs
1/2 cup frozen corn, thawed
1 can (4 ounces) chopped green chiles
1 tablespoon reduced-sodium taco seasoning
1 pound lean ground turkey
4 teaspoons canola oil, divided
6 whole wheat hamburger buns, split
6 wedges The Laughing Cow queso fresco chipotle cheese, halved
Lettuce leaves, optional

Steps:

  • Preheat broiler. Mix first 4 ingredients. Add turkey; mix lightly but thoroughly. Shape into six 1/2-in.-thick patties., In a large cast-iron or other heavy skillet heat 2 teaspoons oil over medium heat. Cook burgers in batches, adding more oil as needed, until a thermometer reads 165°, 4-6 minutes per side. Keep warm., Meanwhile, place buns on a baking sheet, cut side up. Broil 3-4 in. from heat until toasted, about 30 seconds. Spread tops with cheese. Serve burgers in buns with lettuce, if desired.Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to a large freezer container; return to freezer. To use, cook frozen patties in a nonstick skillet in 2 tsp. oil over medium-low heat until a thermometer reads 165°, 6-8 minutes per side.

8 slices turkey bacon or turkey bacon with black pepper or applewood smoked bacon
1 1/3 pounds ground turkey breast, the average weight of 1 package
2 cloves garlic, finely chopped
1 large shallot or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
1/2 small bell pepper, green, red or yellow, seeded and finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 teaspoons, 2/3 palm full, ground cumin
1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
Vegetable oil or olive oil, for drizzling
1/2 pound deli sliced pepper jack cheese
4 crusty kaiser rolls, split
1 cup sweet red pepper relish, found on condiment aisle - pepper jelly may be substituted
Red leaf lettuce
Spicy O-nuts, recipe follows

Steps:

  • Chop your garlic and veggies.
  • Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
  • While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
  • Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.

1 clove garlic, minced
1 lb. 93%-fat-free ground turkey
1 can (15 oz.) black beans, rinsed
1/2 cup drained canned corn with red and green bell peppers
1 tsp. chili powder
1 tsp. ground cumin
8 KRAFT Big Slice Pepper Jack Cheese Slices
8 hamburger buns
1 large tomato, cut into 8 slices
1 avocado, sliced

Steps:

  • Cook and stir onions and garlic in large nonstick skillet on medium heat 3 to 4 min. or until crisp-tender. Add to turkey, beans, corn and seasonings in medium bowl; mix just until blended. Shape into 8 (1/2-inch thick) patties.
  • Cook, in batches, in skillet 8 to 10 min. on each side or until done (165ºF), topping with cheese for the last 2 min.

These turkey burgers get their kick and flavor from incorporating jalapeño peppers, Monterey Jack, breadcrumbs, and mayonnaise right into the patty. And the best part is they come together in just 25 minutes.

1 1/2 pounds ground dark meat turkey (93% lean)
1 jalapeno chile, minced (ribs and seeds removed for less heat, if desired)
2 ounces grated Monterey Jack cheese (about 1/2 cup)
1/4 cup plain dried breadcrumbs
2 tablespoons mayonnaise
Coarse salt and ground pepper
Vegetable oil, for grates
4 hamburger buns, split horizontally
Desired toppings: Fresh Tomato Salsa, sliced avocado, sliced pickled jalapeno chiles

Steps:

  • Heat grill to medium-high. In a medium bowl, place turkey, jalapeno, cheese, breadcrumbs, mayonnaise, 1 teaspoon coarse salt, and 1/4 teaspoon pepper. Mix very gently with a fork to combine, being careful not to overwork meat (which would make burgers dense).
  • Gently form meat into 4 equal-size patties, 4 inches in diameter and 1 inch thick. Press thumb in the center of each patty to make an indentation approximately 1/2-inch deep (this helps keep burgers flat during grilling).
  • Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season burgers with salt and pepper; grill until cooked throughout, 5 to 8 minutes per side. Serve on buns (toasted on grill, if you like), with desired toppings.
